3/4 ounce mango passion liqueur (recommended: Marie Brizard)
3/4 ounce banana liqueur
2 ounces mango concentrate (recommended: Island Oasis)
2 ounces banana concentrate (recommended: Island Oasis)
12 ounces ice
Orange slice
Maraschino cherry

Steps:

  • Put first 6 ingredients into blender and blend until reaching a uniform consistency. Pour into glass and garnish with orange slice and a cherry.

2 tablespoons lemon juice
1 tablespoon lime juice
2 teaspoons minced fresh cilantro or parsley
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/8 teaspoon pepper
1 medium cucumber, diced
1 medium mango, peeled and diced
1 medium tomato, chopped
1/4 cup finely chopped red onion
CHICKEN:
4 boneless skinless chicken breast halves (6 ounces each)
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • For dressing, in a small bowl, mix the first six ingredients. Place cucumber, mango, tomato and onion in a large bowl; toss with dressing., Brush chicken with oil; sprinkle with seasonings. Grill chicken, covered, over medium heat or broil 4 in. from heat 4-5 minutes on each side or until a thermometer reads 165°. Serve with salsa.

1/2 cup chopped tomato
2 tablespoons minced fresh cilantro
1 tablespoon chopped jalapeno pepper

1-1/2 teaspoons chopped celery
1-1/2 teaspoons lime juice
1/4 teaspoon grated lime zest
2 boneless skinless chicken breast halves (6 ounces each)
1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon canola oil

Steps:

  • For salsa, in a small bowl, combine the mango, tomato, cilantro, jalapeno, onion, celery, lime juice and zest. Cover and refrigerate for 2-3 hours. , Sprinkle chicken with salt and pepper. 8 boneless skinless chicken thighs or 4 boneless skinless chicken breasts
4 garlic cloves, minced
2 tablespoons freshly grated ginger
1/4 cup tamari soy sauce or 1/4 cup soy sauce
1/4 cup freshly squeezed lime juice
2 mangoes, peeled, pitted, and cut into 1/4 inch cubes
3 tablespoons freshly squeezed lime juice
1 -2 jalapeno chile, seeds and membranes removed, minced
3 green onions, finely sliced
2/3 cup lightly packed fresh cilantro leaves, stems discarded, coarsely chopped

Steps:

  • Rinse the chicken thoroughly under cold running water.
  • Pat dry with a paper towel.
  • In an oven-proof baking dish combine the remaining ingredients.
  • Add the chicken and turn several times to mix the ingredients.
  • Cover with aluminum foil and marinate for 2 to 4 hours in refrigerator.
  • Combine all the salsa ingredients in a bowl and mix thoroughly with a fork.
  • Reserve.
  • Preheat oven to 375 degrees F.
  • Transfer covered baking dish to oven and bake for approximately 20 minutes, or until chicken is cooked throughout.
  • To serve, spoon a generous serving of salsa onto plate and top with 2 thighs (or 1 breast).
  • Enjoy!

6 boneless, skinless chicken breasts
4 cloves garlic, minced
1 (3 inch) piece of fresh ginger, peeled & grated
1/4 cup soy sauce
1/4 cup fresh squeezed lime juice (2 - 3 limes)
2 Tablespoons sesame oil
1 recipe for Mango Salsa

Steps:

  • In a gallon size freezer type bag, combine chicken, garlic, ginger, soy sauce, lime juice & sesame oil. Marinate in refrigerator for 4 hours to overnight. While chicken is marinating, create Mango Salsa and refrigerate until ready to use. Grill or broil for 5 minutes each side or until cooked through. If baking, bake at 350*F for 30 minutes, flipping halfway through, or until done. When finished cooking, plate and top with a generous amount of Mango Salsa. Devour!

1/2 cup HEINZ Tomato Ketchup, divided
1/3 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 tsp. smoked paprika
1 cup chopped mangos
1 cup chopped red peppers
2 green onions, chopped
1 Tbsp. finely chopped fresh cilantro
1 clove garlic, minced
2 Tbsp. fresh lime juice
2 tsp. olive oil
1 tsp. hot pepper sauce

Steps:

  • Place 1 chicken breast between 2 sheets of plastic wrap; pound to even thickness. Place in shallow dish. Repeat with remaining chicken breasts. Reserve 2 Tbsp. ketchup. Mix remaining ketchup with sour cream and paprika until blended; pour over chicken. Turn to evenly coat both sides of chicken with ketchup mixture.
  • Refrigerate 30 min. to marinate. Meanwhile, combine remaining ingredients in medium bowl; stir in reserved ketchup.
  • Heat greased grill to medium-high heat. Remove chicken from marinade; discard marinade. Grill chicken 5 to 6 min. on each side or until done.
  • Serve chicken topped with mango mixture.

1 fresh, ripe mango
½ red onion, finely diced
1 bunch cilantro, finely chopped
½ green bell pepper, minced
1 fresh red chile pepper, seeded and chopped
4 skinless, boneless chicken breasts
1 egg
¼ cup milk
1 cup dried bread crumbs
¼ cup olive oil
1 sprig fresh cilantro, for garnish

Steps:

  • TO MAKE SALSA: In a small bowl, combine the mango, onion, cilantro, green bell pepper and red chile pepper. Put aside until serving time.
  • Lightly pound the chicken breasts with a mallet to flatten. Beat the egg and milk together. Then coat them in the egg/milk mixture then the breadcrumbs. Chill for 1/2 hour.
  • Saute the chicken in olive oil until cooked through and juices run clear. Drain and serve with the mango salsa. Garnish with cilantro leaves.
