CRUST:
6 egg whites
½ cup unflavored egg white powder (do not use whey, it is bad for weight loss)
2 teaspoons Italian Spices (if desired)
Primal Kitchen Avocado Oil Spray
OPTIONAL TOPPINGS:
Primal Kitchen Pizza Sauce
Diced Ham
Sliced Mushrooms
Mozzarella Cheese/Goat Cheese/Feta (omit for max weight loss)
Olives

Steps:

  • Preheat oven to 400 degrees F. Place the egg whites in the bowl of a stand mixer and whip the whites until very stiff, about 5 minutes. Turn the mixer to low and add the protein powder to the whites. Mix until combined. Add the spices if using.
  • Spray a lasagna pan or 15 inch cast iron skillet with Primal Kitchen avocado oil spray and spoon the mixture into it. Bake for 10-15 minutes or until golden brown.
  • Remove from oven and top with your favorite toppings (eliminate cheese for protein sparing days). Return to oven and bake another 5-10 minutes or until crust is baked through and cheese is melted and starts to brown.

1¼ cup blanched almond flour (or ½ cup coconut flour)
1/4 cup protein powder (unflavored, optional)
4 TBS Psyllium husk powder
½ tsp salt
2 TBS grated parmesan
1 TBS Italian spices
2 tsp baking powder
2 eggs (4 eggs for coconut flour)
1 cup boiling water
butter or coconut oil (for brushing)
(Toppings of your choice)

Steps:

  • Preheat oven to 375 degrees. Combine all dry ingredients and mix until blended. Add eggs and mix until well combined. Add boiling water and mix until dough thickens and start to stick to beaters. Place ball on greased baking sheet. Spray a piece of parchment with oil and place on to of the dough to help spread without sticking. Use a rolling pin or your hands to spread the dough into a 16 inch round. Dough will raise 2-3 times its size so make the thickness one third of what you want the final pizza to be (I like a ¼ inch thick crust so I start with about ⅛ inch or less thickness).
  • Place in oven and Bake for 25 minutes. Remove crust from oven and brush with butter of coconut oil and return to oven. Broil for 3-8 minutes or until crust is crisp (Be careful, watch closely during this step to make sure it doesn't burn, just crisps up). I start the broil with it flipped over to crisp the bottom and then flip over and broil the top. Add topping and broil for another 5-10 minutes until cheese is melted and starts to brown. Makes 6 servings.

1 1/2 cups warm water, 100 to 110 degrees F, plus extra as needed
One 1/4-ounce packet active dry yeast
4 cups all-purpose flour, plus extra as needed
1 1/2 teaspoons fine sea salt
Olive oil, for drizzling

Steps:

  • Put the water in a small bowl. Add the yeast and stir until dissolved.
  • In a large bowl, whisk the flour and salt together. Add the yeast mixture and stir until a soft dough forms. If the dough is too dry, add a little extra water, 1 tablespoon at a time. If the dough is too sticky, add extra flour, 1 tablespoon at a time. Transfer the dough to a floured work surface. With floured hands, knead the dough until it becomes smooth and elastic, about 10 to 12 minutes. Drizzle the inside of a clean bowl with olive oil. Put the dough in the bowl and cover loosely with plastic wrap or a damp kitchen towel. Set the bowl in a warm, draft-free place, until the dough has doubled in size, about 2 hours.
  • Using a fist, deflate the dough in the center and cut it into 3 equal-sized pieces. Form the dough pieces into 3 balls and put into 3 oiled bowls. Cover each bowl loosely with plastic wrap or a damp kitchen towel and let rest for 1 hour. Remove the dough and wrap in plastic. Refrigerate for up to 1 day.

2 ½ cups warm water
1 teaspoon sugar
2 teaspoons active dry yeast
7 cups all-purpose flour, plus more for dusting
6 tablespoons extra virgin olive oil, plus more for greasing

¼ cup semolina flour
28 oz canned whole tomatoes
1 tablespoon kosher salt
tomato sauce
fresh mozzarella cheese, torn into small pieces
fresh basil leaf
extra virgin olive oil

Steps:

  • "Bloom" the yeast by sprinkling the sugar and yeast in the warm water. Let sit for 10 minutes, until bubbles form on the surface.
  • In a large bowl, combine the flour and salt. Make a well in the middle and add the olive oil and bloomed yeast mixture. Using a spoon, mix until a shaggy dough begins to form.
  • Once the flour is mostly hydrated, turn the dough out onto a clean work surface and knead for 10-15 minutes. The dough should be soft, smooth, and bouncy. Form the dough into a taut round.
  • Grease a clean, large bowl with olive oil and place the dough inside, turning to coat with the oil. Cover with plastic wrap. Let rise for at least an hour, or up to 24 hours.
  • Punch down the dough and turn it out onto a lightly floured work surface. Knead for another minute or so, then cut into 4 equal portions and shape into rounds.
  • Lightly flour the dough, then cover with a kitchen towel and let rest for another 30 minutes to an hour while you prepare the sauce and any other ingredients.
  • Preheat the oven as high as your oven will allow, between 450-500˚F (230-260˚C). Place a pizza stone, heavy baking sheet (turn upside down so the surface is flat), or cast iron skillet in the oven.
  • Meanwhile, make the tomato sauce: Add the salt to the can of tomatoes and puree with an immersion blender, or transfer to a blender or food processor, and puree until smooth.
  • Once the dough has rested, take a portion and start by poking the surface with your fingertips, until bubbles form and do not deflate.
  • Then, stretch and press the dough into a thin round. Make it thinner than you think it should be, as it will slightly shrink and puff up during baking.
  • Sprinkle semolina onto an upside down baking sheet and place the stretched crust onto it. Add the sauce and ingredients of your choice.
  • Slide the pizza onto the preheated pizza stone or pan. Bake for 15 minutes, or until the crust and cheese are golden brown.
  • Add any garnish of your preference.
