FREEZER BREAKFAST SANDWICHES

- Preheat oven to 325°. In a large bowl, whisk eggs, milk, salt and pepper until blended. Pour into a 13x9-in. baking pan coated with cooking spray. Bake until set, 15-18 minutes. Cool on a wire rack., Meanwhile, toast English muffins (or bake at 325° until lightly browned, 12-15 minutes). Spread 1 tsp. butter on each muffin bottom., Cut eggs into 12 portions. Layer muffin bottoms with an egg portion, a cheese slice (tearing cheese to fit) and Canadian bacon. Replace muffin tops. Wrap sandwiches in waxed paper and then in foil; freeze in a freezer container., To use frozen sandwiches: Remove foil. Microwave a waxed paper-wrapped sandwich at 50% power until thawed, 1-2 minutes. Turn sandwich over; microwave at 100% power until hot and a thermometer reads at least 160°, 30-60 seconds. Let stand 2 minutes before serving.

FREEZER BREAKFAST SANDWICHES
Weekday breakfasts will be no problem with these make-ahead freezer-friendly breakfast sandwiches.

- Heat oven to 350°F. Spray 6 ramekins with cooking spray. Crack an egg into each ramekin, and sprinkle with salt and pepper. Use a fork to pierce yolks, and very light beat each. Bake 12 to 15 minutes or until egg is set. Let cool completely, then gently remove from ramekins.
- To assemble sandwiches, spread insides of English muffins with butter. Fill each English muffin with 1 egg, 1 slice Cheddar cheese and 2 slices Canadian bacon. Wrap each tightly with plastic wrap. Store in freezer up to 2 months, or in the fridge up to 1 week.
- To reheat, remove from plastic wrap, and cover with paper towel. Microwave at Medium (50%) 2 minutes, turning halfway through.

MAKE AHEAD BREAKFAST SANDWICHES
I started experimenting with breakfast ideas for my husband who is too busy at work to sit down for long to eat. The seasonings, cheese, meat and bread I have listed are just suggestions (my husband's preference). Add veggies if you like! The possibilities are endless! If you want to cut down on the meat and save some money, replace part of the sausage with textured vegetable protein. It will take on the flavor of the sausage and make it a little lower in fat. Just follow the directions on the TVP package to prepare. TVP is usually in the health food section at the store.

- Bake biscuits according to package directions.
- While biscuits are baking start browning sausage.
- In a mixing bowl combine eggs dry mustard and pepper.
- Add egg mixture to the browned sausage and cook until eggs are done.
- After biscuits have cooled cut them in half and spread with butter.
- Sprinkle buttered biscuits with garlic salt (DON'T add the salt to the eggs while they are cooking, the salt will make the eggs rubbery).
- Cut cheddar cheese slices into fourths.
- Put one fourth of cheese slice on bottom half of biscuit.
- Spoon a small amount of cooked egg and sausage mixture onto the bottom half of each biscuit (on top of cheese).
- Place another fourth of a cheese slice on top of the egg and sausage mixture (putting the cheese on this way "glues" the sandwich together when it is reheated).
- Place top of biscuit onto sandwich.
- Wrap each sandwich in wax paper and put them in large freezer bags.
- Place them in the freezer.
- To reheat, leave sandwich in wax paper and microwave on high for approximately one minute to a minute and a half.

- Place the bacon onto a large rimmed sheet pan (baking sheet) , side by side, not touching. Place the sheet pan of bacon into a cold oven on the center rack. Turn the oven to 400 F. degrees at this point and press start.
- Let the bacon cook 15-20 minutes, turning halfway through the baking time, until the bacon is nicely browned and beginning to crisp. Remove the strips of bacon from the baking sheet and place onto a paper towel-lined plate; reserve.
- Remove most of the bacon fats from the baking sheet; pour the beaten eggs onto the baking sheet, stirring to combine with any bacon fat that pools in or around the eggs.

- Preheat the oven to 375F. Grease a 8×11 inch glass baking dish well with non-stick cooking spray or coconut oil. Whisk eggs, milk, and seasonings (I do 1/4 tsp each salt, pepper and garlic powder) in a bowl and then pour into the baking dish. Cook for 20-25 minutes, until eggs are fully cooked and the center is no longer jiggly. Cut into 6 equal slices, and set aside to cool.
- While the eggs are cooking, make the bacon on the stovetop (or your preferred method). Heat a deep skillet or Dutch oven over medium heat. When hot, add strips of bacon. Using tongs, flip after a couple minutes, let them cook through to your desired crispness, and then place on a plate lined with paper towels. Repeat with remaining bacon. TIP: After cooking, fold the bacon into a V shape on the paper towels while hot and pliable (see photo above). The bacon will cool and slightly harden in this shape, and fit perfectly onto your sandwich. Set aside to cool.
- (optional): Lay the English muffin halves out on a half size baking sheet, cut side facing up. Brush each with melted butter. Place into the 375F oven for 5-7 minutes or until the edges are crispy and golden brown. If toasting at the same time as cooking the eggs, put the eggs on the bottom rack and the muffins on the top rack. Watch closely so they don’t burn. This step is preferred when eating the muffins right after cooking, but not required if going straight into the freezer.
- Once all the parts are cooked and cooled, assemble your breakfast sandwiches. Each with a slice of egg, one piece of bacon, and a slice of cheese. Wrap each sandwich in parchment paper. If freezing, store all sandwiches in a gallon Ziploc bag and store sealed in the freezer, enjoy within 1-2 months. If refrigerating, use an airtight container and enjoy within 4 days.
