TRADITIONAL MANDARIN FRIED RICE



Traditional Mandarin Fried Rice image

It is recommended to use day-old rice so that the drier rice can soak up the flavors.

Canola oil
3 eggs
2 tablespoons minced garlic
2 tablespoons minced ginger
1 bunch chopped scallions, green and white separated
1 lapchang, diced (Chinese sausage), can substitute with 4 strips of cooked bacon
8 cups cooked, day-old long grain rice
3 tablespoons thin soy sauce
1/2 teaspoon white pepper
Salt to taste

Steps:

  • In a wok, add 2 tablespoons of oil and quickly soft-scramble the eggs. Remove the eggs. In the same wok, coat with oil and stir-fry garlic and ginger. Add white scallions and lapchang. Add rice and mix thoroughly. Add soy sauce, white pepper and scrambled eggs. Check for seasoning. Serve immediately.

1 ½ cups basmati rice
1 (14 ounce) can coconut milk
1 ¼ (14 ounce) cans chicken stock
½ teaspoon ground cumin
½ teaspoon ground coriander
1 pinch crushed red pepper flakes
1 teaspoon salt
¼ teaspoon ground turmeric
1 bay leaf
½ cup raisins
¾ cup cashew halves

Steps:

  • Heat oil in a large pot over medium-high heat. Stir in rice, and cook for 2 minutes. Pour in the coconut milk, chicken stock, cumin, coriander, red pepper flakes, salt, turmeric, bay leaf, raisins, and cashew halves. Bring to a boil, then cover, and reduce heat to low. Cook until rice is tender, about 20 minutes.

TURMERIC RICE

2 teaspoons coconut oil
1/2 cup finely diced onions
1 cup short-grain brown rice
1/4 cup golden raisins
1 teaspoon grated fresh turmeric
2 cloves garlic, grated
2 1/2 cups vegetable stock or water
Salt and pepper

Steps:

  • Heat a medium saucepan to medium heat. Once heated, add the oil and allow to heat up. Once the oil is heated, add the onions and saute until translucent, about 4 minutes. Add the rice, raisins, turmeric and garlic. Toss to coat. Saute gently until you smell a nutty aroma, about 2 minutes, and then add the stock. Bring to a boil, cover and reduce the heat to low. Cook until the rice is tender, about 45 minutes. Remove from the heat and allow to steam for 5 minutes prior to removing the lid. Season with salt and pepper, and fluff with a fork before serving.

1/4 cup chopped onion
1/2 teaspoon chopped garlic
1 cup converted rice
1/2 teaspoon turmeric
3 sprigs parsley
2 sprigs fresh thyme or 1/4 teaspoon dried
4 drops Tabasco sauce
1 bay leaf
1 1/2 cups water
1/2 teaspoon salt
Freshly ground black pepper to taste

Steps:

  • Heat 1 tablespoon of the butter in a saucepan and add the onion and garlic. Cook, stirring, until the onion is wilted. Add the rice, turmeric, parsley, thyme, Tabasco, bay leaf, water, salt and pepper. Bring to a boil, stirring. Cover and simmer 17 minutes.
  • Discard the parsley and thyme sprigs and bay leaf. Add the remaining butter and toss the rice with a fork.

1/2 cup uncooked rice
1 cup boiling water
1 teaspoon salt
1/4 cup pimentos
2 tablespoons soy sauce
1 lb cubed chicken or 1 lb cubed turkey
oil
1 1/2 cups chopped celery
1 1/2 cups chopped onions
1 (10 3/4 ounce) can cream of mushroom soup
1/2 cup chopped green pepper

Steps:

  • Sprinkle rice in bottom of oiled 2 quart casserole.
  • Add boiling water and salt. Set aside.
  • Slowly brown meat in 2 tablespoons cooking oil.
  • Saute chopped vegetables in oil.
  • Add all to rice mixture.
  • Add soup and soy sauce and blend.
  • Cover and bake 1 hour and 15 minutes at 350 degrees.

1 cup converted rice
1/3 cup raisins
1 teaspoon turmeric

4 drop Tabasco sauce
1 bay leaf
1 1/2 cups water
Salt and ground pepper to taste

Steps:

  • Melt 1 tablespoon of the butter in a saucepan and add the onion and garlic. Cook, stirring, until wilted. Add the rice, raisins, turmeric, thyme, Tabasco, bay leaf, water, salt and pepper. Bring to a boil, stirring. Cover the pot tightly and simmer for 17 minutes.
  • Discard the thyme sprigs and bay leaf. Distribute the remaining butter through the rice. Keep the rice covered in a warm place until it is served.
