3 tablespoons good olive oil
1 small French bread or boule, cut into 1-inch cubes (6 cups)
1 teaspoon kosher salt
2 large, ripe tomatoes, cut into 1-inch cubes
1 hothouse cucumber, unpeeled, seeded, and sliced 1/2-inch thick
1 red bell pepper, seeded and cut into 1-inch cubes
1 yellow bell pepper, seeded and cut into 1-inch cubes
1/2 red onion, cut in 1/2 and thinly sliced
20 large basil leaves, coarsely chopped
3 tablespoons capers, drained
1 teaspoon finely minced garlic
1/2 teaspoon Dijon mustard
3 tablespoons Champagne vinegar
1/2 cup good olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Heat the oil in a large saute pan. Add the bread and salt; cook over low to medium heat, tossing frequently, for 10 minutes, or until nicely browned. Add more oil as needed.
  • For the vinaigrette, whisk all the ingredients together.
  • In a large bowl, mix the tomatoes, cucumber, red pepper, yellow pepper, red onion, basil, and capers. Add the bread cubes and toss with the vinaigrette. Season liberally with salt and pepper. Serve, or allow the salad to sit for about half an hour for the flavors to blend.

5 cups cubed good-quality crusty bread (about half of a 7-inch round loaf)
6 medium-ripe tomatoes, cored and cut into 3/4-inch pieces
Kosher salt and freshly ground black pepper
6 tablespoon extra-virgin olive oil
3 tablespoons sherry vinegar
1/4 cup thinly sliced red onion
1 cup basil leaves, torn

Steps:

  • Preheat the oven to 325 degrees F. Arrange the bread cubes on a rimmed baking sheet in a single layer. Bake until dried out but not toasted, 10 to 15 minutes. Cool.
  • Meanwhile, put the tomatoes in a colander and toss them with 1 teaspoon salt. Let stand 20 minutes, discard any juices that drain out.
  • Whisk the olive oil and vinegar together in a large bowl. Add the bread, tomatoes, onion, and basil and toss to coat thoroughly. Season with salt and pepper and serve immediately.

Steps:

Zucchini shines in this take on panzanella, a Tuscan bread salad commonly featuring tomatoes. (Panzanella didn't include tomatoes until the 16th century, and earlier versions featured onions as the main vegetable.) Here, scallions crisp up alongside the pan-fried croutons, which get a last-minute candying with maple syrup to provide extra crunch and insurance against sogginess. While the croutons are magnificent and dangerously snackable, the star of this salad is the zucchini. Cooked zucchini tastes wonderful, but the crunch of the raw vegetable in this recipe is stimulating and sweet, especially when doused with the punchy, garlicky dressing. 3 medium zucchini (about 1 pound), trimmed
Kosher salt (Diamond Crystal) and black pepper
2 packed cups (1/2-inch) cubes of dense, chewy, day-old bread (5 ounces), such as sourdough
4 tablespoons olive oil
1 bunch scallions, thinly sliced at an angle (about 2 cups)
1 teaspoon dried oregano
1 tablespoon plus 2 teaspoons maple syrup
1 large garlic clove, finely grated
1 tablespoon plus 1 teaspoon rice vinegar
2 teaspoons Dijon mustard
1/2 cup Castelvetrano or other green olives, pitted and torn into halves
1 packed cup fresh flat-leaf parsley leaves and tender stems

Steps:

