LEMON THYME PUDDING

- For the crumb base: Add the cookies and melted butter to a food processor and pulverize. Divide among 6 martini glasses.
- For the pudding: Stir together the sugar, cornstarch and salt in a medium saucepan. Add the milk and egg yolks and whisk to combine. Add the thyme and lemon zest and heat over medium heat, stirring, until the mixture barely comes to a boil. Simmer gently until it's thickened like custard, 6 to 8 minutes. Remove the pan from the heat and stir in the butter. Divide the pudding among the glasses over the base and chill for at least 2 hours.
- For serving: Top each pudding with mounds of whipped cream, then add a handful of blueberries and some mint to each one.
APPLE AND THYME MARTINI

- Special equipment: melon baller
- Chill the martini glasses.
- Fill the shaker with ice. Combine the vodka, apple juice, and thyme syrup in a martini shaker. Shake for about 10 seconds. Divide between the 4 chilled martini glasses.
- Use the melon baller to scoop out small balls of apple. Place 3 balls of apple and 1 sprig of thyme in each glass for garnish. Serve immediately.
- In a saucepan combine sugar, water, and thyme over medium heat. Bring to a boil, reduce heat and simmer until the sugar has dissolved, about 5 minutes. Take the pan off the heat and cool the syrup. Any extra cooled syrup can be saved in an airtight container in the refrigerator.
- Yield: 1 cup

- To make the herb-simple syrup for the martini, combine the water, sugar and lemon zest in a pot over medium heat. Gently simmer for 3 minutes until the sugar is dissolved, swirling the pot over the heat now and then. Do not allow to boil or get dark. Put the thyme in a mason jar or glass container and pour the sugar syrup on top; allow to steep while it cools for 1-2 hours to infuse the herb flavor into the syrup. Strain to remove the solids.
- In a martini shaker filled with ice, combine the vodka, Lemoncello, and 4 tablespoons of the herb-syrup. Shake well until frothy and strain into 4 chilled martini glasses. Float candied lemon rind in each glass for great presentation.
APPLE THYME MARTINI
Originally seen on Giada De Laurentiis but we altered it, as the version she drinks is a bit heavy on the vodka for us. ;) I loved that the simple syrup was homemade & everything else was fresh. Mmmm!

- Chill the martini glasses.
- To Make syrup: In small saucepan, combine water, sugar & thyme. Bring to boil over medium heat then reduce to a simmer. Cook for about 5 minutes. Remove from heat & let cool. (Leftover syrup should be stored in the refrigerator in an airtight container.).
- To Assemble: Fill a martini shaker with the vodka, apple juice & 1/4 cup of the thyme syrup. Shake 10 seconds & pour into 4 chilled glasses. (I use a single-serve shaker so I combine everything but ice in a pitcher & then pour into shaker from there.).
- Use a melon baller to scoop small balls of apple. Place 3 apple balls & a sprig of fresh thyme in each glass.
- Serve immediately.
LEMON-THYME COCKTAILS

- In 1-quart saucepan, heat lemon-thyme simple syrup ingredients over low heat until sugar is dissolved. Let stand 15 minutes. Strain to remove thyme and lemon peel. Use within 2 days.
- Place 1 sprig fresh thyme in cocktail shaker. Add vodka, cranberry juice, 1 oz of the lemon-thyme simple syrup and liqueur; muddle thyme with back of spoon. Add ice; place lid on shaker, and shake until cold and blended. Strain into 2 martini glasses.
- Garnish with lemon slice and sprig of thyme.
