MARSHMALLOW PECAN FUDGE

- Line a 9-in. square pan with foil and grease the foil with 1 teaspoon butter. Sprinkle marshmallows and pecans into pan., In a large heavy saucepan, combine the milk chocolate, German chocolate and remaining butter. Cook over low heat until smooth, stirring frequently. Pour over marshmallows and pecans. Refrigerate for 1 hour or until firm., Using foil, lift candy out of pan. Discard foil; cut candy into 1-in. squares. Store in an airtight container in the refrigerator.

- Grease bottom and sides of 8-inch square pan with butter. In 3-quart heavy saucepan, cook brown sugar, 1/2 cup butter and the milk over medium heat, stirring constantly, until butter is melted.
- Stir in marshmallow creme. Heat to boiling over medium heat; boil about 5 minutes, stirring occasionally, to 234°F on candy thermometer or until small amount of mixture dropped into cup of very cold water forms a soft ball that flattens when removed from water; remove from heat. Add butterscotch chips; stir until smooth. Stir in pecans.
- Spread in pan. Let stand 2 hours or until firm. Cut into 6 rows by 8 rows.

- Line an 8-in. square pan with foil and butter the foil; set aside. Place pecans in a microwave-safe pie plate. Microwave, uncovered, on high for 3 minutes, stirring after each minute; set aside. , In a 2-qt. microwave-safe bowl, combine chocolate chips and milk. Microwave, uncovered, on high for 1 minute. Stir until smooth. Stir in vanilla and 3/4 cup pecans. Immediately spread into the prepared pan. Sprinkle with remaining pecans, pressing to adhere., Cover and refrigerate until firm, about 2 hours. Remove from pan; cut into 1-in. squares. Cover and store at room temperature.

OLD FASHIONED CHOCOLATE MARSHMALLOW FUDGE
This a traditional fudge using both granulated and brown sugars. The addition of the marshmallow makes it oh so creamy. My mom made this every Christmas and we kids couldn't wait to get our hands on it! Now I never fail to make it myself! We always use walnuts in the recipe but pecans would work too!

Steps:
- Combine sugars, evaporated milk and butter in a saucepan.
- Cook over moderate heat, stirring frequently, until mixture comes to a boil.
- Boil 15 minutes over moderate heat, stirring occasionally.
- Remove from heat and add marshmallow creme and vanilla.
- Stir until the mixture is smooth.
- Add chocolate chips and chopped nuts and stir until chocolate is melted.
- Spread evenly in a buttered 9-inch square cake pan.
- Chill until firm.
- Cut into squares or rectangles, as desired.

THE ORIGINAL FANTASY FUDGE
This recipe used to be found on the back of a well known brand of marshmallow cream. Many were surprised when it was changed. This is the original! You may find that most packages of chocolate chips are 10 ounces now; 12 ounces of chocolate chips is roughly 2 cups.

- Butter an 8-inch square baking pan.
- Combine butter, brown sugar, white sugar, and salt in a saucepan; pour in cream. Bring to a boil, stirring until butter melts and sugar is dissolved. Let mixture boil, stirring often, for 5 minutes.

PRALINE PECAN FUDGE

Steps:
- Line a 9-inch Pyrex dish in aluminum foil and set aside.
- In a two quart heavy bottom pot, melt butter over medium-high heat.
- Add sugar and evaporated milk and blend well into butter.
- Bring to a rolling boil, reduce heat to simmer and cook approximately five minutes stirring constantly.
- Be careful not to scorch butter as mixture will caramelize.
- Remove from heat and using a large cooking spoon, stir in morsels, vanilla, marshmallow creme, praline liqueur and pecans, whipping constantly.
- Stir until mixture becomes creamy and slightly thickened.
- Pour into the Pyrex pan and allow to cool.
- Cut fudge into 1-inch squares and serve.
