NUTTY MASHED SWEET POTATOES
If you prefer your sweet potatoes more on the savory side, this dish is for you. Since the tubers are already naturally sweet, we add just a small drizzle of honey to enhance their flavor. The tahini lends a distinct nuttiness and contributes to the overall creaminess of the dish. We use a food processor because it creates an incredibly smooth texture; you can also mash with a potato masher for a more rustic dish.

- Place peeled, cubed sweet potatoes in a large saucepan; cover with water. Bring to a boil; reduce heat and simmer until very tender, about 15 minutes. Drain.
- Place potatoes, tahini, honey, kosher salt, and, if desired, ground ginger in a food processor; process until smooth.

- Place sweet potato in a large saucepan; cover with water. Bring to a boil; cook until tender, about 15 minutes. Drain and return to pan; add evaporated milk, maple syrup, salt, and pepper. Mash with a potato masher to desired consistency. Drizzle with melted butter.

CREAMY AND LIGHT MASHED SWEET POTATOES

- Place the sweet potatoes in a large pot and cover with cold water. Bring to a boil, then reduce to a simmer. Cook until the potatoes are very tender, about 45 minutes. Drain the potatoes and let them stand to release any excess water, 10 to 15 minutes.
- Combine the sweet potatoes, cream, butter, sugar, lemon zest, nutmeg and salt in a large bowl. Mash until the mixture is light and smooth. Serve with a pat of butter.

- Preheat oven to 350°. Combine eggs, butter, corn syrup and sugar in large bowl until creamy. Add mashed potatoes and milk. Spoon mixture into a greased 2-qt. baking dish. Combine brown sugar, flour, butter and pecans. Sprinkle evenly on top of sweet potato mixture. Bake until puffy and golden brown, about 30 minutes.