  • Slice 1 zucchini crosswise into 1/4-inch-thick coins. Slice the remaining 2 zucchini crosswise into 2-inch-long segments; press on each segment with your hand (and body weight) to crush so the two rounded sides are flattened, then tear into bite-size pieces. Add all of the zucchini to a large colander set in the sink, sprinkle with 1 teaspoon salt and toss. Let sit to drain, about 30 minutes.
  • While the zucchini drains, heat a large skillet over medium. Add the bread and toss frequently with a wooden spoon until lightly browned and beginning to dry out, about 5 minutes. Add 2 tablespoons oil, the scallions and 1/2 teaspoon dried oregano, and toss until the bread is evenly coated. Season to taste with salt and pepper, and cook, stirring occasionally, until the bread is crispy and evenly browned, 5 to 7 minutes. The scallions should be slightly wilted and browned.
  • Add 1 tablespoon maple syrup to the pan. Toss frequently until the bread is evenly coated and the syrup has caramelized, 2 to 3 minutes. Take the pan off the heat and set aside so the croutons can cool slightly while you finish the salad.
  • In a large bowl, whisk together the garlic, vinegar, mustard and 1/2 teaspoon each salt and pepper with the remaining 2 tablespoons olive oil, 2 teaspoons maple syrup and 1/2 teaspoon oregano.
  • Transfer the drained zucchini to a clean kitchen towel and blot dry. Add to the bowl with the dressing and toss. Transfer the croutons to the bowl, along with the olives and parsley, and gently toss to coat. Adjust seasoning with salt and pepper, and serve immediately.

3 medium zucchini, cut into 1/4-in. slices
1/4 cup olive oil, divided
1 French bread baguette (10-1/2 ounces), cubed
1-1/2 cups heirloom mini or cherry tomatoes, halved
1 medium green pepper, coarsely chopped
1/2 medium red onion, thinly sliced
1/4 cup balsamic vinegar
1 teaspoon jarred roasted minced garlic
1 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper flakes
1 teaspoon kosher salt
1/2 teaspoon coarsely ground pepper
1-1/2 cups fresh mozzarella cheese pearls

Steps:

  • Place zucchini in a 15x10x1-in. baking pan. Toss with 1 tablespoon olive oil. Bake, uncovered, at 400° until tender and lightly browned, 25-30 minutes, stirring halfway. Remove from the oven and cool., Meanwhile, in a large bowl, toss bread cubes with 1 tablespoon olive oil. Transfer to a baking sheet. Bake at 400° until lightly browned, 12-14 minutes, stirring occasionally., Place the cooled zucchini, toasted bread, tomatoes, green pepper and red onion in a large bowl. In a small bowl, whisk together vinegar, garlic, seasonings and remaining oil. Drizzle over salad; toss gently to combine. Add the mozzarella and stir to combine. Serve immediately.

Prepare your own version of one of Tuscany's most famous dishes, panzanella. It's a good way to use up leftovers, as it's made with stale bread - simply toss with ripe tomatoes and an olive oil dressing

1kg ripe mixed tomatoes , halved if small, quartered if large
300g day-old sourdough or ciabatta, torn into large chunks
100ml extra virgin olive oil
50ml red wine vinegar
1 small shallot , finely chopped
50g tin anchovies , drained and roughly chopped
100g black olives , pitted
large handful of basil leaves, torn

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Put the tomatoes in a colander and sprinkle over 1 tsp sea salt, then leave to sit for 15 mins.
  • Spread the chunks of bread out on a baking tray and toss with 1 tbsp of the oil. Bake for 10-15 mins, or until lightly toasted.
  • In a bowl, whisk together the remaining oil, the vinegar and shallot. Season to taste. Toss the anchovies with the tomatoes, croutons, olive oil dressing, the olives and half the basil in a large bowl. Spoon the panzanella onto a serving plate and top with the remaining basil.

