CHERRY-CRANBERRY CHUTNEY

Cherry-Cranberry Chutney image

This replaced the canned sauce at Christmas the first year I made it! I got a photocopy of the recipe about 20 years ago from a coworker. (Still have that photocopy!) I've now introduced it to my future in-laws, who love it, too. The color is a deep ruby red, complementing the other holiday dishes nicely. Note: I've done the orange all kinds of ways, and leaving it whole works best in terms of texture. Another option is to use a blend of orange peel and orange extract to suit your tastes. Bon appetit!

Provided by mensan98th

Categories     Chutneys

Time 40m

Yield 8-10 serving(s)

Number Of Ingredients 9

1 cup brown sugar
1 cup raisins (golden or regular)
1 cup fresh cranberries
1/2 teaspoon cinnamon
1/2 teaspoon clove
1/2 teaspoon nutmeg
1/3 cup white vinegar
1 (21 ounce) can cherry pie filling
1 orange, whole

Steps:

  • Wash the orange and roll it on the counter beneath the palm of your hand to soften it a little.
  • Place all ingredients in a heavy-bottomed saucepan, leaving the orange whole.
  • Mix the ingredients well.
  • Bring to boil over medium to medium-high heat.
  • Reduce heat and simmer for 20 minutes or until cranberries pop.
  • Cool, then chill in the refrigerator until ready to serve.

GARLICKY CRANBERRY CHUTNEY

Garlicky Cranberry Chutney image

I think this came from the L.A. Times. It makes a nice change from the traditional cranberry-orange relish. Though this is called a chutney, I've characterized it as 'Western U.S.' cuisine rather than Indian. It strikes me as sort of 'West-Coast Fusion', in the spirit of ringing all kinds of changes on the traditional American holiday foods. Also, I don't think cranberries are very typical of the subcontinent. But it would probably be fun to serve it with a chicken or turkey curry.

  • Stir in cranberry sauce, heat through, and simmer for 10 minutes.

Yield Makes 6 to 8 servings (about 3 cups)

Number Of Ingredients 9

1/2 pound small (1-inch-wide) shallots or pearl onions (preferably red), left unpeeled
1 tablespoon unsalted butter or vegetable oil
3/4 cup sugar
1/2 cup white-wine vinegar

Add cherries and simmer, uncovered, stirring occasionally, until shallots are tender and liquid is syrupy, about 45 minutes.
  • Add cranberries and water and gently boil over moderate heat, uncovered, stirring occasionally, until cranberries have burst, about 10 minutes. Transfer compote to a bowl and cool completely.
