1 pkg. (14 oz.) KRAFT Macaroni & Cheese Family Size Dinner
1/2 cup fat-free milk
1/2 cup chopped green peppers
1/2 cup chopped onions
1 Tbsp. oil
1 can (14-1/2 oz.) stewed tomatoes, drained, cut up
1 lb. cleaned medium shrimp, cooked
1/2 tsp. hot pepper sauce

Steps:

  • Prepare Dinner as directed on package, using the 1/2 cup fat-free milk and omitting the margarine; keep warm.
  • Cook and stir green peppers and onions in hot oil in large saucepan on medium heat until crisp-tender. Add tomatoes, shrimp and hot pepper sauce; mix well. Cook until heated through, stirring occasionally.
  • Add Dinner; mix lightly.

1 (8 ounce) box elbow macaroni
4 tablespoons unsalted butter, divided
12 ounces uncooked medium shrimp, peeled and deveined
2 teaspoons Creole seasoning (such as Tony Chachere's®)
2 cloves garlic, minced
2 tablespoons all-purpose flour
2 cups half-and-half
1 cup shredded sharp Cheddar cheese
1 cup shredded Monterey Jack cheese
1 tablespoon Creole mustard

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes.
  • While macaroni is cooking, melt 1 tablespoon butter in a large skillet over medium heat. Add shrimp; sprinkle with Creole seasoning. Cook, stirring continually, for 4 minutes. Add garlic and cook until shrimp is pink, about 2 minutes. Turn off heat.
  • Drain macaroni and rinse under cold water to stop the cooking; set aside. Return the pasta pot to the stove and melt remaining 3 tablespoons butter over medium heat. Add flour and whisk until dissolved, about 2 minutes. Add half-and-half; heat for 3 minutes.
  • Whisk in cheeses until melted, about 5 minutes. Add mustard; cook for 2 minutes. Turn off heat.
  • Add reserved macaroni and shrimp. Stir until heated through. Serve immediately.

I had this at my monthly Bunco group. One of the lady's husbands made it and gave us the recipe. It is to die for. I add in diced green pepper, saute it with the shrimp and more seasoning than called for when I make it.

1 lb cavatappi pasta, cooked
8 tablespoons butter, divided
1 lb medium shrimp, cut in thirds
1 teaspoon cajun seasoning, divided
1 tablespoon grated onion
3 tablespoons flour
3 cups milk
1/2 lb swiss cheese (grated)
1/2 lb cheddar cheese (grated)
1 lb monterey jack pepper cheese (grated and divided)
salt and pepper
1/4 cup breadcrumbs
1 teaspoon parsley

Steps:

  • Preheat oven to 350°F.
  • Melt butter in medium sauce pan.
  • Add shrimp, sprinkle with 1/2 tsp cajun seasoning.
  • Cook 3-4 minutes, remove.
  • In same pan melt 2T butter, add onion and sauté 1 minute.
  • Whisk in flour, cook 1 minute.
  • Whisk in milk and heat approximately 4 minutes.
  • Add Swiss, cheddar and 3/4 lb. pepper Jack cheese, stir until smooth.
  • Add 1/2 teaspoons cajun seasoning, salt, and pepper.
  • Stir in cooked shrimp and pasta.
  • Pour into buttered cassserole dish.
  • Top with 1/4 lb. pepper Jack cheese, bread crumbs, 3 T. melted butter and parsley.
  • Bake 45 minutes or until browned and bubbling.

7 ounces elbow macaroni, uncooked
1 pound medium shrimp (40 to 60 count), shelled and deveined
5 tablespoons butter, divided
3 cloves garlic, finely chopped
1/2 cup finely chopped medium onion
1 cup finely chopped celery
2 teaspoons salt, divided
2 teaspoons chopped fresh chives
1 teaspoon freshly ground black pepper
3 tablespoons cornstarch, mixed with 1/2 cup warm water
1/2 teaspoon ground nutmeg
1 1/2 cups nonfat half-and-half
1 cup shredded colby jack cheese
2 cups shredded sharp Cheddar
1 egg, lightly beaten
1/2 teaspoon paprika, for garnish

Steps:

  • Preheat oven to 375 degrees F.
  • Cook macaroni according to package directions. Drain and set aside.
  • Cut shrimp crosswise into thirds. In a medium frying pan, over medium heat, melt 2 tablespoons butter. Add garlic, and cook until translucent. Stir in the onion and celery, and cook, stirring occasionally, until translucent. Add shrimp, 1 teaspoon salt, chives and pepper. Mix thoroughly, reduce heat and cover. Cook for 10 to 12 minutes until the shrimp are cooked through. Drain and reserve liquid.
  • In a medium saucepan, melt 2 tablespoons butter over low heat. Stir in cornstarch/water mixture, nutmeg, and remaining 1 teaspoon salt. Gradually stir in half-and-half; cook and stir until mixture thickens slightly and bubbles. Remove from heat. Add half the colby cheese and 1 cup of the cheddar. Stir until melted; then add remaining colby cheese. Continue to stir until mixture is smooth. Add reserved liquid from shrimp and continue to stir until mixture is well combined.
  • Grease a 2-quart casserole with remaining tablespoon butter. In large bowl combine shrimp and cooked macaroni; add cheese sauce and mix thoroughly. Pour mixture into casserole dish and stir in the egg. Bake 35 to 40 minutes or until lightly browned and bubbly. Remove from the oven and sprinkle with remaining 1 cup of cheddar cheese. Return to the oven and bake until cheese is melted. Remove from oven and sprinkle with paprika. Let stand 10 to 15 minutes before serving.

