Turkey Burgers image

For juicy burgers, use ground turkey that's at least 7 percent fat. Sour cream, mango chutney, and mustard will give them additional flavor and moisture.

6 slices whole-wheat sandwich bread
1 pound lean ground turkey (7 percent fat)
1/2 cup reduced-fat sour cream
4 tablespoons prepared mango chutney, preferably Major Grey's, finely chopped
2 tablespoons Dijon mustard
1 tablespoon chili powder
Coarse salt
1 cup mesclun lettuce mix
1 medium tomato, sliced

Steps:

  • In a medium bowl, tear 2 slices bread into small pieces. Add turkey, sour cream, 3 tablespoons chutney, 1 tablespoon mustard, chili powder, and 1 teaspoon coarse salt. Shape into 4 firmly packed 5-inch round patties.
  • Freeze on a baking sheet until firm, about 30 minutes, then wrap each burger in plastic; place all burgers in a resealable freezer bag, label, and date. Freeze up to 2 months.
  • To cook: Thaw burgers overnight in the refrigerator. Heat broiler with rack set 4 inches from heat. Place burgers on a rimmed baking sheet; broil until firm and cooked through, 4 to 5 minutes per side.
  • Lightly toast 4 slices bread. Dividing evenly, top each with lettuce, burger, and tomato. Stir together 1 tablespoon each chutney and mustard, and serve alongside burgers.

1/2 cup finely grated Gruyere cheese
4 scallions, thinly sliced
1/4 cup dried breadcrumbs
1/4 cup Dijon mustard
1 garlic clove, minced
Coarse salt and ground pepper
Oil

Steps:

  • Heat grill to high. In a medium bowl, use a fork to gently combine ground turkey with Gruyere, scallions, breadcrumbs, mustard, and garlic; season generously with salt and pepper. Gently form mixture into four 1-inch-thick patties.
  • Lightly oil grill. Place patties on hottest part of grill; sear until browned, 1 to 2 minutes per side. Move patties to cooler part of grill; continue grilling until cooked through, 5 to 10 minutes per side.

These are the first turkey breast burgers I have gotten my family to not only eat, but actually like. The dryness of ground turkey breast while VERY low fat, needs a little help to be palatable. That help is just a very small amount of lean ground beef

1/4 lb extra lean ground beef
1 1/4 ounces onion soup mix
1/2 teaspoon fresh ground pepper
1/2 teaspoon garlic powder
1 tablespoon Worcestershire sauce
1 egg

Steps:

  • Adding the small about of lean ground beef really boosts both the flavor, color, and taste of the otherwize flat ground turkey breast.
  • Mix all together,well , form into 4-6 patties and grill . I have done them both on an outdoor grill, for about 15 mins total, and on the George Foreman Grill indoors for about 5-8 minutes.

1 lb lean ground turkey
2 ounces cheddar cheese, coarsely grated (about 1/2 cup)
1/2 small onion, coarsely grated
1 pinch coarse salt and pepper
1 teaspoon olive oil
12 potato dinner rolls
lettuce (optional)
sliced tomatoes (optional)
ketchup, and (optional)
mustard, for serving (optional)

Steps:

  • In a food processor, pulse bread until fine crumbs form. Transfer to a medium bowl; add turkey, cheese, and onion. Season with salt and pepper, and mix gently just until combined. Form twelve 2-inch patties (about 3 tablespoons each).
  • In a large nonstick skillet, heat oil over medium. Cook patties until browned and cooked through, about 5 minutes per side. Serve on rolls with lettuce, tomatoes, ketchup, and mustard, if desired.
