MABO TOFU WITH LEAN GROUND TURKEY
This dish is typically made with ground pork however, for a healthier option it also tastes great with turkey and that's how I usually make it.

Steps:
- Brown turkey in the frying pan until about 4-5 minutes then remove from the pan discarding the juices/fat. In a separate frying pan, fry garlic and ginger with vegetable oil until slightly browned. In the meantime, mix the cornstarch with some water and set aside. Add chopped tofu to garlic and ginger and continue cooking on medium heat then add soy sauce and black bean sauce and stir together cooking for another couple minutes until everything is hot. Add cornstarch mixture to the pan and keep it on low heat until the sauce thickens. Add chopped scallions, a dash of salt and hot pepper flakes for some spiciness ( not to many pepper flakes if you don't like it spicy ). Serve immediately.
- The dish is best served on top of white rice, I serve it with Japanese rice - place rice in a bowl and top with the Mabo Tofu mixture. You can sprinkle some scallions on top as well.
- You can adjust the pepper flakes, soy sauce and black bean sauce to your own preferences. We like things a little spicy in our house however, if you prefer a milder dish, you can skip the pepper flakes altogether.

MA PO TOFU (FROM COOKING LIGHT)
Tried this the other day and loved it! If you use a couple of 8 oz. packages of diced tofu, found in the produce section of your grocery store, and bottled minced ginger, this goes together in no time. A rice cooker does a great job with brown rice, too, and will keep the rice warm until serving. A quick, healthy dish from Cooking Light.

Steps:
- Place tofu slices on several layers of paper towels, cover with additional paper towels. Place a dinner plate on top of covered tofu; let stand 30 minutes. Remove plate, discard paper towels. Cut tofu slices into 1/2-inch cubes.
- Combine broth, cornstarch, soy sauce, oyster sauce and chili garlic sauce, stirring with a whisk.
- Heat a large nonstick skillet over medium-high heat. Add pork; cook 4 minutes or until done, stirring to crumble. Add ginger and garlic; cook 1 minute, stirring constantly. Add tofu; cook 4 minutes or until golden, stirring frequently. Add broth mixture to pan. Bring to a boil; cook 1 minute or until mixture thickens. Remove from heat.
- Serve tofu mixture over rice. Sprinkle with onions.
