4 CB Chicken breasts (boneless, skinless)
8 - 12 slices Caribbean Passion streaky bacon
Salt and fresh ground pepper, to taste
½ tsp sweet or smoked paprika
½ tsp garlic powder
¼ tsp onion powder
¼ cup sugar free low carb maple syrup
2 tsp dijon mustard
Fresh cracked pepper, for topping, optional
Chopped fresh parsley, for garnish, optional

Steps:

  • Preheat oven to 425˚F.
  • Lightly grease a 9x13 baking dish with butter and set aside.
  • In a small mixing bowl combine salt, pepper, paprika, garlic powder, and onion powder.
  • Rub each chicken breast with prepared seasoning mix.
  • Wrap each chicken breast with bacon slices and transfer to prepared baking dish, seam- side down.
  • In a small mixing bowl whisk together maple syrup and dijon mustard; whisk until well combined.
  • Brush each chicken breast with maple syrup glaze.
  • Crack fresh ground pepper over each chicken breast.
  • Bake for 22 to 25 minutes at 425˚F, or until done, and brush/baste with the juices coupleof times during baking. Chicken is done when internal temperature reaches 165˚F. I suggest to start checking for doneness at around the 20-minute mark.
  • If the bacon is not fully caramelized after cooking, place the baking dish under the broiler for 2 minutes to finish it off.
  • Remove from oven and let stand 5 to 8 minutes.
  • Spoon juices over chicken and garnish with chopped parsley and serve.

4 boneless, skinless chicken breasts, patted dry
Salt and fresh ground pepper, to taste
1/2 teaspoon garlic powder
8 to 12 slices of bacon, this depends on how large the chicken breasts are, I used 2 to 2 1/2 slices of bacon for each.
1/4 cup maple syrup
2 teaspoons Dijon mustard
Chopped fresh parsley, for garnish, optional

Steps:

  • Preheat oven to 425˚F.
  • Season each chicken breast with salt, pepper, and garlic powder.
  • Wrap each chicken breast with bacon slices and place in a 9 x 13' baking dish, seam-side down.
  • In a small bowl whisk together maple syrup and Dijon mustard until well combined.
  • Using a pastry brush, brush each chicken breast with maple mustard glaze. Reserve some to baste while baking.
  • Bake for 40 to 45 minutes or until done, brushing with the glaze a couple of times during baking. Chicken is done when the internal temperature reaches 165˚F on an instant-read thermometer. Start checking for doneness at around 40 - 45 minutes.
  • To serve, spoon juices over chicken and garnish with parsley.

1/4 cup Grade B maple syrup
1 tablespoon Dijon mustard
1/4 teaspoon cracked black pepper
16 thick-cut slices double smoked bacon

Steps:

  • Preheat the oven to 400 degrees F. Whisk together the maple syrup, mustard and pepper in a small bowl. Lay the bacon on a baking sheet. Bake in the oven for 9 to 10 minutes. Remove the bacon and place on a baking rack over a separate baking sheet. Using a paper towel, blot and soak up any excess oil. Then, using a pastry brush, generously glaze the bacon with the syrup. Return the bacon to the oven for another 1 to 2 minutes, to desired crispness. Transfer to a platter and serve.

⅓ cup maple syrup

1 clove garlic, minced
Lemon wedges
Chopped fresh chives

Steps:

  • Cook the bacon until just opaque. Blot on paper towels. Sprinkle chicken evenly with salt and pepper. Wrap each chicken breast in bacon, securing strips in place with toothpicks. Set aside. Preheat the grill to medium-high.
  • Blend ketchup with maple syrup, mustard, lemon juice and garlic. Brush half the sauce all over chicken. Place chicken on grill and turn heat down to medium. Grill, turning and basting twice with remaining sauce until bacon is almost crisp, about 15 minutes or until chicken is cooked through.
  • Squeeze lemon wedges over chicken and sprinkle with chives. Remove toothpicks before serving.