2 pounds ground beef
1 1/2 cup quick oats, such as Quaker
3/4 cup ketchup
1/3 cup milk
1 1/2 teaspoon salt
2 teaspoons ground black pepper
2 onions, peeled and sliced 1/4-inch thick
1 clove garlic, minced
1 green bell pepper, cored and sliced lengthwise
2 tablespoons olive oil
1/3 cup red wine
1 can crushed tomatoes
1 1/2 teaspoons Italian seasonings
1 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
Dash salt
1 tablespoon brown sugar (optional)

Steps:

  • Preheat the oven to 350 degrees F. Place the ground beef in a mixing bowl. In a separate bowl, combine the oats, ketchup, milk, salt, pepper, eggs, garlic, bell peppers and onions and mix well. Then pour over the ground beef. Hand mix the beef and seasoning mixture until incorporated. Shape the mixture into a loaf and bake on a sheet pan or in a loaf pan for about 1 hour. The internal temperature should be 145 degrees F. Remove from the oven let rest about 10 minutes before slicing. Serve with Creole Sauce.
  • Saute the onions, garlic and peppers in the olive oil in a saucepot over medium-high heat until well done and caramelized, about 8 minutes. Add the wine, tomatoes, Italian seasoning, black pepper, cayenne pepper, salt and sugar if using. Bring to a boil, reduce the heat and simmer for 30 minutes, stirring occasionally.

Use the best aged cheeses you can find. Any andouille sausage will work, but do not substitute. Just leave it out if you can't find any.

1 (8 ounce) package elbow macaroni
1 cup andouille sausage, diced
4 tablespoons butter
¾ cup bread crumbs
½ cup grated Parmesan cheese
1 onion, chopped
2 stalks celery, chopped
1 tablespoon all-purpose flour
½ teaspoon paprika
½ teaspoon prepared mustard
1 ½ cups milk
1 cup grated Gruyere cheese
1 ½ cups shredded Cheddar cheese
kosher salt to taste
black pepper to taste

Steps:

  • Cook macaroni in a large pot of boiling water until al dente. Drain.
  • In a small pan, cook the andouille sausage over medium heat until done. Set aside. In the same pan, melt 1 tablespoon butter over medium heat. Add bread crumbs, and stir to coat. Cool, and then mix in Parmesan. Set aside.
  • In a medium saucepan, melt 1 tablespoon butter. Saute onions and celery until translucent. Transfer to a bowl.
  • In the same saucepan, melt 1 tablespoon butter over medium heat. Whisk in the flour, to make a white roux. Try not to let the roux brown at all, it should be white. Mix in paprika and mustard, then stir in milk. Bring to boil over medium heat, then add Gruyere and Cheddar cheeses. Simmer, stirring often, until thick enough to coat the back of a spoon, about 10 minutes. Season with salt and pepper to taste.
  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13 in pan, or similar sized casserole dish. Transfer cooked macaroni to the dish, and toss in the andouille sausage and sauteed vegetables. Stir in the cheese mixture. Sprinkle the breadcrumb and Parmesan mixture evenly over the top.
  • Bake for 20 minutes, or until crust turns golden brown.

1 cup uncooked elbow macaroni
salt
1 cup half-and-half
1 cup soft breadcrumbs
1 small onion, minced
1 cup cheddar cheese, shredded
3 eggs, slightly beaten
1 teaspoon seasoning salt
1/4 teaspoon black pepper
1 teaspoon Worcestershire sauce
1/4 cup chopped parsley
2 tablespoons green peppers, minced
2 tablespoons onions, minced
2 tablespoons celery, minced
2 tablespoons parsley
1 tablespoon butter
1 tablespoon cornstarch
1 (8 1/4 ounce) can stewed tomatoes, crushed
1 vegetable bouillon cube
1/4 cup water

Steps:

  • Cook macaroni in boiling salted water for 10 minutes or until tender. Drain. Set aside.
  • Scald half-and-half and pour over bread crumbs. Add onion, cheese, eggs, seasoned salt and pepper, Worcestershire sauce and parsley. Stir in macaroni. Turn into a well-greased 7 1/2 x3 1/2 loaf pan.
  • Set in roasting pan or other deep pan. Add hot water to a depth of 1 inch.
  • Bake at 350° for 45 minutes or until firm and golden brown.
  • Turn out onto platter, if desired turn right side up. Garnish with parsley and pass the sauce.
  • CREOLE SAUCE: In a small saucepan, sauté first 4 ingredients in the butter until tender. Stir in rest of ingredients and bring to a boil. Cook, stirring, until thickened. Add shrimp if used.
