- Take a large bowl, whisk cream cheese and sugar till they form a creamy mixture. Ensure that no lumps are formed. Mix the molten chocolate and maple syrup, separately, in a bowl. Then mix it with the cream cheese and sugar mixture. Beat the entire mixture till it turns into a smooth paste.
- Refrigerate the smooth mixture till it attains a dough-like texture. Scoop the batter into bite-size balls and roll it with crushed walnuts. Serve immediately or you can also store it in an airtight jar for future consumption.

- In a small saucepan, combined the butter and sweetened condensed milk stirring constantly over low heat until butter is melted.
- Powdered sugar Instruction: Recipe calls for 7 cups of powdered sugar. If you want eveb creamier filling, use less powdered sugar, starting with using 5 cups and continue adding more as needed in next step.
- In a large bowl add the powdered sugar and add the sweetened condensed/butter mixture and beat until smooth. Stir in the walnuts, maple flavoring and vanilla.
- Scoop using a medium 1 1/2 heaping tablespoons, scoop and roll it into a smoother ball. Can roll them nicer once they are refrigerated in next step. Place on waxed paper lined baking sheets.
- Refrigerate until firm in sealed container - about 1 hour if using 7 cups of powdered sugar. If you opted for the creamier filling, using less powdered sugar, starting with using 5 cups and continue adding more as needed. Let balls firm up 3 hours or overnight is always a good option as well, if you like doing your truffles in stages. When dipping your balls in the chocolate they need to be firm enough to dip.
- In a microwave, melt the chocolate in 45 second increments and stir and repeat in microwave until melted, stirring well to keep tempering the chocolate nicely with each increment. Add oil and mix to thin the chocolate for nicer dipping.
- Dip balls into chocolate and place on waxed paper. Let stand until set. Store in an airtight container in the refrigerator.
MAPLE WALNUT TRUFFLES

- Mix butter, maple syrup, and powdered sugar with a hand mixer. Add both extracts and beat until creamy. Stir in walnuts. Chill for 30 minutes.
- Once chilled, scoop 1 tablespoon sized balls of dough and place on a wax paper lined cookie sheet. Chill again until just ready to dip (at least 10 minutes).
- Melt your candy in a microwave safe bowl according to package directions. Dip each truffle in the bowl of chocolate.
- Do not roll it around, use a spoon to spoon chocolate over the top. Lift onto a fork carefully and tap to remove excess chocolate. Place on a wax-paper lined cookie sheet. I find it best to use a toothpick to help the truffle slide off the fork without disturbing too much of the coating.
- Note: these truffles soften quickly. If you find them getting to soft, re-chill them and only remove a few at a time to dip.
- Chill dipped truffles for just a few minutes, until coating is semi-hard. Meanwhile transfer the remaining chocolate to a squeeze bottle (or a plastic bag with the tip cut off) and pipe swirls or swipes of chocolate over the top for decoration.

- Prepare a baking sheet by lining it with parchment or wax paper.
- Using a large standing mixer, cream the butter and the sugar together until light and fluffy.
- Add the condensed milk and maple syrup and beat until well-mixed, then add the flour and salt and beat on low until combined. Stir in bacon.
- Using a small scoop or a teaspoon, scoop up small round balls of the dough and place them on the prepared baking sheet. Refrigerate for one hour. Remove from fridge and roll into balls. Place back in fridge for another hour.
- Melt chocolate in double boiler, in the microwave or, as I prefer, in a Crock Pot on low. Dip balls one at a time and coat evenly. [I tried dumping a bunch in the Crock Pot at once but they get soft fast. Alternatively, you could put the balls in the freezer for a few minutes before dipping first so they get good and cold.] Remove them with a fork and tap against the side of the pot to remove any excess chocolate. Place back on baking sheet and top with a piece of candied bacon, if desired.
- Put truffles back in fridge until firm. Store in fridge. Enjoy!
