SOPAPILLA CHEESECAKE BITES
Who doesn't love sopapilla cheesecake? These satisfy the craving, but are bite-sized morsels and faster to make because they're air fried!

Steps:
- Preheat the air fryer to 370 degrees F (190 degrees C) for 8 minutes.
- Meanwhile, whip cream cheese, sugar, butter, vanilla, and cinnamon together in a small bowl with an electric mixer. Transfer mixture to a piping bag.
- Roll out crescent sheets on a clean work surface. Mark 2-inch increments lengthwise and widthwise with a ruler, making small squares. Pipe 1 to 2 tablespoons cream cheese filling into each square.
- Carefully lay remaining crescent sheet on top. Press dough around the filling. Use a pizza cutter to cut out the squares.
- Reduce air fry temperature to 340 degrees F (171 degrees C) and place a parchment round in the bottom of the air fryer basket. Place cheese cake bites into the basket and air fry for 8 minutes.

- Sift together flour, baking powder and salt.
- Cut shortening in until mixture is a rough texture.
- Gradually add warm water.
- Mix to form dough.
- Knead until smooth.
- Cover and let stand for 20 minutes (this will make it easier to roll out).
- Start oil heating (desired temp is 375° - 400°).
- On a lightly floured board, roll dough thin (between 1/4 and 1/8 inch).
- Cut into 3 inch squares.
- Fry a few at a time, turning when golden and puffed up.
- Drain on paper towels.
- Serve immediately.

- In a large bowl, combine the flour, salt and baking powder. Stir in water milk and oil with a fork until a ball forms. On a lightly floured surface, knead dough gently for 2-3 minutes. Cover and let stand for 15 minutes. Divide into four portions; roll each into a 6-1/2-in. circle. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry circles, one at a time, for 2-3 minutes on each side or until golden brown. Drain on paper towels., In a large skillet, cook beef and onion until meat is no longer pink; drain. Stir in the salt, garlic powder and pepper. In a large saucepan, combine the soup, broth, chilies and onion powder; cook for 10 minutes or until heated through. , Cut a slit on one side of each sopaipilla; fill with 1/2 cup of meat mixture. Top with cheese. Serve with sauce.

- In a large bowl, mix together the flour, salt, and baking powder. Add the shortening, and use your hands to integrate it well with the flour.
- Pour the hot water into the bowl, little by little. Work the dough with your fingers, mixing the dry ingredients with the water until you form a dough.
- On your table or countertop, knead the dough for about 4-5 minutes until it is smooth. Form a ball with the dough and place it back in the bowl.
- Cover the dough with a plastic or kitchen napkin and let it rest for at least 20 minutes. This resting time helps the gluten to develop and make it easy for you to roll out the dough and form the sopapillas.
- After the resting time, slightly knead the dough again and then form it back into a ball. Flatten the ball a little bit, then cut it into 2 pieces using a knife or a pastry cutter.
- Roll the 2 pieces of dough to form smaller balls. Place one on your working surface and set the other one aside, covered with plastic wrap. Form a rectangle with the dough using a rolling pin. The rectangle should be about ⅛ to ¼ inch in thickness.
- Preheat the air fryer to 350°F (175°C). Spray the basket and both sides of the dough with olive oil spray. Air fryer for 8 minutes, flipping half way through the cook time.
- Once the sopapillas are golden brown, brush with melted butter and sprinkle sugar and cinnamon on top. Drizzle with honey and serve immediately.
