FROZEN FRENCH FRIES
If potatoes are on sale, buy a bag and make your own frozen french fries. Prep and cooking times are approximate. The true time will depend, of course, on how many fries you make and how thick you cut them.

Steps:
- Peel the potatoes and cut into french fries.
- Put the raw french fries in a ziplock bag and shake to coat with a little olive oil and cajun seasoning.
- Bake at 425 F until just done.
- Cool, then set the cookie sheet they were baked on in the freezer until they are frozen solid.
- Scoop them off with a spatula and store in 5 quart ice cream buckets.
- That way you can have as few or many as you like without having to go for an extra bag.
- To heat them up just throw them back in the oven on a cookie sheet at 425 F for about 15 minutes.

Steps:
- Peel the potatoes and soak them in water.
- Cut them into 1 centimeter thick slices and further cut them into finger sized pieces.
- Take a pan and pour sufficient water for boiling.
- Then put the potato pieces in the water and add salt. Boil till it is half done.
- Drain and cool them. Then put the pieces into a zip-lock bag and seal tightly removing excess air.
- Store them in a deep freezer. Whenever you need them, remove from freezer and deep fry directly in medium hot oil till they turn crispy and golden. Add salt only after removing from hot oil.
- Serve hot.

- Preheat an air fryer to 400 degrees F (200 degrees C).
- Place frozen French fries in a large bowl. Add olive oil and toss to coat. Season with salt and toss to coat again.
- Spread out French fries in the basket of the air fryer, making sure to not overcrowd, and cook for 10 minutes. Turn fries over using a spatula and continue cooking until desired crispness, 2 to 4 minutes more.

- Peel and cut: Rinse the potatoes and pat dry. Peel the potatoes, if desired. Cut the potatoes into 1/2-inch-thick sticks or your desired thickness.
- Blanch: Bring the water and salt to a boil over medium-high heat in a large pot. Add 1/4 of the potatoes and cook for 2 minutes. While the potatoes are cooking, prepare a large bowl of ice water. Use tongs or a slotted spoon to immediately move the blanched potatoes to the ice water bath. Repeat with blanching and cooling the remaining potatoes in 3 more batches.
- Dry: Drain the chilled potatoes from the ice bath and lay them out in a single layer on paper towels or a clean kitchen towel. Pat with more towels to dry completely. Place the fries and oil in a clean, dry large bowl and toss to combine.
- Freeze: Place the fries in a single layer on a parchment paper-lined rimmed baking sheet and freeze until solid, 6 hours or overnight.
