MAC'S MAGNIFICENT MEATLOAF
It is rare for me to come up with a recipe that is just too good not to write down. Usually, when I cook, I like to play around with the ingredients and so I rarely make something the same way twice. But this meatloaf was as close to perfect as I could imagine. I tried to be specific in my directions but there is no way to determine ahead of time how wet the mixture will be after adding the vegetables. How wet is too wet is hard to describe, but it is better to err on the side of moisture, I'd think.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease 9x13-inch baking pan.
- Melt butter in a saucepan over medium heat; saute onion and garlic until onion is translucent, 5 to 10 minutes. Add green bell pepper to onion mixture and saute until bell pepper is softened, about 3 more minutes.
- Mix sirloin, bread crumbs, salt, and black pepper together in a large bowl with your hands; add vegetable mixture and loosely mix. Mix egg into sirloin mixture; add oats if mixture is too wet. Transfer sirloin mixture to the prepared baking pan and form into a loaf.
- Bake in the preheated oven for 20 minutes. Whisk ketchup, sugar, honey, and hot sauce together in a bowl; brush over meat loaf. Continue baking until no longer pink in the center, about 40 more minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let stand for 10 minutes before slicing.

MAX'S LOAF

Steps:
- Combine honey, buttermilk, water and salt in bowl of an electric mixer. Stir to melt honey. Add yeast, flour and toasted sunflower seeds.
- Start beating, using dough hook, at moderate speed for 15 minutes. If dough seems a bit sticky, do not add more flour. It will become firm as it is kneaded and in rising.
- Lightly flour work surface and put dough in center. Knead briefly and shape into ball.
- Lightly flour top and bottom of ball and place it on baking sheet. Cover loosely with plastic wrap and let stand in warm but not too hot place for 20 minutes. Knead briefly, gather into ball and let rise a second time about 40 minutes.
- Knead dough briefly, shaping into loaf or small rectangle. Blend egg yolk and milk. Brush top with egg mixture.
- Lay out untoasted sunflower seeds on flat surface. Invert loaf onto sunflower seeds.
- Lightly grease inside of 1 1/2-quart loaf pan with melted butter. Carefully place loaf in pan, arranging so seeds remain on top. Cover lightly with clean towel or plastic wrap. Let stand in nondrafty place for 45 minutes or until risen about an inch above top of pan.
- Preheat oven to 375 degrees. Place loaf in the oven and bake about 40 minutes.
- Unmold bread and let it stand seed side up on rack until cool.

MAX'S KILLER GARLIC BREAD
This bread gets rave reviews when I make it at Summer cookouts. I get requests for it all the time. It's not difficult but the addition of my "secret" ingredient really makes a difference over the standard garlic, butter and Parmesan cheese.

Steps:
- Split bread lengthwise.
- Mix softened butter, garlic, ranch dressing, and 1/2 the cheese together.
- Spread butter mixture on bread and sprinkle Italian seasoning and remaining cheese evenly over split loaf.
- Place on broiler pan or cookie sheet and broil 5-6 inches from heat for 2-3 minutes until nicely browned. Watch carefully to avoid burning.

EASY MEATLOAF
This is a very easy and no fail recipe for meatloaf. It won't take long to make at all, and it's quite good!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
- In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
- Bake at 350 degrees F (175 degrees C) for 1 hour.

This meatloaf cooks in about 1 hour and has minimal cleanup required. It's perfect for a weeknight meal. Pair with three-ingredient macaroni and cheese, and a vegetable to round out this meal.

- Preheat oven to 375 degrees F (190 degrees C).
- Combine ground beef, eggs, bread crumbs, onion, 2 tablespoons BBQ sauce, Worcestershire sauce, garlic powder, salt, and pepper in large bowl and mix by hand.
