MEATBALLS WITH PESTO MASH
A rustic Italian-style family dinner, with herby mashed potatoes

Steps:
- Mix the mince with half the chopped basil, the Worcestershire sauce and some seasoning, then use your hands to shape into 16 meatballs. Heat a non-stick frying pan, add the oil, then fry the meatballs, turning, for 5 mins until browned. Tip in the passata and remaining chopped basil. Simmer gently for 10 mins until the meatballs are cooked through.
- Meanwhile, boil potatoes for 10-15 mins until tender. Drain well, then return to the saucepan over a low heat and mash - leaving the heat on will help to dry out the potatoes for a fluffier mash. Stir in the milk, then marble through the pesto. Pile the mash onto 4 plates, spoon over meatballs and serve scattered with the reserved basil.

- Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a sheet pan.
- Combine turkey, bread crumbs, pesto, Pecorino Romano cheese, egg, salt, and pepper in a mixing bowl and mix with your hands until well combined.
- Roll mixture into small, walnut-sized meatballs. Place onto the prepared pan.
- Bake in the preheated oven until no longer pink in the centers, 20 to 25 minutes.

- Bake meatballs as directed on package or in recipe. Set aside.
- Cook fettuccine as directed on package. Drain and set aside.
- Meanwhile, in large skillet cook bell pepper and onion stir fry as directed on package, about 7-9 minutes.
- When cooked, stir in meatballs, cooked and drained fettuccine, pesto, and half and half.
- Cook over medium heat for a few minutes, stirring constantly, until mixture is hot.

- You can subsititute fresh pepper & onion, and any other ingredients. if you choose.

- 1. Preheat the oven to 200°C/ fan180°C/gas 6. Line a large baking tray with baking paper.
- 2. Put the pine nuts into a dry, non-stick pan and toast over a high heat for 1-2 minutes, tossing continuously, until golden brown. Spill onto a chopping board and leave to cool slightly. Chop roughly and set aside.
- 3. Put the mince in a large bowl and season well. Add the pine nuts, garlic, shallots and basil. Use your hands to squeeze the mixture together, then roll into about 24 walnut-sized balls. Place on the lined tray and bake for 15 minutes, until cooked through.
- 4. Meanwhile, bring a large pan of salted water to the boil, add the pasta and cook according to packet instructions. Drain, reserving some of the liquid. Return the pasta to the pan and stir in the pesto and a little of the reserved liquid. Season, toss the meatballs into the pasta and serve.

I wanted something new to do with my ground lean turkey meat and for some reason pesto popped into my head. Who would have thought that pesto meatballs were going to be absolutely amazing? These delicious meatballs coupled with homemade sauce and wheat pasta are a great traditional dinner with a wonderful twist.

- Preheat the oven to 375 degrees F (190 degrees C). Grease a large baking pan with cooking spray.
- Heat olive oil in a large skillet over medium heat. Add onion and garlic; cook and stir until browned, about 5 minutes. Add spinach; mix until fully cooked, 3 to 5 minutes.
- In the meantime, combine turkey, pesto, egg whites, oatmeal, Parmesan cheese, salt, and pepper in a large mixing bowl. Add onion-spinach mixture and mix well. Shape mixture into balls using an ice cream scoop. Place in the prepared pan.
- Bake in the preheated oven until no longer pink in the center, 30 to 35 minutes.
