NUTTY MASHED SWEET POTATOES



Nutty Mashed Sweet Potatoes image

If you prefer your sweet potatoes more on the savory side, this dish is for you. Since the tubers are already naturally sweet, we add just a small drizzle of honey to enhance their flavor. The tahini lends a distinct nuttiness and contributes to the overall creaminess of the dish. We use a food processor because it creates an incredibly smooth texture; you can also mash with a potato masher for a more rustic dish.

Yield Serves 4 (serving size: about 2/3 cup)

Number Of Ingredients 5

1 1/2 pounds peeled, cubed sweet potatoes
1/4 cup tahini
1 tablespoon honey
1/2 teaspoon kosher salt
1/2 teaspoon ground ginger (optional)

Steps:

  • Place peeled, cubed sweet potatoes in a large saucepan; cover with water. Bring to a boil; reduce heat and simmer until very tender, about 15 minutes. Drain.
  • Place potatoes, tahini, honey, kosher salt, and, if desired, ground ginger in a food processor; process until smooth.

Maple Mashed Sweet Potatoes image

Maple mashed potatoes are much healthier take on the traditional marshmallow-topped casserole. By cutting out most of the added sugar, we let the natural flavor of sweet potatoes shine.

Yield Serves 6 (serving size: about 1/2 cup)

Number Of Ingredients 6

1 1/2 pounds peeled cubed sweet potato
1 (5-oz.) can evaporated low-fat milk
2 tablespoons maple syrup
3/4 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons butter, melted

Steps:

  • Place sweet potato in a large saucepan; cover with water. Bring to a boil; cook until tender, about 15 minutes. Drain and return to pan; add evaporated milk, maple syrup, salt, and pepper. Mash with a potato masher to desired consistency. Drizzle with melted butter.

Creamy and Light Mashed Sweet Potatoes image

Number Of Ingredients 7

4 pounds sweet potatoes, washed, peeled and cut into 2-inch rounds
1 cup heavy cream
1 stick (8 tablespoons) unsalted butter, melted, plus more for serving
1/2 cup brown sugar
Zest of 1 lemon.
1/2 teaspoon freshly-grated nutmeg
1/4 teaspoon salt

Steps:

  • Place the sweet potatoes in a large pot and cover with cold water. Bring to a boil, then reduce to a simmer. Cook until the potatoes are very tender, about 45 minutes. Drain the potatoes and let them stand to release any excess water, 10 to 15 minutes.
  • Combine the sweet potatoes, cream, butter, sugar, lemon zest, nutmeg and salt in a large bowl. Mash until the mixture is light and smooth. Serve with a pat of butter.

2 large eggs, beaten
1 cup butter, melted
1/2 cup light corn syrup
1/2 cup sugar
4 cups mashed sweet potatoes
1 (14 ounces) evaporated milk
1 cup packed brown sugar
1/3 cup all-purpose flour
1/3 cup butter, melted
1 cup chopped pecans

Steps:

  • Preheat oven to 350°. Combine eggs, butter, corn syrup and sugar in large bowl until creamy. Add mashed potatoes and milk. Spoon mixture into a greased 2-qt. baking dish. Combine brown sugar, flour, butter and pecans. Sprinkle evenly on top of sweet potato mixture. Bake until puffy and golden brown, about 30 minutes.
