Steps:
- Using larger strawberries, trim tops and bottoms of strawberries to level. Using small melon baller, scoop out center of each strawberry.
- In medium bowl, mix cheese, powdered sugar, milk and extract until smooth. Spoon cheese mixture into small resealable food freezer plastic bag or pastry bag fitted with star tip; seal bag. Cut small hole in bottom corner of plastic bag. Squeeze bag to pipe cheese mixture into strawberries; top with almonds.

- In a blender, combine the batter ingredients; cover and process until smooth. Cover and refrigerate for 1 hour., Meanwhile, for filling, in a small bowl, combine the cheese, confectioners' sugar, basil and lemon juice. Gently fold in strawberries. Cover and refrigerate for at least 30 minutes. , For topping, in a small bowl, combine the strawberries, sugar, orange juice, extract and salt. Let stand for 30 minutes. , Melt 1 teaspoon butter in an 8-in. nonstick skillet over medium heat; pour about 1/4 cup batter into the center of skillet. Lift and tilt pan to coat bottom evenly. Cook until top appears dry; turn and cook 15-20 seconds longer. Remove to a wire rack. Repeat with remaining batter, greasing skillet as needed. When cool, stack crepes with waxed paper or paper towels in between., Spoon filling over crepes; roll up. Serve with strawberry topping.

- Remove stems from strawberries; cut a deep "X" in the tip of each berry. Gently spread berries open., In a small bowl, beat the cream cheese, confectioners' sugar and extract until light and fluffy. STRAWBERRIES STUFFED WITH CRANBERRY MASCARPONE
I've been hanging on an old magazine recipe clipping for years. Finally, I made this recipe and, WOW, it's great. I used jumbo strawberries, but you can also use regular-size strawberries. Serve an appetizer or a dessert! The filling is not overly sweet, and you can add powdered sugar to taste if you want a sweeter cheese mixture. I've found that there's more than enough filling for 12 medium-large strawberries. If you don't have time to pipe the filling, you can serve it in a bowl as a dip.

- Combine mascarpone cheese, dried cranberries, orange zest, and liqueur in a bowl.
- Pipe the cheese mixture onto the strawberry halves using a pastry bag fitted with an open star tip. The tip should be large enough so the cranberry bits do no clog the tip.
- Chill then serve.

- Line 12 muffin cups with liners.
- Stir cake mix, water, mascarpone cheese, vegetable oil, and egg whites in a bowl until well combined.

- You can cut the berries in 2 ways. Option 1: Keep the leaves on and slice the berries in half lengthwise. Option 2: Slice off the stem end. This will allow to strawberries to stand upright. With the pointed side up, slice an X into each berry. Take care not to slice all the way through!
- Prepare the filling: In a deep bowl, add mascarpone, cream, powdered sugar, and vanilla. Beat with a handheld mixer until the mixture becomes thick and cloud like. This will happen fast, so keep an eye on it! A stand mixer works great here too
- Add a star tip to a pastry bag. Add the filling to the bag. You can also use a ziplock bag here too! Just pop the filling in and snip off a tiny corner

- Using a double boiler, melt the chocolate. If you don't have a double boiler, you can set a glass bowl inside of a pot where the water line is just underneath the surface of the bowl. Heat the water until the chocolate melts.
- You can use a fork to drizzle the chocolate or for more control scoop the melted chocolate into a resealable plastic bag and snip of the corner to drizzle the chocolate on.

- Slice off top end of strawberry so that the strawberry can stand on a flat surface. Then make a deep knife cut on top of strawberry.
