MEATBALL STROGANOFF WITH NOODLES

My great-nephews and great-niece ask me to fix this dish as their special birthday meal. With homemade noodles and meatballs, this saucy Stroganoff is hard to beat. -Carol Schurvinske, Geneseo, Illinois

2 cups all-purpose flour
1 teaspoon salt
3 large egg yolks
1 large egg
6 tablespoons water
MEATBALLS:
1 large egg, lightly beaten
2 tablespoons ketchup
1/4 cup quick-cooking oats
1 tablespoon finely chopped onion
1/2 teaspoon salt
1 pound ground beef
SAUCE:
2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
1 cup sour cream
1 cup milk
1 tablespoon paprika
2 quarts water
1 teaspoon salt
1 tablespoon butter
1 tablespoon minced parsley

Steps:

  • In a large bowl, combine flour and salt. Make a well in the center. Beat egg yolks, egg and water; pour into well. Stir together, forming a dough. Turn dough onto a floured surface; knead 8-10 times. Divide into thirds; roll out each as thin as possible. Let stand for 20 minutes or until partially dried. Cut into 1/4-in. strips, then into 2-in. pieces; set aside., In another large bowl, combine the egg, ketchup, oats, onion and salt. Crumble beef over mixture; mix well. Shape into 1-1/2-in. balls. , Place meatballs on a greased rack in a shallow baking pan. Bake, uncovered, at 400° for 10-15 minutes or until no longer pink; drain., In a large saucepan, combine the soup, sour cream, milk and paprika; heat through. Add meatballs; cover and cook until heated through, stirring frequently., In another saucepan, bring water and salt to a boil; add noodles. Cook for 12-15 minutes or until noodles are tender; drain. Toss with butter and parsley. Serve with meatballs.

1 (1 lb) bag meatballs, precooked, frozen and thawed
3 tablespoons butter, divided
1 tablespoon flour
1 (5 1/2 ounce) box noodles, romanoff
1 2/3 cups milk
2 teaspoons parsley, chopped

Steps:

  • Make a sauce by melting 2 tablespoons of the butter in a saucepan. Stir in flour and flavoring packet from box of Noodles Romanoff. Add milk and cook until thickened.
  • Add meatballs to sauce and heat through.
  • Cook the noodles from the box separately. Drain. Toss with parsley flakes and remaining butter.

This is an old recipe handed down based on Betty Crocker's boxed Noodles Romanoff. It has since been modified to get the sauce to taste as close to the original BC as possible - and after trying many other Romanoff recipes, I have found this one to be genuinely as close as you can get. The hardest part will be finding the Kraft Macaroni & Cheese (Cheese Topping). It is a 3 oz. blue can found near the canned parmesan cheese. I'm able to find it at my local Super WalMart, but if not available for you, just substitute with the cheese powder package found in boxed Kraft Mac & Cheese.

1 lb ground beef
3 tablespoons instant minced onion
1/2 cup Italian seasoned breadcrumbs
1 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon Worcestershire sauce
1 egg
1/4 cup milk
2 tablespoons butter
1 tablespoon flour
1/4 cup kraft macaroni and cheese mix
1 1/2 cups milk
2 tablespoons sour cream
1/2 teaspoon minced garlic clove
1 (8 ounce) package egg noodles
2 tablespoons butter
2 teaspoons parsley flakes

Steps:

  • MAKE AHEAD MEATBALLS.
  • Heat oven to 400°F.
  • Mix all ingredients thoroughly, shaping into 1" balls. Place in ungreased jelly roll pan.
  • Bake about 10 minutes or until browned. Cool meatballs in pan about 5 minutes.
  • Either freeze in 1 quart freezer container, or set to the side to use in Noodles Romanoff.
  • SAUCE.
  • Melt butter in large skillet. Remove from heat.
  • Blend in flour, cheese.
  • Gradually stir in milk.
  • Heat to boiling, stirring constantly with a whisk (this will help beat out the lumps). Boil & stir 1 minute.
  • Add meatballs. Reduce heat. Cover & simmer for 10 minutes.
  • While meatballs simmer, cook egg noodles as directed on package. Drain & stir butter and parsley flakes into noodles.
  • Serve meatballs with sauce over noodles.
  • **Note**.
  • This does not make a lot of cheese sauce, so you may need to either double the sauce, or adjust the milk & flour to your desired consistency. I prefer to keep mine at about medium thickness.

1 lb lean (at least 80%) ground beef
2 cloves garlic, minced
1/4 cup grated Parmesan cheese
1/4 cup milk
1 container (16 oz) reduced-fat sour cream (about 2 cups)
3 tablespoons chopped fresh parsley
2 teaspoons poppy seed

Steps:

  • Cook noodles as directed on package; drain and cover to keep warm.
  • Meanwhile, in 10-inch skillet, cook ground beef over medium-high heat 5 minutes, stirring frequently; drain. Stir in garlic. Reduce heat to medium; cook 1 to 2 minutes, stirring occasionally, until beef is thoroughly cooked.
  • Reduce heat to medium-low. Stir in cheese and milk. Cook 5 to 6 minutes, stirring frequently, until mixture is thoroughly heated. Stir in sour cream, cooked noodles, parsley and poppy seed. Cook 1 to 2 minutes, stirring frequently, until mixture is thoroughly heated.

2 cups sour cream
¼ cup grated Parmesan cheese
1 tablespoon chopped fresh chives
1 teaspoon salt
⅛ teaspoon ground black pepper
1 clove crushed garlic
2 tablespoons butter
¼ cup grated Parmesan cheese

Steps:

  • In a large pot with boiling salted water cook egg noodles until al dente. Drain.
  • In a large bowl mix together the sour cream, 1/4 cup of the grated Parmesan cheese, chives, salt, ground black pepper, and garlic.
  • Stir in butter or margarine to hot egg noodles. Stir in sour cream mixture.
  • Arrange noodles on warm platter and sprinkle with remaining 1/4 cup of grated Parmesan cheese.

Steps:

  • Boil noodles in salted water until done. Follow noodle package directions for the time. Drain noodles and return them to the pot. Add butter. Stir until melted in the noodles. Add all remaining ingredients and serve hot. If you have any leftovers, reheat them with a tablespoon or 2 of milk, as the cheese mixture soaks into the noodles.

1/2 cup packed brown sugar
1/4 cup cider vinegar
3/4 teaspoon ground ginger
1/4 teaspoon ground cloves

  • In a large bowl, combine the first five ingredients. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. Place meatballs on a greased rack in a shallow pan.
