SUCCOTASH SALAD

Steps:
- Bring a medium pot of salted water to a boil. Add the lima beans and boil until just tender, 15 to 20 minutes. Add the corn, return the water to a simmer and drain. Rinse under cold water to cool.
- Meanwhile, heat 1 tablespoon olive oil in a medium skillet over medium-high heat. Add the onions and cook, stirring often, until tender and golden in spots, 8 to 10 minutes. Let cool.
- In a large bowl, whisk together the cider vinegar, parsley, sage, nutmeg, 3 tablespoons olive oil, 1/2 teaspoon salt and 1/4 teaspoon pepper. Add the tomatoes, onions, lima beans and corn; toss to combine.
SUPER SIMPLE SUCCOTASH
Steps:
- Place a large skillet over medium heat, then add the bacon and cook until the fat has rendered and the bacon has crisped, about 10 minutes. Add the tomatoes, garlic and onions and cook until the onions have softened a bit, about 5 minutes. Add the corn and cook another 2 minutes. Add the lima beans and then remove from the heat. Stir in the basil and red wine vinegar, season with salt and pepper and serve.
CHEF JOHN'S SUCCOTASH
This may be America's oldest vegetable recipe, coming from a Narragansett Indian word, 'msickquatash,' which, according to the Merriam-Webster Dictionary, means 'boiled corn kernels.' When most of you hear the word succotash, you probably don't think of a delicious vegetable side dish, you probably think of the catchphrase, 'Sufferin' succotash!' But succotash really is a great and very underrated recipe.

Steps:
- Heat olive oil and butter in a skillet over medium heat. Cook and stir onion with a pinch of salt in hot butter and oil until onion is softened and slightly golden, 6 to 7 minutes. Add red bell pepper, jalapeno, and garlic; cook and stir until peppers are fragrant and softened, 3 to 4 minutes.
- Stir tomatoes, cumin, black pepper, and cayenne pepper into onion mixture; cook and stir until heated through, 1 to 3 minutes. Add zucchini, green beans, water, and a pinch of salt; cook until zucchini are almost tender, 5 to 6 minutes. Stir corn and lima beans into zucchini mixture until heated through, about 3 to 5 minutes more. Season with salt.

MCDONALD FAMILY BEEF SUCCOTASH
This is always a side dish with our meatloaf. It uses the same seasonings and compliments it quite well. It cooks at the same temperature and time. As with the meatloaf, I use a 2:1 ratio of 90%/80% lean ground beef. When making Beef Succotash and Meatloaf together, I use 3 lbs of ground beef total between the two recipies and split them accordingly. As you can see, we use sweet peas rather than lima beans for our succotash.

Steps:
- Crumble ground beef into a 2 quart casserole dish.
- Sprinkle season salt, onion salt, black pepper and garlic power over meat.
- Add peas and cream corn, mix well. Do not strain the peas, include all the juices from the can.
- Place three 1 tbsp pats of margerine on top of succotash mixture equally spaced apart.
- Bake for 75 minute at 375°F.
- Remove from oven, stir and let sit for 5 minutes.
- Serve in small bowls.

MCDONALD FAMILY MEATLOAF
As it seems like eveyone's else's recipie is, this recipe was passed down through my mom. I like to use a combination of lean and not-so-lean ground beef for this recipe. Personally, I use a 2:1 ratio of 90% lean and 80% lean ground beef. I suppose some may prefer to include mushrooms in the meatloaf, but that has never suited me. Although it's a lot messier, mixing the recipe with your hands provides an even consistency. I always serve this meatloaf with my version of Beef Succotash.

Steps:
- In a large bowl, mix ground beef and eggs.
- Using a screen, add mushroom gravy to meat. I use a screen to strain mushrooms out of the gravy. Try to add as much gravy as possible without adding mushrooms.
- Add season salt, onion salt, black pepper, and garlic powder. Mix well.
- Add bread crumbs until meat forms a ball that doesn't stick to the bowl.
- Shape into a loaf and place in a greased 3 quart loaf pan.
- For a crispier crust (and more flavor) sprinkle top of loaf with black pepper.
- Bake for 75 minutes at 375°F.
- Remove meatloaf from pan, place on platter, and serve.

- Cook bacon in large skillet on medium-high heat until crisp. Remove bacon with slotted spoon; drain on paper towel. Cook and stir onions in reserved bacon drippings until tender.

- Heat a large skillet over medium-high heat. Cook and stir turkey in the hot skillet until browned and crumbly, 5 to 7 minutes. Add peppers and onion; cook and stir until soft, about 5 minutes. SUCCOTASH PASTA
If you crave a new summer pasta, try this dinner inspired by Succotash-a hearty southern side dish made with sweet corn and lima beans. Our version substitutes zucchini for the pale green beans and adds some kick with crisped bacon and jalapeño.

- Cook bacon in a large straight-sided skillet over medium heat until crisp and browned, about 8 minutes. Transfer to paper towels. Remove fat from skillet.
- Cook pasta in a large pot of generously salted boiling water until al dente, about 2 minutes less than package instructions. Reserve 1 cup pasta water; drain. Meanwhile, heat 2 tablespoons oil in skillet over medium-high. When it shimmers, add onion, zucchini, and basil sprigs; season with salt and pepper. Cook, stirring occasionally, until vegetables are tender and golden brown in places, about 8 minutes.
- Reduce heat to medium; stir in remaining 1 tablespoon oil, corn kernels and milk, tomatoes, garlic, and jalapeño. Cook just until garlic is fragrant and tomatoes begin to release their juices, 1 to 2 minutes. Add vinegar; cook 30 seconds more. Add pasta and 1/2 cup reserved pasta water; continue to cook, tossing, until sauce thickens slightly and clings evenly to pasta, 2 to 3 minutes. Remove from heat; remove and discard basil sprigs. Stir in cheese. If needed, add more pasta water, a little at a time, until sauce evenly coats pasta again. Serve, topped with bacon, a drizzle of oil, more cheese, and basil leaves.
