SKILLET BALSAMIC-GLAZED CHICKEN

- Whisk together the vinegar, chicken broth, sugar, garlic, and Italian seasoning in a small bowl. Put chicken in a shallow bowl and add marinade. Allow to marinate for 20 minutes, turning chicken halfway.
- Heat oil in a large skillet over medium-high heat. Remove chicken from marinade and place in skillet, saving marinade. Cook chicken for 4 minutes on each side. Add remaining marinade and cook until chicken is no longer pink in the center and the juices run clear, and sauce has started to thicken and coat chicken, 4 to 5 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Heat 2 tablespoons oil in a large skillet over medium heat. Add chicken and season with half of salt, pepper, and thyme. Cook for 5 minutes then flip chicken over and sprinkle with remaining salt, pepper, and thyme. Cook an additional 5 minutes or until browned and completely cooked through. Transfer chicken to a plate and cover to keep warm.
- Add remaining oil and then add onion and garlic to skillet and saute for 1 to 2 minutes until lightly browned. Whisk in the broth, vinegar, maple syrup, and Dijon mustard. Bring to a boil then reduce heat to medium-low. Cook at a low boil for about 3 or 4 minutes until sauce has reduced a bit and is syrupy. Remove skillet from the heat. Return cooked chicken to pan, nestling it into the sauce. Spoon some of the sauce over chicken and serve.

- In small bowl, whisk together balsamic vinegar, maple syrup, mustard, garlic, thyme, cayenne and salt and pepper. Pour sauce into a large plastic baggy and add chicken breasts. (I like to pound out the chicken breasts to ensure they each have the same thickness so they cook evenly) Marinate the chicken for at least 30 minutes or even overnight.
- Heat olive oil in a large skillet over medium-high heat until oil shimmers, about 3 to 4 minutes. Using tongs, remove chicken breasts from baggy (leaving the marinade inside) and arrange in the pan. Allow chicken to cook for about 7 to 8 minutes, without moving, so a nice golden-brown crust forms. Flip chicken over and cook the other side for another 7 to 8 minutes. You’ll know the chicken is done when the juices run clear and the inside temp has reached 160 to 165 degrees.
- Remove chicken and place on a cutting board to rest then pour the remaining marinade into the heated skillet. Scrape up any brown bits and allow marinade to bubble up and cook, stirring occasionally.

- In a large mixing bowl or glass measuring cup, combine all the ingredients for the marinade and whisk until well combined.
- Place the pieces of chicken in a baking dish that's just big enough to accommodate them and then pour the marinade right over them. Toss delicately with your fingers until all the pieces of chicken are well surrounded in the marinade, then cover with plastic wrap and place in the refrigerator to marinate for at least 6 hours, but preferably overnight.
- When you are ready to cook your meat, heat a few tablespoons of healthy cooking oil in a large, heavy skillet set over medium-high heat.
- Once the pan is hot enough, remove the chicken from the marinade and wipe off excess marinade; place the chicken nice looking side down in the pan and sear it until nice and golden brown, about 4-5 minutes.
