TRADITIONAL MEXICAN ANISE COOKIES

Delicate anise flavor, great with expressos. This recipe was given to me by a co-worker. On the 3rd Friday of the month we'd have a cookie exchange at the office. Prep times includes chill time

1 1/4 cups sugar, divided
1/2 cup unsalted butter, softened
1/2 cup shortening
1 egg
2 tablespoons sherry wine
1/2 teaspoon vanilla extract
1 teaspoon anise extract
2 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 teaspoons cinnamon

Steps:

  • Cream 1 cup sugar, butter and shortening in a large bowl til light and fluffy.
  • Beat in egg, sherry vanilla and anise til well combined.
  • In a separate bowl, mix together flour, baking powder and salt; stir into butter-egg mixture til well mixed.
  • Divide dough in half.
  • Wrap each half in plastic wrap and chill for 30 minutes to 1 hour, or til dough is firm, but is still quite workable.
  • Preheat oven to 350' degrees F.
  • Combine cinnamon with remaining sugar in a small bowl; set aside.
  • On a lightly floured surface, roll out each half of dough 1/8 inch thick.
  • Cut into desired shapes, re-rolling scraps just once.
  • Place on ungreased cookie sheets and sprinkle with cinnamon-sugar mixture.
  • Bake 10 to 12 minutes, or til golden.
  • Remove to wire racks to cool.

This authentic anise cookie is my mothers recipe. The use of anise oil (available behind the counter from your pharmacist)sets this cookie apart from the rest. You can make these cookies in November and store them in a tightly covered tin to let them age and mellow, ready for Christmas.

Number Of Ingredients 4

4 large eggs
2 cups granulated sugar
2 cups sifted flour
1 teaspoon anise oil (not extract see above)

Steps:

  • With a Kitchenaid mixer: beat eggs 20 minutes with 2 cups of granulated sugar (yes I mean 20 minutes as this is what will make the cookies light as a feather with a crisp melt in you mouth top crust).
  • Add flour gradually, beating well after each addition. Add 1 tsp anise oil and blend well.
  • Drop by tablespoonsful onto greased cookie sheets and let stand in a draft free place overnight.
  • Bake in a 375°F oven for 10 minutes until light golden but do not brown.
  • Cool on baking racks thoroughly before storing.
  • Store in a tightly covered cookie tin (not plastic).
  • The longer you let the cookie age, the better it will be.

1 pinch salt

1 ½ cups white sugar
6 tablespoons vegetable oil
1 teaspoon anise extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a medium bowl, stir together the flour and baking powder; set aside. In a large mixing bowl, beat eggs until they are light and fluffy. Gradually add sugar and beat for about 3 minutes. Stir in the oil and anise extract. Fold in the dry ingredients until well blended. Spread the mixture into a 9x13 inch pan and bake for 15 to 20 minutes in the preheated oven.
  • When the pan cools slightly, cut the cookie down the middle, lengthwise. Cut each half into 1/2 inch slices. Place slices onto a cookie sheet and return to the oven long enough to brown on each side, like toast. Store in a tightly covered container.

These cookies are wrapped in the spirit of the season. Fresh out of the oven, they have a wonderfully chewy center. Over time, the centers become more crisp, reminiscent of biscotti.

1 1/2 cups plus 2 tablespoons all-purpose flour
1/2 teaspoon baking powder
1 teaspoon coarse salt
2 teaspoons ground anise seeds
4 large eggs, room temperature
1 cup plus 2 tablespoons sugar, plus more for sprinkling

Steps:

  • Preheat oven to 350 degrees. Sift flour, baking powder, salt, and anise in a medium bowl. Whisk eggs with a mixer on medium speed. Slowly add sugar, increase speed to high, and whisk until thick and glossy, about 10 minutes. Reduce speed to low, and add flour mixture, whisking until just combined.
  • Spoon batter into a pastry bag fitted with a 1/2-inch round tip. Pipe 1-inch tapered mounds on baking sheets lined with nonstick baking mats, spacing them 1 inch apart. Bake until firm, 10 to 12 minutes. Let cool on sheets on wire racks.

Steps:

  • Beat eggs until frothy.
  • Add anise.
  • Add powdered sugar gradually, beating continuously.
  • Add flour and baking powder.
  • Dough should be tough to work from what I've read.
  • Drop by teaspoonfuls onto a greased cookie sheet.
  • Let stand overnight.
  • In the morning, bake at 350 degrees Fahrenheit for 12 minutes.
  • A pretty white icing will appear on these cookies.

Steps:

  • Preheat oven to 375 degrees F.
  • Cream Promise spread and sugar until smooth.
  • Add eggs and milk and beat well.
  • Slowly add in flour mixture (flour, baking powder, & salt) and mix well.
  • Drop dough by spoonfuls onto ungreased cookie sheet about 2 inches apart.
  • Flatten slightly and bake about 12 minutes before they start to brown.
  • Remove from oven and place on cooling racks.
  • When completely cool you may frost them.
  • Frosting: Mix Promise spread, sugar, milk, and anise extract until smooth.
  • Use to frost cooled cookies.
  • Decorate as desired.
