ICY LEMON-MINT PARFAITS



Icy Lemon-Mint Parfaits image

Yield Makes 6 servings

Number Of Ingredients 8

2 cups loosely packed fresh mint leaves plus 6 leaves for garnish
1 1/4 cups water
1 cup sugar
3/4 cup fresh lemon juice
3/4 cup chilled heavy whipping cream
1 1/2 tablespoons sugar
1 1/2 tablespoons finely chopped fresh mint leaves
1 1-pint container fresh strawberries, hulled, thinly sliced

Steps:

  • Combine 2 cups mint leaves, 1 1/4 cups water, and sugar in medium saucepan. Stir over medium heat until sugar dissolves. Reduce heat to very low; cook 5 minutes without simmering. Pour through fine strainer into 8x8x2-inch glass baking dish. Cool to room temperature; mix in lemon juice. Cover and freeze until firm, stirring occasionally, at least 6 hours or overnight.
  • Using electric mixer, beat cream, sugar, and mint in medium bowl until peaks form. (Can be made 4 hours ahead. Cover and chill. Rewhisk to thicken before using.)
  • Using fork, scrape granité to form crystals. Place 4 berry slices in each of 6 glasses. Top with 1 generous tablespoon minted cream, then 4 berry slices. Spoon 1/4 cup granité over. Repeat layering with berry slices, minted cream, and granité. Garnish each with berry slice and mint leaf.

  • Place six 10-ounce parfait-style glasses on a clean work surface. Into each parfait layer: 1/3 cup yogurt; 2 tablespoons lemon curd; 2 tablespoons crushed graham crackers; 1 tablespoon coconut.

This is a creamy lemon pie that is a great dessert on a hot summer day. Garnish with whipped cream.

1 cup white sugar
6 tablespoons cornstarch
1 cup milk
6 large egg yolks, lightly beaten
¼ cup salted butter
2 tablespoons grated lemon zest
½ cup fresh lemon juice
1 cup heavy whipping cream
½ cup sour cream
1 (9 inch) baked pie shell

Steps:

  • Combine sugar and cornstarch in a saucepan. Stir in milk until smooth. Cook and stir over medium heat until thickened and bubbly, about 10 minutes. Reduce heat; cook and stir for 2 minutes more. Remove from heat.
  • Stir a small amount of hot filling into the egg yolks; return all to the pan. Bring to a gentle boil; cook and stir for 2 minutes. Remove from heat; stir in butter and lemon zest. Gently stir in lemon juice. Cool to room temperature, about 30 minutes.
  • Beat cream in a chilled glass or metal bowl with an electric mixer until soft peaks form.
  • Fold whipped cream and sour cream into the lemon filling. Pour into the prepared pastry shell. Chill for at least 2 hours before serving.

  • Layer the lemon curd with scoops of lemon buttermilk sherbet, lemon sorbet, and rich lemon ice cream in two tall glasses. Sprinkle with the diced candied lemon rind. Serve immediately.

No need to churn this one, it just goes straight into the freezer and can be forgotten about. You must use the best unwaxed sweet lemons you can find. This is wonderful and smooth and the flavour is exquisite. I would never normally go for a lemon flavoured ice cream, but this one has got to be tried and tested to be believed. Gorgeous!

4 large unwaxed ripe sweet lemons
300 g sugar
1 teaspoon cornflour
4 egg yolks
250 ml whipping cream, whisked until siff

Steps:

  • Bring the juice and zest along with 200ml water and the sugar gently to the boil, stirring to dissolve the sugar.
  • Once boiling remove the zest immediately by either straining through a sieve or using a slotted spoon.
  • Now boil the syrup for 4 minutes only.
  • Meanwhile put the yolks and cornflour into a bowl. Using an electric whisk, whisk until the yolks are thick and then pour over the hot syrup whisking constantly until frothy and smooth.
  • Once cool, fold in the whipped cream and freeze.
  • Remove from the freezer at least 15 minutes before serving.
