This mouth-watering hot cross bun bread and butter pudding serves four and takes just 30 minutes to bake. Give a British classic an easy Easter twist

4 slices hot cross bun loaf or 4 hot cross buns, sliced in half
2 medium eggs
½ tsp vanilla extract
15g (½oz) caster sugar
25g (1oz) butter
300ml (½ pint) milk
150ml (¼ pint) single cream
1 tsp finely grated lemon zest

Steps:

  • Pre heat oven to 180°C /350°F /Gas Mark 4. Grease a 1 litre baking dish with a little of the butter.
  • Spread the slices of loaf with the remaining butter and cut them in half diagonally. Arrange them in the prepared dish.
  • Whisk the vanilla extract, sugar and eggs together.
  • Gently heat the milk and cream in a pan until warm, then remove from the heat and add the egg mixture. Stir until the sugar has dissolved.
  • Strain the warm egg mixture over the loaf in the baking dish and leave to soak for 15-20 minutes.
  • Sprinkle the lemon zest over the surface of the pudding.
  • Transfer the baking dish to the pre-heated oven and bake for 25-30 mins until puffed up and golden brown. Serve at once.

4 hot cross buns
1 1/2 tablespoons low-fat margarine
1/4 cup apricot jam
2 1/2 cups low-fat evaporated milk
1 egg
1 egg white
1/3 cup Splenda granular
1 teaspoon vanilla essence
icing sugar

Steps:

  • CUT Hot Cross Buns in three pieces lengthways.
  • Butter and jam slices.
  • In bowl, COMBINE milk, Splenda, 1 egg, additional 1 egg white and vanilla essence.
  • LET sit for 30 minutes; making sure slices on covered in liquid (MAY need to put plate on top to weigh down).
  • BAKE in 180C oven for about 25 minutes (until mixture has set).
  • Sprinkle with icing sugar and enjoy!

300ml pot double cream
600ml milk
4 eggs
100g golden caster sugar
1 ½ tsp vanilla essence
8 hot cross buns
40g soft butter
100g marzipan , cubed
3 tbsp chunky marmalade
icing sugar , for dusting

Steps:

  • Heat oven to 170C/150C fan/gas 3. Warm the cream and milk in a pan over a gentle heat. Whisk the eggs, sugar and vanilla together with a fork in a large bowl, then gradually add the warm cream mixture.
  • Halve the buns and spread with the butter. Arrange in a large shallow ovenproof dish (approx 25 x 32cm), dot with the marzipan and brush the marmalade on top.
  • Pour over the cream mixture and set aside to soak for 15 mins. Press the buns down into the custard mixture as they soften.
  • Bake for 50 mins until set, then remove and allow to stand for 10 mins. Dust lightly with icing sugar and serve while still warm.

butter
1 cup dark chocolate chip
1 cup milk
2 eggs
1 teaspoon caster sugar

Steps:

  • Cut the hot cross buns in half and butter both sides. Sprinkle in half of the chocolate chips across all six buns and close.
  • Place in a tin that gives them a snug fit.
  • Whisk together the milk, egg and sugar in another bowl and pour over the buns. Sprinkle over the other half of the chocolate chips.
  • Bake for 30 mins at 300°F convection (150°C Fan).
  • Enjoy!

400 g multi-grain flour
1/2 teaspoon mixed spice
50 g light margarine spread or 2 1/2 tablespoons oil
40 g mixed dried fruit (I added more)
2 teaspoons dry yeast
200 ml water
1 teaspoon caster sugar (I added a bit of honey as well)
3 tablespoons plain flour
2 tablespoons caster sugar
2 tablespoons water
2 tablespoons caster sugar
2 tablespoons boiling water

Steps:

  • 1. Preheat Oven 200 C (400C).
  • mix yeast + Sugar + 150 mL water.
  • Mix all dry ingredients.
  • 2. Make Well in centre, pour yeasat mixture + 50 mL water + Oil or spread.
  • 3. Knead for 5 mins then cover + leave to rise 1 hours.
  • 4. Cut in to dough balls + leave to rise again for aprox 20 mins or till double in size.
  • 5. Before baking in the oven, pipe cross mixture.
  • 6. Bake for 20 mins.
  • 7. Brush over with Graze mixture :).
