Ingredients

1 bottle vodka
4 cocoa beans
Sprig fresh mint leaves

Steps:

Combine vodka and cocoa beans in a sealable container and store in a warm, dry place. Agitate the mixture 2 or 3 times a day for 1 week. Six hours before serving, add the mint leaves. Strain through a coffee filter into a bottle, seal and store in your freezer.
Serving suggestion: Serve ice cold without a garnish.

Infusing vodka is as easy as adding ingredients to the bottle and letting it stand. Make sure to store the vodka in a cool, dark place, such as a kitchen cabinet.

1 bottle (1 liter) vodka
1 tangerine, preferably organic, washed well
5 cardamom pods, lightly crushed
1 vanilla bean, split lengthwise
3 unsprayed spruce or other pine sprigs (about 2 inches long)
5 juniper berries, lightly crushed

Steps:

For the tangerine version:Remove peel from tangerine in long strips using a vegetable peeler, making sure not to include any white pith. Add peel directly to bottle of vodka. For the vanilla-cardamom version: Add cardamom pods and vanilla bean directly to bottle of vodka. For the pine and juniper version: Add pine sprigs and juniper berries directly to bottle of vodka.
Let vodka stand at room temperature in a cool, dark place for 2 to 3 days, depending on desired strength of flavor. Strain; discard solids.

Ingredients

1 1/2 liters vodka
1 pineapple
1/2 watermelon
2 quarts strawberries
7-up, to taste

Steps:

Cut all pineapple and fruit so no rind of any kind is left behind.
Wash and rewash the watermelon, pineapple, and strawberries.
Cut the strawberries into halves, the pineapple and watermelon into bigger than a bite-sized pieces.
Layer a"sun tea" jar (preferably with spigot at bottom) with one fruit at a time.
Start with strawberry or watermelon, as they are more fragrant and will gather more taste at the bottom, where the vodka exits the container.
Fill container to top with fruit.
Pour vodka over fruit until covered.
Screw on top and let sit minimum 2 weeks in refrigerator.
To serve, mix 3 parts infusion with one part 7-Up (diet or regular) in a martini glass and serve with small piece of fruit as garnish.
