The vegetarian version of a classic baked ziti is loaded with herbs and three kinds of cheese for amazing taste without the meat!

- Heat oven to 375º F
- Prepare pasta according to package directions; drain
- In large bowl, stir together hot cooked pasta, 1½ cups pasta sauce, ricotta cheese, mozzarella cheese, parsley, egg, oregano, garlic powder, salt and pepper
- In 13 x 9 x 2-inch baking dish, spoon pasta mixture; top with remaining 1½ cups pasta sauce
- Sprinkle with Parmesan cheese; cover with foil
- Bake 30 minutes or until hot and bubbly

Steps:
- Preheat oven to 350 degrees F
- Cook the penne pasta according to package directions.
- Drain the pasta in a colander.
- In a large bowl, mix the ricotta cheese, 1 cup mozzarella cheese, 1/2 cup parmesan
- cheese, eggs, garlic, parsley and Italian seasoning to a large bowl and stir to combine well
- In a 9x13 baking dish, add half of the sauce and spread evenly all around the dish.
- Add the cooked/ drained pasta to cheese mixture and toss well to coat
- Add the pasta mixture to the baking dish spread evenly.
- Top with remaining sauce, then the other 1 cup mozzarella and 1/2 cup parmesan cheese.
- Bake in the oven for 35 minutes until the sauce is bubbling and the cheese is melted and slightly brown.
- Remove from oven and let sit for 5 minutes

- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with cooking spray.
- Bring a large pot of lightly salted water to a boil. Add ziti and cook, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain and transfer to a large bowl.
- Heat olive oil in a skillet over medium-high heat. Saute spinach and mushrooms in the hot oil until soft, about 5 minutes. Remove from heat and add to ziti.
- Add ricotta cheese, goat cheese, and 1/2 of the mozzarella cheese to the ziti mixture; combine thoroughly. Mix in spaghetti sauce and transfer to the prepared baking pan. Sprinkle with remaining mozzarella cheese.
- Bake, uncovered, in the preheated oven until bubbly and cheese is melted, about 15 minutes.

- Cook pasta according to package directions. Drain pasta; set aside. In a small bowl, combine the egg, ricotta and 1/4 cup Parmesan cheese. , Spread 1 cup spaghetti sauce in a 13x9-in. baking dish coated with cooking spray. Top with a third of the pasta, half of the ricotta mixture, 2/3 cup mozzarella cheese, 1 tablespoon Parmesan cheese and 1 cup sauce. Repeat layers of pasta, ricotta mixture and mozzarella cheese. - Preheat the oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add ziti and cook, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Rinse and drain.
- Mix mozzarella cheese, ricotta cheese, 1/2 cup Parmesan cheese, Romano cheese, onion, parsley, egg, garlic, basil, oregano, thyme, salt, and pepper together in a large bowl. Stir in drained pasta and 2 cups of marinara sauce.
- Pour 1 cup marinara into the bottom of a 9x13-inch baking dish and spread to coat. Pour pasta and cheese mixture into the pan, top with remaining marinara, and sprinkle with remaining Parmesan cheese.
