MANGO PINEAPPLE POPSICLES



Mango Pineapple Popsicles image

These mango pineapple popsicles are healthy, refreshing, and super fun to make. It just takes some blending and patience while the popsicles freeze!

4 cups frozen mango chunks
2 cups frozen pineapple chunks
1 cup canned unsweetened coconut milk
1 ⅓ cups mango juice from concentrate ((see note))
1 tablespoon honey, plus more to taste ((see note))

Steps:

  • Combine all ingredients in a blender. Blend until smooth puree forms. Add more liquid if needed.
  • Fill popsicle molds with the mixture. I use a small spoon. Freeze overnight.
  • Run each popsicle under warm water for a few seconds to release.

  • Combine the defrosted or fresh mango chunks, banana, and frozen pineapple in the pitcher of a high-speed blender. If you’re using frozen mango that you have defrosted, there should be a little bit of liquid that you need to use too. If you are using fresh mango, you’ll need to use a blender that has a tamper to help push the ingredients into the blade (or add a few tablespoons of water or milk).
  • To remove the popsicles from the molds, run them under warm water for about 15 seconds. Then, carefully remove the popsicle from the mold.
