Homemade Mac and Cheese image

This is a nice rich mac and cheese. Serve with a salad for a great meatless dinner. Hope you enjoy it.

8 ounces uncooked elbow macaroni
2 cups shredded sharp Cheddar cheese
½ cup grated Parmesan cheese
3 cups milk
¼ cup butter
2 ½ tablespoons all-purpose flour
2 tablespoons butter
½ cup bread crumbs
1 pinch paprika

Steps:

  • Cook macaroni according to the package directions. Drain.
  • In a saucepan, melt butter or margarine over medium heat. Stir in enough flour to make a roux. Add milk to roux slowly, stirring constantly. Stir in cheeses, and cook over low heat until cheese is melted and the sauce is a little thick. Put macaroni in large casserole dish, and pour sauce over macaroni. Stir well.
  • Melt butter or margarine in a skillet over medium heat. Add breadcrumbs and brown. Spread over the macaroni and cheese to cover. Sprinkle with a little paprika.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes. Serve.

18 pieces extra-large shell pasta
2 tablespoons extra-virgin olive oil
1 cup tasso ham or bacon
5 large shallots, minced
1 clove garlic, mined
1 1/2 tablespoons all-purpose flour
1 cup white wine
2 cups cream
1 cup grated fontina
1/2 cup grated sharp Cheddar
2 tablespoons grated Parmesan
18 medium to large shrimp, peeled and deveined
2 cups gently packed spinach
Kosher salt and ground white pepper
Hot pepper sauce, to taste (recommended: Tabasco)
1/2 cup bread crumbs
1/4 cup chopped Italian parsley leaves

Steps:

  • Preheat broiler.
  • Bring a large post of water to a rolling boil, add pasta shells and cook al dente, according to package instructions.
  • Meanwhile, in a large skillet, add the olive oil and tasso or bacon, cook until just crisp,
  • then add shallots and garlic. Cook and stir over moderate heat just until shallots are translucent. Add the flour, cook stirring constantly to blend and toast the flour, about 5 minutes. Add the white wine, reduce until almost dry. Add the cream, bring to a simmer until the sauce coats the back of a spoon, about 5 to 10 minutes. Remove from the heat and stir in the cheeses, shrimp and spinach. Gently stir until cheese is melted, spinach is wilted and shrimp is beginning to turn pink. Season with salt and white pepper, to taste. Season with hot sauce, to taste.
  • Drain the pasta, making sure to shake all of the water off and out of the shells.
  • In a large flameproof baking dish, place drained shells. Add the cheese and shrimp mixture and gently fold into the pasta. Sprinkle with the bread crumbs and chopped parsley. Place under the broiler until the breadcrumbs are toasted about 2 to 3 minutes.

2 2/3 cups small elbow macaroni (or bow ties or ditali)
4 tablespoons butter
1 cup fresh whole wheat bread crumbs
1/4 cup all-purpose flour
1 1/2 cups milk
1 1/2 cups vegetable or chicken broth
4 green onions, thinly sliced
3 cups (12 ounces) grated cheddar cheese

Steps:

  • Cook macaroni in boiling salted water until tender, but firm. Drain well. Preheat the broiler. Melt the butter in a saucepan. Remove and toss 1 tablespoon of the butter with the bread crumbs. Reserve. Add the flour to the remaining butter, whisking for 2 minutes. Slowly whisk in the milk and broth. Bring to a boil, whisking constantly. Add green onions. Whisk 2 minutes longer. Remove from heat or keep on very, very low
  • heat. Add half of the cheese, stirring until smooth. Add remaining cheese, stirring until melted and smooth. Add the macaroni to the sauce and stir well. Spoon into a 2-quart shallow baking dish. Sprinkle with the buttered crumbs. Broil until the crumbs brown, about 2 minutes. Serve immediately. (If you wish, the mixture can be prepared before broiling up to several hours ahead and refrigerated. You may need to stir in a little more milk or broth if it thickens to much. Then bake, covered, for 15 minutes at 375 degrees. Uncover, and bake about I0 minutes more until crumbs are browned and casserole is hot and bubbly.)
  • IDEAS FOR LIVENING UP BOXED MAC AND CHEESE
  • Stir in chopped pasta-ready canned tomatoes and chopped fresh basil (Italian)
  • Stir in a can of chopped green chiles and a teaspoon of chili powder (Mexican)
  • Stir in a can of drained water-packed tuna fish, a small can of olives, and some chopped fresh herb such as parsley, basil, thyme, tarragon, sage, or chives
  • Stir in leftover bits of cooked vegies (broccoli or corn) or deli meats (ham or smoked turkey or salami

