GRILLED CHICKEN BREAST WITH MARINATED CHERRY TOMATO SALAD

Grilled Chicken Breast with Marinated Cherry Tomato Salad image

"This is a great summertime dish as tomatoes are at their peak during the summer," says Marc. "Serve with some crusty bread to soak up any leftover cherry tomatoes."

Provided by Marc Forgione

Categories     main-dish

Time 5h10m

Yield 2 servings

Number Of Ingredients 15

2 teaspoons coriander seeds
2 cups heirloom cherry tomatoes
1/4 red onion, thinly sliced
5 tablespoons extra-virgin olive oil
2 tablespoons fresh ginger juice
2 tablespoons fresh basil leaves, thinly sliced
1 tablespoon fresh mint leaves, thinly sliced
1 tablespoon sherry vinegar
1 clove garlic, minced
Kosher salt and freshly ground black pepper
3 tablespoons extra virgin olive oil
5 fresh basil leaves, torn
1 clove garlic, sliced
2 boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper

Steps:

  • For the marinated cherry tomatoes: Toast the coriander seeds in a small skillet over medium heat until fragrant, 3 to 5 minutes. Transfer to a mortar and pestle and crack. Allow to cool.
  • Bring a medium pot of water to a boil. Make a small "x" incision at the bottom of each tomato. Blanch the cherry tomatoes for 1 minute and immediately transfer them to a large bowl filled with ice water (an ice bath). Allow the tomatoes to cool, and then peel the tomatoes and discard the skins.
  • In a medium bowl, mix together the coriander, peeled tomatoes, onions, olive oil, ginger juice, basil, mint, vinegar, and garlic. Season with salt and pepper, cover, and allow the tomato mixture to sit at room temperature for 4 hours.
  • For the chicken: Combine the olive oil, basil and garlic in a large bowl. Add the chicken breasts, making sure to coat all sides with the marinade. Cover and let marinate for at least 2 hours in the refrigerator.
  • Preheat the grill to medium heat. Remove the chicken from the marinade and pat dry with a towel. Sprinkle with salt and pepper. Add chicken breasts and grill for around 5 minutes on each side, depending on how hot your grill is, or until cooked through.
  • Serve the chicken with some of the marinated tomatoes on top.

EASY GRILLED CHICKEN WITH CITRUS MARINADE

Easy Grilled Chicken With Citrus Marinade image

This easy grilled chicken recipe is a fast track to dinner. This grilled chicken breast is never dry, thanks to a marinade that's sourced from the pantry.

Provided by Kendra Vaculin

Yield 4 servings

Number Of Ingredients 10

2 large shallots, finely chopped
4 garlic cloves, finely grated
⅔ cup extra-virgin olive oil, plus more for grill
¼ cup sherry vinegar or red wine vinegar
3 Tbsp. fresh lemon juice
2 Tbsp. fresh lime juice
1 Tbsp. Diamond Crystal or 1¾ tsp. Morton kosher salt
1 tsp. sugar
½ tsp. freshly ground black pepper
4 skinless, boneless chicken breasts (about 1½ lb.)

Steps:

  • Whisk 2 large shallots, finely chopped, 4 garlic cloves, finely grated, ⅔ cup extra-virgin olive oil, ¼ cup sherry vinegar or red wine vinegar, 3 Tbsp. fresh lemon juice, 2 Tbsp. fresh lime juice, 1 Tbsp. Diamond Crystal or 1¾ tsp. Morton kosher salt, 1 tsp. sugar, and ½ tsp. freshly ground black pepper in a medium bowl to combine. Set ⅓ cup marinade aside.
  • Arrange 4 skinless, boneless chicken breasts (about 1½ lb.) in a single layer in a baking dish. Pour remaining marinade over chicken and turn to coat. Cover dish and chill, turning chicken halfway through, at least 30 minutes and up to 4 hours.
  • Prepare a grill for medium-high heat; oil grate. Remove chicken from marinade, letting excess drip back into dish; discard marinade in dish. Grill chicken, turning halfway through, until cooked through and blackened grill marks appear, 10-14 minutes. Transfer to a cutting board and let rest 5-10 minutes before slicing.
  • Serve chicken with reserved marinade spooned over.

