SOUR CREAM COFFEE CAKE I
My mother-in-law gave this recipe to me, and I get compliments all the time.

Steps:
- In a large bowl, blend together butter or margarine, white sugar, 1/2 cup brown sugar, sour cream, eggs, and vanilla. Add to these ingredients the flour, baking powder, and soda. Blend until smooth.
- To Make Filling: Combine cinnamon and 1/4 cup brown sugar.
- Grease and flour a large Bundt pan. Pour 1/2 of the batter into the prepared pan. Sprinkle the cinnamon sugar mix on top of the batter in the pan, and cover with the remaining batter.
- Bake at 350 degrees F (175 degrees C) for 45 to 50 minutes. Cool.
- Make a thick glaze by mixing together confectioners' sugar with 2 to 3 tablespoons milk until smooth. Pour over cooled cake, and add sprinkles if desired.

Steps:
- Heat oven to 170C/150C fan/gas 3. Line 18 holes in 2 bun tins with fairy cake cases. Beat the sugar with the butter until light and creamy. Beat in the eggs, one by one, adding 1 tbsp flour at the same time. Beat in the rest of the flour along with the espresso. Spoon into the cake cases and bake for 17 mins, swapping the trays after 12 mins. Cool on a wire rack.
- To make the icing, beat the butter until pale, then gradually beat in the icing sugar, followed by the espresso and the melted chocolate. When the cakes are completely cool, swirl the icing generously on top and decorate with coffee beans, if you like.

This is an OLD recipe from Armour Star Lard handed down from my grandmother. My grandfather used to work for Armour. I substitute shortening for the lard!

- Stir dry ingredients together.
- Combine slightly beaten eggs and milk and add to dry ingredients.
- Add melted shortening and stir until ingredients are well mixed.
- Fill greased muffin tins 2/3 full of batter.
- Combine topping ingredients and and sprinkle evenly over each cake.
- Bake at 375* for 20-25 minutes.
- For the Vegetarian option use Vegetable shortening.

- Heat oven to 400°F. Spray 36 mini muffin cups with baking spray with flour.
- In medium bowl, stir together 2 cups Bisquick mix, the milk, egg and granulated sugar until well blended. Divide batter evenly among muffin cups.
- In small bowl, mix all topping ingredients with fork until crumbly. Sprinkle topping over batter in each cup.
- Bake 9 to 12 minutes or just until tops spring back when lightly touched. Remove from pans to cooling racks. Serve warm or cool.

- Preheat oven to 325°. Line 24 muffin cups with foil liners. Mix wafer crumbs and sugar; stir in butter and espresso. Press by tablespoonfuls onto bottoms of liners. , For filling, melt chocolate in a microwave; stir in espresso until blended. In a large bowl, beat cream cheese until smooth; slowly stir in condensed milk until blended. Stir chocolate mixture into cream cheese mixture until combined. Add eggs; beat just until blended., Fill prepared cups with 1/4 cup cheesecake batter. Bake until centers are almost set, 17-20 minutes. Cool in pans 10 minutes before removing to wire racks to cool completely. Steps:
- Preheat oven to 325°F. Butter all surfaces of a 6-cup mini Bundt pan with 1-cup molds. Combine brown sugar, almonds, and cinnamon; set aside. Beat together butter, granulated sugar, eggs, vanilla, and yogurt in a small bowl. Mix flour, baking powder, and soda in large bowl. Add the yogurt-and-egg mixture, and stir until just blended. Place about 2 tbsp batter in bottom of Bundt molds. Divide brown sugar filling evenly among molds. Fill molds evenly with remaining batter. Bake 25 to 30 minutes until cakes are firm to the touch and edges are brown and pull away from sides of pan. Cool 5 minutes in pan. Turn out on a rack and cool with flat side down. Lightly dust with confectioners' sugar before serving.
