MARK'S FIREHOUSE CHILI

This recipe won the Blum invitational chili cook-off/Super Bowl® party. It really is good. Many people say this but this one guarantees an empty pot when taken to potlucks. I got this recipe from my friend Mark, who has spent his life in public safety positions. He hasn't forgotten his firehouse roots as evidenced by this recipe.

1 pound ground beef
1 (14 ounce) can kidney beans
1 (14.5 ounce) can beef bouillon
1 (14 ounce) can whole plum tomatoes
1 (7 ounce) can tomato puree
½ (12 fluid ounce) can or bottle beer
1 ½ teaspoons Worcestershire sauce
1 (1 ounce) package dry onion soup mix
½ teaspoon red pepper flakes
½ teaspoon crushed dried chipotle pepper
½ teaspoon ground cumin
½ teaspoon dried thyme
½ teaspoon dried oregano

Steps:

  • Cook and stir ground beef in a large soup pot over medium heat until meat is browned and crumbly, about 10 minutes. Pour kidney beans, beef bouillon, plum tomatoes, tomato puree, beer, and Worcestershire sauce into beef. Stir in dry onion soup mix, red pepper flakes, dried chipotle pepper, cumin, thyme, and oregano.
  • Bring mixture to a boil, reduce heat to low, and cook at a simmer until thickened, 1 to 1 1/2 hours.

MARK'S CHILLI SAUCE

In 1999, Mark came from New Zealand to meet his Father. He worked for me for a while. This is a wonderful condiment!

Number Of Ingredients 6

10 lbs chili peppers, chopped finely (fresh better than dried)
6 teaspoons garlic
1 1/2 cups onions, chopped finely
2 cups white vinegar
1 1/2 cups sugar
3 1/2 tablespoons paprika

Steps:

  • Combine all ingredients in a large stockpot and bring to a boil.
  • Skim off scum and slow boil for 1 to 1 1/2 hours until "crab foam" bubbles are present.
  • As he said, "Bottle up and enjoy.".
  • This will be a big batch. I have made smaller batches with dried chillis.

This michelada is my absolute favorite drink for cooking out in the summer.

½ teaspoon chili-lime seasoning (such as Tajin®)
1 wedge lime
½ cup ice cubes, or as needed
3 fluid ounces lime juice
2 dashes Worcestershire sauce, or more to taste
2 dashes hot sauce (such as Frank's® Redhot®), or more to taste
12 fluid ounces cold beer

Steps:

  • Sprinkle chili-lime seasoning onto a small, shallow plate. Moisten the rim of a glass with lime wedge, then dip the moistened glass into the seasoning.
  • Fill the glass 1/2 full with ice cubes. Add lime juice, Worcestershire sauce, and hot sauce. Pour beer into the glass and stir.

1 square melting chocolate
1 1/2 tablespoons paprika
3 tablespoons chili powder
4 red pepper pods

1 1/2 cups water

1 tablespoon Accent seasoning
1 tablespoon salt
2 (15 1/2 ounce) cans red kidney beans

Steps:

  • Cook ground beef, onions, and garlic.
  • Add all ingredients to slow cooker.
  • Cook 4 hours on low.
  • *1 hour before done add beans and water.