1 cup reduced-sodium chicken broth or 1 cup vegetable broth
1/2 teaspoon kosher salt

9 tablespoons extra-virgin olive oil
1/2 pound crusty Italian country bread, cut into 1/2-inch-thick slices
3 garlic cloves, 1 halved and 2 minced
1 pound cherry tomatoes (3 cups), halved
1/2 cup thinly sliced red onion
1 cup bocconcini (mini mozzarella balls), halved
10 to 15 basil leaves, thinly sliced, plus whole leaves for garnish
2 tablespoons red-wine vinegar
Coarse salt and freshly ground pepper

Steps:

  • Preheat grill to medium-high. (Alternatively, heat a grill pan over mediumhigh heat until hot.) Using 3 tablespoons of oil, brush bread slices on both sides.
  • Grill bread slices, turning once, until toasted on both sides, about 5 minutes total. Rub both sides with halved garlic. Tear into bite-size pieces.
  • Toss bread, tomatoes, onion, bocconcini, and sliced basil in a serving bowl.
  • Whisk together vinegar and minced garlic in a small bowl. Whisking constantly, pour in remaining 6 tablespoons oil in a slow, steady stream, and whisk until emulsified. Pour over salad. Season with salt and pepper. Let stand at room temperature, tossing occasionally, 1 hour. Garnish with whole basil leaves.

1 cup water
1/4 cup sun-dried tomatoes (not packed in oil)
2 small zucchini, trimmed and diced fine
1/2 small red onion, peeled and diced fine
1/4 cup chopped fresh basil leaves
1 large clove garlic, peeled and minced
1 teaspoon grated lemon zest
2 tablespoons fresh lemon juice
2 teaspoons olive oil
1 teaspoon salt
Freshly ground pepper to taste
1/4 cup chopped Italian parsley

Steps:

  • Place the bread in a medium bowl and pour the water over it. Squeeze the bread into the water until saturated. Let stand for 15 minutes.
  • Meanwhile, place the sun-dried tomatoes in a small saucepan and cover with water. Bring to a boil over medium heat. Reduce heat and simmer until the tomatoes are soft, about 5 minutes. Drain and finely chop.
  • Squeeze the excess water from the bread and coarsely chop. Place in a bowl and toss with the tomatoes, zucchini, onion, basil and garlic. Add the lemon zest, lemon juice, olive oil, salt and pepper. Toss in the parsley. Serve as a salad or stuffing for chicken or trout.

2 lbs tomatoes
1/2 cup extra-virgin olive oil (plus more for drizzling)
5 tablespoons red wine vinegar
4 garlic cloves, minced
fine sea salt & freshly ground black pepper, to taste
1 loaf stale bread, cut into 1 inch thick slices (such as country or ciabatta)
1 red bell pepper
1 yellow bell pepper
2 fresh fresno chilies, diced
1/2 cup black olives, pitted (such as Kalamata)
1/4 cup capers, soaked rinsed coarsely chopped
1 large bunch basil, leaves trimmed, stems discarded

Steps:

  • Bring a large pot of water to a boil. Using the tip of a paring knife, make two 1 inch cuts on the bottom of each tomato, forming an X. Add tomatoes to water and cook just until skin begins to peel back at each X, 30-40 seconds. Using a slotted spoon, transfer tomatoes to a large bowl of ice water; let cool.
  • Peel and core tomatoes; place in another large bowl. (Alternatively, use a vegetable peeler with a serrated blade to peel tomatoes.) Using your hands, crush tomatoes, breaking up any large pieces and releasing juices.
  • Stir in 1/2 cup oil, 5 Tbsp vinegar, and garlic. Season to taste with salt, pepper, and more vinegar, if desired.
  • Add bread to tomato mixture in bowl. Toss until bread is well coated and starts to absorb liquid. Let sit for 30 minutes.
  • Meanwhile, char bell peppers and chilies directly over a gas flame or in the broiler until blackened all over. Transfer to a resealable plastic bag. Close bag and let sit for 15 minutes. Remove peppers and chiles; peel, core, seed, and cut into 1/4 inch strips.
  • Add peppers, chiles, olives, and capers to bread mixture. Massage with your hands until all ingredients are thoroughly combined and bread is broken down (it will break down differently depending on what kind is used). Add basil and season with salt and pepper.
  • Cover salad and let stand at room temperature for 1 hour. Drizzle with oil just before serving.
