MAPLE WALNUT SHORTBREAD BARS

Maple Walnut Shortbread Bars image

Maple and walnut are a winning combination in these buttery bars that are a refreshing alternative to a chocolate dessert.

Provided by Food Network Kitchen

Categories     dessert

Time 11h35m

Yield sixteen 4 by 1-inch bars

Number Of Ingredients 10

2 sticks (16 tablespoons) unsalted butter, cut into chunks, at room temperature, plus more for pan
1/2 cup sugar
1 large egg yolk
2 tablespoons real maple syrup
1 teaspoon vanilla extract
1 vanilla bean, split and scraped, optional
1 3/4 cups all-purpose flour, plus more for working with dough
1/4 cup rice flour
1/4 teaspoon fine sea salt
1 1/2 cups coarsely chopped toasted walnuts

Steps:

  • Preheat the oven to 325 degrees F. Cut a piece of foil 8 by 16-inches. Butter the corners and sides of an 8-by-8-inch baking pan. Line the pan with the foil, leaving an overhang on two sides.
  • Beat the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment on medium-high speed until light and fluffy, about 5 minutes. Reduce the speed to medium and add the egg yolk, syrup, vanilla extract and vanilla bean seeds if using. Reduce the speed to low, add the flours and salt, all at once, and beat until just combined. Add the walnuts and continue to mix until fully combined.
  • Using your hands, drop the dough in pieces evenly into the prepared pan. Flour your hands lightly and press the dough together and into the corners of the pan. Put a piece of waxed paper on top of the dough and use something square and heavy-another pan, a pound of cold butter-to press the dough into the pan and make a smooth, even top. Chill until firm, about 30 minutes.
  • When it is firm, use a fork to score the dough all over. Bake until deep golden brown and starting to pull away from the sides of the pan, about 45 minutes. Cool completely on a rack, about 2 hours, then wrap with plastic wrap, and let sit at room temperature overnight.
  • Place a lightweight cutting board or a baking rack over the top of the pan. Flip and set on the counter. Gently pull the pan from the foil and the foil from the pan to lift off the pan. Gently peel the foil off the bar. Place another lightweight cutting board on top, and flip the bar right-side-up.
  • Using a sharp, serrated knife, slice the square in half. Then slice each half into 8 bars.

MAPLE OATMEAL NUT GRANOLA BARS

Maple Oatmeal Nut Granola Bars image

Making healthy snacks from home is fast, simple, and healthier than other options like store bought. These granola bars are a great way to ensure your snack times are filled with long lasting energy and nutrient rich ingredients! Making them at home allows you to add whatever ingredients you like most (types of seeds and nuts and dried fruits). It also lets you use fresh and real ingredients and natural sweeteners like honey, maple syrup, and coconut oil! You can make a whole bunch of granola bars by packing this mixture into a sheet pan and cutting it into whatever size you like! For a treat: add some chocolate chips or drizzle it on top of them!

Provided by Theprettyfeed

Categories     < 60 Mins

Time 40m

Yield 10 serving(s)

Number Of Ingredients 8

3 1/2 cups oats
2 1/2 tablespoons coconut oil
2 tablespoons brown sugar
1/4 cup honey
1/4 cup maple syrup
1 teaspoon vanilla extract
1 teaspoon cinnamon
2 cups mixed nuts, dried fruit and seeds (pecans, walnuts, pumpkin seeds, almonds, goji berries, sunflower seeds, cranberries, raisins, etc)

Steps:

  • On a sheet pan lined with parchment paper, toast the oats for 15 minutes on 350.
  • While the oats are baking, heat the coconut oil, cinnamon, vanilla, honey, maple syrup, and brown sugar in a saucepan until it comes to a boil and stir it until it's well mixed.
  • Place all the seeds and fruits, and toasted oats in a large bowl and pour the syrup mixture over it. Mix everything up until it's all evenly covered with the syrup.
  • Then pack it down (firmly) to desired thickness on a sheet pan covered with parchment paper (same one you used to toast the granola). Bake on 350 for 20 minutes Remove from the oven and cut desired size bars before it cools and hardens. Then place in the refrigerator for at least an hour to allow it to set properly!

MAPLE NUT BARS

MAPLE NUT BARS image

Yield 48 bars

Number Of Ingredients 9

12 oz. package semi-sweet chocolate chips
12 oz. package butterscotch chips (I'm pretty sure real Maple Bun Bars don't have butterscotch chips in them.)
2 cups creamy peanut butter (And they probably don't use peanut butter either.)
2 cups dry roasted peanuts
1 cup butter
1/2 cup evaporated milk
1 small package cook and serve vanilla pudding mix (not instant)
2 lbs. powdered sugar (approximately 7-1/2 cups)
2 teaspoons maple extract

Steps:

  • Generously butter a 15 x 10-inch jelly roll pan. In a large saucepan over low heat, melt together the chocolate and butterscotch chips. Remove from heat and stir in peanut butter, mixing well until smooth. Spread a generous half of the mixture in the buttered pan. (As you can see in my first photo, the bottom chocolate layer is actually too thin - the bars are easier to get out of the pan if the bottom layer is a little thicker.) Chill in the refrigerator. Stir peanuts into the remaining chocolate mixture. Set aside. In a large saucepan over low heat, melt butter. Slowly add the evaporated milk. Stir in the pudding mix. Cook, stirring constantly until mixture is slightly thickened. Do not boil. Remove from heat. Stir in powdered sugar and maple extract. (It's easier to use a wooden spoon at this point.) Cool slightly. Carefully spread the maple mixture over the chilled chocolate layer in the pan. Chill in the refrigerator for 30 minutes. Drop the reserved chocolate and peanut mixture by spoonfuls over the chilled maple layer; spread to cover. Chill the bars until firm. Store tightly covered in the refrigerator. Makes approximately 48 bars.
