2 tablespoons butter
1/2 pound diced ham
2 ribs celery, finely chopped
1 cup frozen chopped onions
1 cup frozen chopped green peppers
1 (14.5-ounce) can diced tomatoes with green peppers, celery, and onion (recommended: Hunt's)
1 (14-ounce) jar pasta sauce
1 1/2 cups low-sodium chicken stock
1 teaspoon salt
4 dashes hot sauce, or more if needed
1 1/2 cups converted long-grain rice (recommended: Uncle Ben's)

Steps:

  • In a medium saucepot, melt butter over medium-high heat. Add ham, celery, onions, and green peppers. Saute until celery is soft, about 5 minutes.
  • Add remaining ingredients and stir until rice is evenly distributed. Bring to boil. Cover and simmer for 30 minutes, or until all liquid is absorbed.

This is pure southern soul food. Its been made for generations in my family since the early 1900's. Every area of the south has a version of red rice but I saw that Zaar did not have a recipe quite like this one. I cannot get enough of this southern delight and thought you might like it as well.

1 (6 ounce) can tomato paste
2 medium onions, diced fine
1 bell pepper, diced fine
2 teaspoons salt
2 -3 teaspoons granulated sugar
1 lb bacon, fried and grease held aside
1 lb smoked beef sausage
3 cups water
2 cups raw long grain rice
2 tablespoons black pepper

Steps:

  • Fry bacon and remove from the pan:.
  • Saute'onions and peppers in the bacon grease;.
  • Add tomato paste water salt sugar and pepper.
  • Cook uncovered slowly about 5 minutes and then add the rice another 5 minutes until mixture is bubbly then pour into the top section of a rice steamer or you can use a very large Pyrex dish.
  • Pour mixture in and add the sausage and crumble up the bacon and mix into the rice mixture.
  • Cover and bake for 35- 45 minutes in a preheated oven at 350 degrees or steam in steamer.
  • I bake it now days but the family recipe says to steam it.

My Aunty Ruth gave me this recipe years ago, then I added my own flair. Now I can honestly say I make the best red rice of anyone I know!

2 cups uncooked parboiled rice
1/4 cup vegetable oil
8 ounces smoked pork sausage, finely diced
1 large onion, finely diced
1 bell pepper, finely diced
2 6-ounce cans tomato paste
4 teaspoons sugar
1 tablespoon garlic powder
Kosher salt and freshly cracked black pepper

Steps:

  • Rinse the rice until the water becomes slightly clear. (This removes the starch.)
  • Preheat the oven to 350˚ F. In a large frying pan, heat the vegetable oil over medium-high heat. Add the sausage, onion and bell pepper and cook, stirring, until the vegetables soften and start to brown at the edges, 3 to 4 minutes. Stir in the tomato paste, sugar, garlic powder and 1 tablespoon each salt and pepper. Stir the rice into the tomato mixture and cook, uncovered and stirring occasionally, until well combined, about 5 minutes.
  • Transfer to a 9-by-13-inch or other 3-quart baking dish and spread into an even layer. Add just enough water to cover the rice (about 2 cups). Tightly cover with a lid or foil and bake for 30 minutes without uncovering the dish. Turn off the oven; remove the rice from the oven, uncover and fluff, then cover again and return to the oven for 10 minutes more.

I made up this lentil potato soup recipe one chilly weeknight to stave off a cold. I was surprised at how delicious the soup was! The filé powder makes it nice and thick, but it may be left out. A warm loaf of sourdough bread is all you need to complete your meal!

2 tablespoons unsalted butter
1 large sweet onion, chopped
4 stalks celery, chopped
4 medium red potatoes, chopped
1 carrot, chopped
3 cloves garlic
¼ teaspoon ground allspice
¼ teaspoon cumin seeds
¼ teaspoon cayenne pepper
⅛ teaspoon ground cloves
1 dash pepper
1 quart vegetable broth
1 ½ cups dry red lentils
2 cups water
1 cup roughly chopped kale
¼ cup chopped fresh cilantro
1 teaspoon file powder

Steps:

  • Melt butter in a large saucepan over medium heat. Stir in onion and celery; cook until tender. Mix in potatoes, carrot, and garlic. Continue to cook and stir until potatoes are well coated with butter, about 5 minutes. Season with allspice, cumin, cayenne pepper, cloves, and pepper.
  • Pour in vegetable broth; mix in lentils. Add water, adding more if needed to cover all ingredients. Bring to a boil, reduce heat, and stir in kale. Cook, stirring occasionally, until lentils are tender, 35 to 45 minutes.
  • Stir in cilantro and filé powder. Continue cooking to desired thickness, about 5 minutes.

2 cups uncooked long-grain white rice
6 cups boiling water
1 tablespoon salt
6 slices bacon
2 onions, chopped
1 (8 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 tablespoon white sugar
2 teaspoons Worcestershire sauce
1 dash hot pepper sauce

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 2-quart baking dish.
  • Bring the rice, water, and salt to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and most of the liquid has been absorbed, 20 to 25 minutes.
  • While the rice is cooking, cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Reserve about 1 tablespoon of bacon drippings in the pan. Reduce heat to medium. Drain the bacon on a plate lined with paper towels; crumble the bacon once cooled enough to handle.
  • Cook and stir the onions in the reserved bacon drippings until translucent, 5 to 8 minutes. Stir in the crumbled bacon, tomato sauce, tomato paste, sugar, Worcestershire sauce, and hot sauce; bring the mixture to a simmer, reduce heat, and simmer for 10 minutes. Spoon the cooked rice into the prepared baking dish and stir the tomato-bacon mixture into the rice until evenly combined.
  • Cover the dish and bake in the preheated oven for 45 minutes.

1 lb link sausage (like Hillshire Farms)
1 large bell pepper, chopped
2 (15 ounce) cans tomato sauce
1 tablespoon sugar
1 large onion, chopped
1 cup long grain white rice
1 teaspoon salt
black pepper, to taste

Steps:

  • Preheat oven to 350.
  • Brown sausage with bell pepper and onion in skillet.
  • Combine with rice, sugar, salt, pepper and tomato sauce and drippings from sausage.
  • Place in dutch oven or corning ware, covered in oven for 1 hour, stirring after the first 20 minutes.
  • After 1 hour, let sit in ove for about 20 minutes before serving.
