The fig mixture can be made a day ahead to allow the figs to absorb more of the syrup). Almonds may be replaced by pecans if preferred.

1/2 cup brown sugar
2 tablespoons water (more may be added if desired)
6 fresh figs, stemmed and quartered
1 (14 ounce) brie cheese (4 1/4-inch diameter)
1/2 cup toasted almond
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 325 degrees F.
  • Heat brown sugar and water in a small saucepan over medium heat until sugar is completely dissolved.
  • Add figs and vanilla, and cook until softened, about 10 minutes. Stir in almonds and vanilla.
  • Place brie wheel in a baking dish, and pour fig mixture over the top.
  • Bake in the preheated oven for 10 to 15 minutes, or until softened but not melted. Serve with water crackers.

½ cup brown sugar
2 tablespoons water
6 fresh figs, stemmed and quartered
1 (14 ounce) round 4 1/4-inch diameter round Brie cheese
½ cup toasted almonds
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 325 degrees F (165 C).
  • Heat brown sugar and water in a small saucepan over medium heat until sugar is completely dissolved. Add figs and vanilla, and cook until softened, about 10 minutes. Stir in almonds and vanilla. Place brie wheel in a baking dish, and pour fig mixture over the top.
  • Bake in the preheated oven for 10 to 15 minutes, or until softened but not melted. Serve with water crackers.

1 loaf sourdough bread or 1 loaf French bread
fresh strawberry slices
fresh pear, slices

Steps:

  • Preheat oven to 300 degrees.
  • Melt butter in a small skillet over medium heat.
  • Add almonds and saute until golden; remove from heat.
  • Place Brie in a small baking dish; season with salt and pepper.
  • Top with toasted almonds.
  • Bake at 300 degrees for 20 to 25 minutes or until Brie is golden.
  • Wrap bread in aluminum foil and warm in oven while Brie bakes.

1 whole round Brie cheese (4 1/2 ounces)
2 tablespoons butter or margarine
1/4 cup sliced almonds, toasted
1 tablespoon brandy, if desired
Chopped fresh parsley, if desired
Assorted crackers, if desired

Steps:

  • Set oven control to broil. Place cheese in ovenproof pie plate or pan. Broil cheese with top 3 to 4 inches from heat about 2 minutes 30 seconds or until soft and warm.
  • Melt butter; stir in almonds and brandy. Pour over cheese. Garnish with parsley. Serve with crackers. Microwave Directions: Place cheese in microwavable plate or dish. Microwave uncovered on Medium (50%) 2 to 3 minutes or just until soft and warm. Place butter in 1-cup microwavable measuring cup. Microwave butter uncovered on High about 1 minute or until melted; stir in almonds and brandy. Pour over cheese.
