Steps:
- Preheat waffle iron according to manufacturer's instructions. In a large bowl, whisk flour, sugar, baking powder, and salt; set aside.
- In a small bowl, whisk milk and eggs; pour over flour mixture, and whisk gently to combine (don't overmix). Gently whisk in butter.
- Following manufacturer's instructions, cook waffles until deep brown and crisp. (For a standard waffle iron, pour a generous 1/2 cup of batter into center, spreading to within 1/2 inch of edges, and close; waffle will cook in 2 to 3 minutes.) Serve warm, with maple syrup and butter, as desired.
MAKE AHEAD OATMEAL WAFFLES
These have a wonderful taste! Very cheap to make, an excellent replacement for frozen store bought waffles. Time to refrigerate is not included in prep time. You can freeze any extras if you like. To spray olive oil we have a small bottle that you fill with olive oil and pump, you can find them at a kitchen supply store for around $10. 05-07-07 Due to the fact that a lot of people are allergic to wheat, I have changed this recipe. To make original recipe just add 1/4 cup wheat flour.

Steps:
- Start with preparing and measuring all the ingredients. I like to use measuring cups.
- Take the blender and add all ingredients. Note: add wet ingredients first for easier blending.
- Mix everything at high speed until you get a smooth texture.
- Taste the batter and add additional sweetener if you think the mixture is not sweet enough.
- Let the batter rest for a few minutes.
- Turn on the waffle maker and let it heat until it's hot (the green light must be on).
- Coat waffle plates with cooking spray or melted coconut oil using the brush.
- Pour the batter onto the hot waffle plates, close the lid and allow the waffles to cook. Depending on your waffle maker it will take between 8-10 minutes per batch.
- Once baked, remove waffles from the waffle maker and place them on a cooling rack. Fresh baked waffles will be soft when you take them out of the waffle maker but they will harden as they cool on the rack.
- Repeating the process with the rest of the batter. Make sure to grease the waffle plates before adding the batter to prevent sticking.
- Transfer cooled waffles to a plate.
- Add toppings (optional): I used banana, blueberries, and maple syrup. Be creative here and add toppings you like.
- Serve and enjoy!

Steps:
- Preheat the oven to 375 degrees F. Arrange bacon on a broiler pan and bake until crisp, about 15 minutes. Remove the bacon and reduce the oven temperature to 200 degrees F.
- Preheat a waffle iron to high.
- In a large bowl, whisk the flours, baking powder, kosher salt, and few grinds of black pepper. In a medium bowl, whisk the milk, 1/3 cup melted butter, and egg. Add the milk mixture to the flour mixture and stir just to combine. Stir in the cheese and herbs.
- Brush the waffle iron with melted butter and spoon in about 1/2 of the batter. Close and cook until the waffle is browned and crisp. Transfer the waffle to a plate and keep warm in the oven. Make another waffle with the remaining batter. Quarter the two waffles, creating 8 smaller waffles.
- Mix Dijon mustard and maple syrup. Set aside.
- To make a sandwich: top a waffle with the bacon, lettuce, and tomato. Drizzle on some maple-mustard sauce. Add another waffle to top.
