MAPLE PUMPKIN LOAF



Maple Pumpkin Loaf image

This loaf is a slightly sweet, maple flavored loaf filled with chewy pieces of cranberry. Recipe from Company's Comming.

2/3 cup orange juice
2/3 cup cranberries
2 1/2 cups flour
2 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/3 cup butter or 1/3 cup margarine
1/3 cup packed brown sugar
2 large eggs
14 ounces pumpkin puree (No spices)
1 cup maple syrup
1/2 cup maple syrup
3 tablespoons chopped pecans (Toasted)

Steps:

  • Heat and stir orange juice and cranberries in small saucepan on medium heat until just boiling. Remove from heat. Let stand for about 30 minuntes until cooled to room temperature.
  • Combine next 4 ingredients in large bowl. Make a well in centre.
  • Beat butter and brown sugar in medium bowl until light and creamy. Add eggs, 1 at a time, beating well after each addition.
  • Add pumpkin and first amount of maple syrup. Beat until smooth. Add to well. Add orange juice mixture. Stir utnil just moistened. Line bottom and sides of lightly greased 9x5x3 inch loaf pan with parchment paper(not waxed), leaving 1 1/2 inch overhang on each side. Spoon batter into pan. Spread evenly. Bake in 350 degree oven for 70 -75 minutes until wooden toothpick inserted comes out clean. Remove pan to wire rack. Run knife around loaf to loosen. Do not remove from pan.
  • Boil second amount of maple syrup in small heavy saucepan on medium for 3-5 min until lightly reduced and thickened. Carefully pour hot syrup evenly over loaf. Immediately sprinkle with toasted pecans. Let stand in pan on wire rack for 30 minute Lift loaf from pan using parchment paper edges and handles. Set on wire rack to cool completely, disgarding parchment paper. Cuts into 16 pieces.

Pumpkin Bread enhanced with real maple syrup and plump golden raisins. This recipe makes a very large loaf that rises well and is a moist bread. I usually double the recipe. Delicious served presliced and spread with cinnamon cream cheese spread. Great for a buffet.

3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 teaspoons salt
1 teaspoon cinnamon
1/2 teaspoon allspice
2 eggs
1 (16 ounce) can pumpkin
1 cup light brown sugar, firmly packed
1/2 cup maple syrup
1/2 cup vegetable oil
1/2 cup golden raisin
1/2 cup pecans, chopped

Steps:

  • Preheat oven to 325°F.
  • Grease a 9x5x3-inch loaf pan. Dust with flour. Set aside.
  • Sift flour, baking powder, baking soda, salt,.
  • cinnamon and allspice in large bowl. Mix with whisk.
  • Beat eggs with pumpkin, brown sugar, maple syrup, and oil in a medium bowl.
  • Stir egg mixture into flour mixture until just moistened. Gently fold in raisins and nuts.
  • Spoon batter evenly into prepared pan.
  • Bake 1 hour and 15 minutes,or until toothpick test indicates done.
  • Author's note: my oven takes 1 hour and 30 minutes for this bread at 325°F using a stoneware bread pan.
  • Cool in pan for 10 minutes and turn out on rack.

Pumpkin pie is infused with a delicious maple flavor and topped with a leaf-lattice piecrust. You will need a 2-inch leaf cutter for this recipe. The leaf crust is very delicate, so take extra care when placing it on top of the pie.

Number Of Ingredients 12

Pate Brisee
3 large eggs plus 1 large egg yolk
3/4 cup plus 1 tablespoon heavy cream
1/2 cup packed dark-brown sugar
1 1/2 tablespoons all-purpose flour, plus more for dusting
1 teaspoon coarse salt
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1 can (15 ounces) pumpkin puree
1/2 cup pure maple syrup
1 teaspoon pure vanilla extract

Steps:

  • On a lightly floured work surface, roll 1 disk of dough to 1/8 inch thick. Fit into a 9-inch pie plate. Trim edges flush with rim. Refrigerate for 1 hour.
  • Preheat oven to 375 degrees. Cut a 13-inch round of parchment, and place on top of chilled piecrust. Fill with pie weights or dried beans. Freeze for 10 minutes.
  • Bake piecrust for 10 minutes. Remove weights and parchment, and continue to bake until barely golden brown, about 5 minutes. Let cool on a wire rack.
  • On a piece of lightly floured parchment, roll out remaining disk of dough to 1/8 inch thick. Transfer parchment with dough to an inverted baking sheet (this will make it easier to slide it onto pie). Top with an inverted 9-inch pie plate or a cake ring, and gently press to make a light indentation (this will be your guide for cutting the leaf lattice to fit the pie). Using a 2-inch leaf cutter, cut a pattern out of the round, spacing leaves 1 inch apart and leaving a 1/2-inch border around edge. Transfer leaves to a parchment-lined baking sheet. Using a paring knife or a pizza cutter, cut out the round, leaving an additional 1/2 inch of dough beyond the marked circle. Place in refrigerator while you etch the leaves.
  • Using a paring knife, etch veins in each leaf. To make egg wash, whisk together egg yolk and 1 tablespoon cream. in a small bowl. Remove leaf lattice from refrigerator, and lightly brush with egg wash. Arrange leaves around edge of lattice, making sure they do not extend over edge or they will brown too quickly. Refrigerate for 20 minutes.
  • Bake lattice on inverted baking sheet until golden, 20 to 25 minutes. The thin spaces between the leaves will brown before the rest of the crust; tent with foil if crust browns too quickly. Let cool.
  • Reduce oven to 350 degrees. Combine sugar, flour, salt, and spices. In a large bowl, whisk together pumpkin, maple syrup, vanilla, eggs, and remaining 3/4 cup cream. Whisk in flour mixture.
  • Place partially baked piecrust on a rimmed baking sheet. Pour filling into crust. Bake until slightly puffed and almost set (it should jiggle slightly when shaken gently), 35 to 40 minutes. Remove pie from oven. Using one or two large spatulas, place leaf lattice onto pie. Center it carefully; once lattice has been placed, it cannot be adjusted without smearing the filling. Bake until all but the center of the pie is set, 7 to 10 minutes. Cool completely on a wire rack.

1/2 cup butter, softened
1/2 cup sugar
2 large eggs, room temperature
1/2 cup canned pumpkin
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/3 cup buttermilk
1/2 teaspoon ground cinnamon
1 teaspoon molasses
COATING:
5 tablespoons butter, melted
1 tablespoon maple syrup
1/4 cup sugar
1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in pumpkin. In another bowl, whisk flour, baking powder, salt and baking soda; add to creamed mixture alternately with buttermilk, beating well after each addition. Batter will be thick. , Remove 1/2 cup batter to a small bowl; stir in cinnamon and molasses until blended. Pour half of the remaining plain batter into a greased 8x4-in. loaf pan; dot with half of the cinnamon batter. Repeat layers. Cut through batter with a knife to swirl., Bake until a toothpick inserted in center comes out clean, 45-50 minutes. Cool in pan 20 minutes before removing to a wire rack. For coating, in a small bowl combine melted butter and maple syrup. In another shallow bowl, combine sugar, brown sugar and cinnamon. Brush loaf with butter mixture, allowing butter to soak into bread; gently roll loaf in sugar mixture, pressing lightly to coat.
