MARINATED TOMATO AND MOZZARELLA PASTA

A quick, easy and light vegetarian pasta dish!

2 large tomatoes, diced
1 cup thinly sliced red onion
8 ounces cubed mozzarella cheese
2 teaspoons fresh minced garlic
Salt and pepper, to taste
2 tablespoons extra-virgin olive oil
1 (16-ounce) package linguine pasta, cooked according to package directions and drained
2/3 cup fresh julienned or torn basil

Steps:

  • Place tomatoes, onion, mozzarella, garlic, salt and pepper in a large bowl. Drizzle with olive oil and gently stir to combine and coat mixture. Cover and allow to marinate while pasta is cooking.
  • Drain pasta. Serve tomato and mozzarella mixture over pasta and top with fresh basil.

1.5 pounds beefsteak tomatoes, diced
0.5 small sweet onion, roughly chopped
2 tablespoons extra-virgin olive oil
8 ounces bocconcini (small balls of fresh mozzarella), quartered, or fresh mozzarella, cubed
kosher salt and black pepper
1 pound dried fettuccine
0.5 cup fresh basil, torn

Steps:

  • In a large bowl, gently combine the tomatoes, onion, oil, bocconcini, 1 ½ teaspoons salt, and ¾ teaspoon pepper.
  • Set aside and let marinate at room temperature for at least 10 minutes.
  • Meanwhile, cook the pasta according to the package directions.
  • Add the drained pasta and basil to the marinated tomatoes and toss to combine. Divide among individual bowls.

Marinated Tomatoes
1 cup chopped fresh basil, loosely packed
8 ounces torn fresh mozzarella cheese

Steps:

  • Cook penne pasta according to package directions; drain.
  • Place 1/4 of Marinated Tomatoes with marinade in a blender; pulse until tomatoes are very finely chopped, 3 to 4 times.
  • Coarsely chop remaining Marinated Tomatoes, reserving marinade.
  • Combine finely and coarsely chopped tomatoes and reserved marinade with hot cooked pasta, and toss to coat. Stir in chopped fresh basil and torn fresh mozzarella cheese.

Kosher salt and freshly ground black pepper
1/3 cup olive oil
2 tablespoons white wine vinegar
1 small shallot, minced
8 ounces dried fusilli
2 cups halved grape tomatoes
2 cups diced fresh mozzarella
1 cup torn fresh basil leaves

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk together the olive oil, vinegar, shallot, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl with the dressing.
  • Add the tomatoes, mozzarella and basil to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

1/2 cup Italian salad dressing
2 tablespoons minced fresh basil
2 tablespoons minced fresh chives
1/2 teaspoon coarsely ground pepper
2 cartons (8 ounces each) miniature fresh mozzarella cheese balls, drained
2 cups cherry tomatoes
12 slices French bread baguette (1/2 inch thick), cut into quarters
2 teaspoons olive oil
1/8 teaspoon salt

Steps:

  • Preheat oven to 450°. Combine salad dressing, basil, chives and pepper. Add cheese and tomatoes; toss to coat. Refrigerate, covered, at least 3 hours to let flavors blend., Meanwhile, toss baguette pieces with oil and salt; arrange on a baking sheet. Bake until toasted, 4-5 minutes. Cool completely. Just before serving, add toasted bread to cheese mixture; toss to combine. If desired, thread tomatoes, cheese and bread on skewers for serving.

1 pound cherry or grape tomatoes, a mixture of colors, halved
Salt and black pepper
3/4 cup olives, such as Moroccan or niçoise
1/4 cup extra-virgin olive oil
2 tablespoons red wine vinegar
1 garlic clove, smashed to a paste
Pinch of dried oregano
Pinch of red-pepper flakes
1 pound fresh mozzarella, cut into ¼-inch slices
Basil leaves, for garnish

Steps:

  • Put cherry tomatoes in a large bowl. Season with salt and pepper. Add the olives and toss.
  • In a small bowl, stir together olive oil, vinegar, garlic, oregano and red-pepper flakes. Pour mixture over tomatoes and olives. Toss well to coat and let sit for at least 10 minutes and up to an hour.
  • When ready to eat, arrange mozzarella in the center of a large platter (or arrange on individual plates). Spoon tomato and olive mixture over mozzarella. Garnish with lots of basil leaves.

About 1 1/2 pounds ripe tomatoes, halved or quartered if small, diced if large
Salt
2 cans olive oil-packed tuna or 1 pound mozzarella cheese, diced (optional)
2/3 cup pitted oil-cured black olives, halved, or 1/2 cup pitted green olives, chopped, or 3 tablespoons capers (optional)
2/3 cup chopped fresh herbs (basil, parsley, mint, chives, cilantro, scallion tops, or a combination), more for garnish

About 3/4 cup extra virgin olive oil
Freshly ground black pepper
2 pounds short pasta, like fusilli, farfalle or penne
Hot red pepper flakes (optional)

Steps:

  • Up to 4 hours before serving, put tomatoes in a large bowl and sprinkle all over with salt. Set aside for 30 minutes, then drain off liquid.
  • Add tuna and its oil, olives or capers, if using. Add herbs and zest. Add olive oil, salt and pepper to taste and stir gently, flaking tuna into pieces. Cover and set aside at least 1 hour or up to 3 hours, stirring occasionally.
  • Cook pasta in plenty of boiling salted water. Drain very well. Combine tomatoes and pasta well, then taste and add more oil, salt and pepper to taste. Add red pepper flakes if desired. Sprinkle with pine nuts, if using, and chopped herbs. Serve immediately.