GRILLED MARINATED CHICKEN BREASTS

Grilled Marinated Chicken Breasts image

Using bottled salad dressing, my cousin put a twist on a recipe I have used for years and came up with this super easy crowd pleaser. We have this with roasted potatoes and Greek salad all summer... and the kids love it!

Provided by Seamouse

Categories     Chicken Breast

Time 1h40m

Yield 4 serving(s)

Number Of Ingredients 5

4 thick boneless skinless chicken breasts
1 teaspoon kosher salt
1/2 teaspoon fresh cracked black pepper
1 teaspoon garlic powder
1 (8 ounce) bottle Italian salad dressing (I recommend Wishbone or prepared Good Seasons. DO NOT use fat free!) or 1 (8 ounce) bottle caesar salad dressing (I recommend Wishbone or prepared Good Seasons. DO NOT use fat free!)

Steps:

  • Rinse chicken breasts and pat dry.
  • Sprinkle both sides of the breasts with salt, pepper, and garlic powder, using more or less to taste.
  • Put chicken in a dish and add about 1/3 cup of the salad dressing, making sure all of the chicken is coated. Cover. A plastic bowl with a lid works well.
  • Refrigerate for at least an hour or two.
  • Grill over medium direct heat for 8-10 minutes or until juices run clear.
  • Remove from grill to a cutting board, cover with foil and allow to sit for 10 minutes.
  • Slice breasts on a diagonal crosswise in 1/4 inch slices.
  • Toss slices on a shallow serving platter with the remainder of the salad dressing coating all the chicken well. Use more dressing if desired.
  • Serve hot or at room temperature.
  • Note: To prepare as an appetizer, cube chicken in small chunks, marinate as above, grill 3-5 pieces on small wooden skewers (soaked in water), brush on salad dressing and serve.

MARINATED GRILLED CHICKEN BREASTS WITH ZIPPY CHUNKY SALAD AND GARLIC DILL FRIES

Marinated Grilled Chicken Breasts with Zippy Chunky Salad and Garlic Dill Fries image

Yield 4 servings

Number Of Ingredients 18

1 sack (16 to 18 ounces) crispy-style frozen French fries
4 6-ounce boneless, skinless chicken breast halves
2 tablespoons extra-virgin olive oil (EVOO) (eyeball it)
Zest and juice of 1 lemon
1/2 tablespoon dried oregano (half a palmful)
4 garlic cloves, chopped
Salt and freshly ground black pepper
1 seedless cucumber, cut in half lengthwise, then cut into 1/2-inch-thick half-moons
1 red bell pepper, cored, seeded, and chopped
1 green bell pepper, cored, seeded, and chopped
1/2 small red onion, finely chopped
10 radishes, thinly sliced
2 romaine lettuce hearts, chopped
1/2 cup plain yogurt
1 tablespoon red wine vinegar (eyeball it)
1/4 cup fresh flat-leaf parsley leaves (a generous handful), chopped
3 tablespoons unsalted butter
4 tablespoons fresh dill, chopped (eyeball it)

Steps:

  • Preheat the oven according to the package directions for the fries. Spread the fries out in a single layer on a rimmed cookie sheet. Place in the oven when it comes up to temp.
  • Heat an outdoor grill or grill pan on high.
  • In a shallow dish, combine the chicken with the EVOO, lemon juice, oregano, three fourths of the chopped garlic, salt, and pepper. Toss to coat evenly and marinate for 5 minutes.
  • In a salad bowl, combine the cucumbers, red and green bell peppers, onions, radishes, and romaine. To make the zippy dressing, in a small bowl combine the yogurt, lemon zest, red wine vinegar, parsley, salt, and pepper. Pour the dressing over the salad and toss together.
  • Transfer the marinated chicken to the grill and cook for 6 minutes on each side. Remove from the heat and let rest for 2 to 3 minutes.
  • A minute or two before the fries are finished cooking, combine in a small bowl or sauce pot the butter, dill, the remaining fourth of the chopped garlic, and some salt and pepper. Melt over low heat or in the microwave. Once the fries are done and very crisp, transfer to a large shallow bowl, drizzle with the melted garlic-dill butter, and toss to coat the fries evenly. Have a taste to check if they need more salt or pepper.
  • Serve the chicken with some of the chunky salad and the garlic-dill fries.
