Pasta and meatballs image

This is my version of pasta and meatballs. It has so much flavor and is more fun than what people are used to. Use a fattier minced meat so that your meatballs are not dry. If you want to save time, don't make meatballs! Make this pasta and meat sauce. To do so, just skip the step of forming the meatballs. Add the olive oil to the pan, sear the ground meat, add the rest of the ingredients and follow the rest of the directions from when you would have added the meatballs back into the pot. And done

1/2 bag bowtie noodles
2 pounds ground beef (preferably higher in fat)
2 tablespoons garlic powder
1 tablespoon garam masala spice blend
2 teaspoons salt (pink Himalayan)
1 teaspoon freshly ground black pepper
1 teaspoon turmeric powder
2 eggs
6 tomatoes (chopped)
1 onion (peeled and chopped)
6 cloves garlic (peeled and chopped)
1/2 chili pepper (chopped, seeds removed for less heat)
1/2 cup fire roasted peppers (optional)
1/2 cup baby spinach (chopped)
1/2 cup fresh basil (chopped)
1/2 cup kalamata olives
4 tablespoons extra virgin olive oil

Steps:

  • Fill a large pot with water and add 3 tablespoons of salt. Place on high heat and bring to a boil. Add ½ bag of pasta and cook 13 minutes. Strain and save ¾ cups of the pasta water. Drizzle the pasta with olive oil and a sprinkle of salt and set aside.
  • In a large bowl, add the ground meat, spices and eggs. Mix well and create small meatballs using the palms of your hands.
  • Prepare a large nonstick skillet on high heat. Add 2 tablespoons of olive oil and heat. Add the meatballs in batches and sear for three minutes per side. Remove from pan and set aside.
  • Add 2 more tablespoons of olive oil to the pan as well as the onions, garlic, chili peppers, spinach, tomatoes, basil and olives. Add 3/4 cups of pasta water. Cover and cook for ten minutes on medium heat, stirring often.
  • Add the meatballs back in and gently cover with tomato mixture. Cover and cook 5 more minutes. Add to pasta and add 1 teaspoon of salt and serve.

  • Cook pasta according to package directions. Meanwhile, in a small saucepan, melt butter. Stir in the oil, flour, garlic and seasonings until blended. Gradually add the milk, broth and water. Bring to a boil; cook and stir until slightly thickened, about 2 minutes., Remove from the heat; stir in cheese and sour cream. Drain pasta; toss with sauce.

1 teaspoon vegan worcestershire
1 tablespoon soy sauce
¼ teaspoon ground nutmeg

3 cups vegetable broth
14 oz full-fat coconut milk, 1 can
1 tablespoon vegan worcestershire
salt, to taste

4 cups bow tie pasta, or pasta of choice
fresh parsley, for ganish

Steps:

  • In a large bowl, combine the mushrooms, beans, onion, bread crumbs, parsley, garlic, dried rosemary, Worcestershire sauce, soy sauce, nutmeg, liquid smoke, salt, and pepper. Mix well with a fork, mashing the beans a bit to form a paste.
  • Heat the canola oil in a large pot over medium-high heat.
  • Roll the "meatball" mixture and into golf ball-sized balls. Place the balls in the pot and cook for 1 minute on each side until browned.
  • Add the vegetable broth, coconut milk, Worcestershire sauce, salt, pepper, and flour, and gently stir until evenly combined.
  • Bring the liquid to a boil, then add the pasta. Stir constantly until the pasta is cooked and the liquid has reduced to a sauce that coats the noodles and meatballs, 7-8 minutes.
  • Garnish with parsley.
  • Enjoy!

1 head broccoli, cut into florets
¼ cup grated Parmesan cheese

Steps:

  • Warm olive oil in a small frying pan over low heat. Slowly cook garlic in oil until golden, about 2 to 3 minutes. Be very careful not to burn garlic. Stir in lemon juice, and season with salt and pepper.
  • Meanwhile, cook pasta in a large pot of boiling salted water. About 5 minutes before pasta is done, drop broccoli into the pasta water. Continue to cook until pasta is cooked and broccoli is crisp-tender. Drain.
  • Toss pasta, broccoli, and lemon sauce in a large bowl. Sprinkle with grated Parmesan cheese.

1 egg
1 tablespoon kosher salt, divided, or to taste

2 tablespoons canola oil
2 cups beef broth
2 cups milk
1 tablespoon worcestershire sauce
4 cups egg noodle
1 cup shredded parmesan cheese
½ cup fresh parsley, chopped

Steps:

  • In a large bowl, combine the ground beef, breadcrumbs, onion, egg, ½ tablespoon salt, and ½ tablespoon pepper, mixing until evenly combined.
  • Heat the canola oil in a pot over medium-high heat. Take about a golf-ball size of the meatball mixture and roll it into balls. Place the meatballs into the pot, cooking for one minute. Flip the meatballs.
  • Add the beef broth, milk, remaining ½ tablespoon salt, remaining ½ tablespoon pepper, and Worcestershire sauce and give it a stir.

This is one of those super easy delicious weeknight meals. The pasta actually is cooked in the oven to add flavor. You can use homemade meatballs or precooked frozen meatballs. Yummy!

14 ounces frozen precooked meatballs (Approximately 27 Meatballs)
24 ounces pasta sauce
2 cups water
1 green bell pepper, Diced
1 onion, Diced
1 tablespoon butter
2 1/2 cups elbow macaroni, Uncooked
1 teaspoon italian seasoning
2 cups shredded mozzarella cheese
1/4 cup shredded parmesan cheese

Steps:

  • Preheat oven to 375 Degrees and Grease a 3 Quart Casserole Dish.
  • Melt the 1 TBSP Butter over medium heat and add the green bell pepper and onion. Cook until tender, approximately 5 minutes.
  • Pour the jar of pasta sauce, the 2 cups of water, the package of frozen meatballs, the 2 1/2 cups of uncooked macaroni, 1 TSP Italian Seasoning directly into the casserole dish. Add the onion and green pepper. Stir all ingredients until combined.
  • Bake covered for 45 minutes at 375 Degrees. Remove from oven after the 45 minutes is up and sprinkle the 2 Cups of Mozzarella and 1/4 Cup of Parmesan Cheese over the top. Place back in the oven uncovered and broil on high for around 3 minutes or until the cheese is bubbly.
  • This will make 4 Huge Servings or 6 Normal Servings. Freezes Well!

4 cups broth
1 cup water
3 sliced carrots
1 zucchini, cut lengthwise then sliced
1 summer squash, cut lengthwise then sliced
1 chopped red pepper
4 -8 ounces cooked bow tie pasta
grated parmesan cheese

Steps:

  • Combine all ingredients except pasta in crock pot.
  • Cook on low 8 to 10 hours.
  • Add salt to taste.
  • Add cooked pasta and heat through.
  • Top each bowl with grated Parmesan cheese.
  • Do not be afraid to substitute different veggies for your own preference.
