BOURBON CHICKEN
I searched and finally found this recipe on the internet. It is a copycat of the Bourbon Chicken sold in Chinese carry-outs in my hometown. This recipe is so good that my sons gobble it up leaving me just a spoonful. Their excuse was they thought I had eaten. Editor's Note: Named Bourbon Chicken because it was supposedly created by a Chinese cook who worked in a restaurant on Bourbon Street.

Steps:
- Add the chicken to a bowl, along with the mirin, soy sauce, dark soy sauce, brown sugar, ginger, sesame oil, and cornstarch. Mix together until all the ingredients are well combined. Allow to marinate for 2 hours.
- Heat the oil in a wok or large skillet over medium high heat. Transfer the chicken to the pan in one layer (reserving the marinade), and allow it to sear on one side for 1 minute. Then start stir-frying for another minute.
- Add the reserved marinade to the pan, reduce the heat to medium, and simmer to reduce the sauce until it thickens and coats the chicken. Serve over rice!

Steps:
- Mix 3 tablespoons of cornstarch, salt, and pepper in a bowl.
- Cut the raw chicken into bite sized pieces.
- Pat dry.
- Add it to the cornstarch mixture and toss until coated on all sides.
- Add 2 tablespoons of oil to a heavy skillet on medium high heat. I use cast iron.
- Heat the oil until it shimmers then add about half the chicken pieces.
- Cook for 3 minutes without stirring.
- Turn carefully and cook for 3 more minutes.
- Remove from the pan.
- Add more oil if needed and repeat with the remaining chicken.
- Remove chicken to a platter and keep warm.
- Add the chopped garlic and saute for just a few seconds.

- Bring to a boil.
- Carefully spoon the chicken back into the pan.

- If you need it thicker add an extra tablespoon of cornstarch to 2 tablespoons of water and stir into the sauce.
- Cook until the sauce is thick.
- Serve immediately over noodles or rice.
- No need to dredge the chicken or sear it as above. You won't need the oil but you will need the cornstarch.

- Combine 3 tablespoons of water with the reserved cornstarch and mix until smooth.
- Stir into the cooked chicken mixture in the slow cooker.

Steps:
- Cut the chicken thighs into 1 inch pieces, and remove any excess fat or skin.
- In a small bowl combine the ginger, pepper, soy sauce, whisky, water, garlic, vinegar and brown sugar. Set aside.
- In a large saute pan or skillet heat the oil on medium high heat.
- Add the chicken and cook until the juices have cooked off and the chicken starts to brown, about 8-10 minutes. Stir the chicken every 1-2 minutes so it doesn't burn and browns evenly.
- Add the bourbon mixture and stir well. Allow the liquid to come to a boil and then turn the heat down to medium. Simmer uncovered for about 15 minutes. Don't rush this as you want the alcohol to cook off from the whiskey.
- Add in the cornstarch liquid and stir briskly. The sauce will thicken quickly.
- Serve over rice.