2 cups uncooked elbow macaroni
4 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
¼ onion, minced
salt and pepper to taste
¼ pound processed cheese food
¼ pound shredded Cheddar cheese
¼ pound shredded Swiss cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Prepare the elbow macaroni according to package directions.
  • Meanwhile, melt the butter in a small saucepan over medium high heat. Stir in the flour until a cream colored paste forms. Then pour in the milk and stir constantly until this comes to a hard boil, then stir for 1 more minute. Remove from heat and set aside.
  • When the macaroni is cooked, spread 1/2 of it into the bottom of a lightly greased 9x13-inch baking dish. Then layer 1/2 of the grated onion, 1/2 of the salt and pepper and 1/2 of each of the cheeses. Repeat this one more time: macaroni, onion, salt and pepper and cheeses, and then pour the reserved white sauce over all. Top off with small pats of butter to taste.
  • Cover and bake at 350 degrees F (175 degrees C) for 45 minutes.

20 ounces Simply Macaroni & Cheese
1 1/2 cups bacon
8 ounces cream cheese
8 ounces smoked gouda cheese
1 cup Cheez-It crackers

Steps:

  • Cut bacon into small pieces. Fry until golden brown.
  • Drain bacon.
  • Open mac & cheese and pour into deep sauce pan.
  • Add 8oz cream cheese. Stir until melted.
  • Add 8oz shredded smoked gouda. Stir until melted.
  • Add 1 cup of the bacon to mixture.
  • Pour into baking dish.
  • Put crushed crackers on top.
  • Add remaining bacon pieces on top.
  • Bake at 350 degrees for 20 to 25 minutes.
  • Watch it, as ovens vary in temperature.

I love Mac & Cheese. So I created it just the way I like it. Hope you like it too. You can cut the prep time in half if you grate and cut up the cheese the day before.

8 ounces elbow macaroni
10 ounces Kraft macaroni and cheese, dinner (with the can of creamy cheese)
1/2 cup butter (softened)
1/3 cup seasoned bread crumbs
1 (13 ounce) can Carnation Evaporated Milk
16 ounces sharp cheddar cheese
8 ounces colby cheese
8 ounces monterey jack cheese
8 ounces Velveeta cheese
1/4 teaspoon celery salt
2 teaspoons onion powder
2 large eggs, beaten
2 teaspoons goya vegetable seasoning
salt and pepper (to taste)

Steps:

  • Cook macaroni about 3 minute less than the package directions.
  • While the macaroni is cooking:.
  • Grate about 2 ounce each of colby, monterey jack and half of the cheddar. Cut rest of the blocks into medium cubes. Slice the Velveeta. Set aside 1/2 cup of grated cheese to mix with bread crumbs.
  • Drain macaroni. Put butter, milk, grated cheese, celery salt, onion powder, salt, pepper, vegetable seasoning, cheese sauce in can and sliced Velveeta in a large saucepan.
  • Heat on low heat until cheeses are creamy. Put hot macaroni in large bowl. Add sauce, mix well. Add beaten eggs and mix well. Add cheese cubes. The cheese cubes will not melt completely. Add more milk if needed. Mix thorougly. Adjust seasoning if necessary.
  • Pour into large baking dish. Mix remaining grated cheese and 1/3 cup bread crumbs together. Sprinkle on top of mac and cheese. Drizzle 2 tablespoons melted butter on top of grated cheese and bread crumbs.
  • Bake at 350 for 35 to 45 minutes. Put under broiler to lightly brown the bread crumbs on top. Let set 15 minutes before serving.
  • If you like it cheezy, this is for you.
