EASY MEATY 7-LAYER TACO DIP
A favorite party appetizer that never lasts long! It has much more layers than most taco dips, but is still very simple to make! Make sure you drain the tomatoes well, or it will ruin your dip with its juices.

I love sharing this dip with my friends. I do want to make sure that I am giving them something healthy to snack on as well. I changed this with some no-fat-added beans and more veggies.

SEVEN LAYER DIP I
This is a great party dip because it's best served at room temperature. You can set it out on the table early and finish cooking the rest of your meal.

Steps:
- In a large skillet, brown ground beef. Set aside to drain and cool to room temperature.
- Spread the beans into the bottom of a 9x13 inch serving tray that is about 1 1/2 inches deep. Sprinkle 2 cups of shredded cheese on top of beans. Sprinkle beef on top of cheese. Spread sour cream very slowly on top of beef. Spread guacamole on top of sour cream. Pour salsa over guacamole and spread evenly. Sprinkle remaining shredded cheese. Sprinkle black olives, tomatoes, and green onions on top.
- You can serve this dish immediately, or refrigerate it over night and serve cold. I think it tastes better at room temperature.

Steps:
- Line a 12-cup bundt pan with plastic wrap and press the wrap into the bottom and sides to fit snugly. Put the ground beef, taco seasoning, 1/2 teaspoon salt and a few grinds of pepper in a large nonstick skillet over medium heat and cook, breaking up the meat, until browned, 8 to 10 minutes. Drain the grease, transfer to a bowl and let cool for about 15 minutes.
- Put the refried beans in a small saucepan over medium heat and cook, stirring frequently, until warm and bubbly, 2 to 3 minutes. Stir in about 1/3 cup of the sour cream, season with salt and pepper and cook until creamy, 1 minute. Let cool for about 15 minutes.
- Add the ground beef to the bundt pan, then the refried beans. Top with the lettuce. Put the remaining sour cream in a pastry bag and pipe it over the lettuce until completely covered. Top with the tomatoes and gently press to create an even later. Top with the guacamole and cover with plastic wrap, smoothing the sheet on the surface of the guacamole without any air pockets. Refrigerate for 2 hours.
- Place a large serving dish on top of the bundt pan. Tap the top of the bundt pan several times. Invert the dip onto the serving dish and remove the plastic wrap. Drizzle the salsa con queso on the top and sides of the dip.
- Put the salsa in a small glass and place in the hole in the center of the dip. Place tortilla chips around the dip for serving.
TACO DIP AKA 7 LAYER DIP
This dish is loved by all who try it -if you like mexican food of course. It's a bit different from the other recipes posted so I thought I'd include it. It's a staple sunday football munchie and it's quite easy to make so you don't mind whipping it up. It makes a lot so it's good for a crowd and I often get requests for the recipe.

Steps:
- Mix refried beans & taco seasoning with an electric mixer and spread into the bottom of a 9x12 inch pan.
- Mix sour cream & softened cream cheese with an electric mixer and spread over bean layer.
- Spoon chopped chilies, distributing evenly over the cream cheese/sour cream layer.
- Sprinkle chopped green peppers, scallions & black olives as your next layer.
- Next we add the salsa, but I usually drain it a bit in a colander because too much liquid will cause the dip to be soggy. Distribute evenly across the pan.
- Sprinkle with shredded cheese & refrigerate until ready to serve.
- Serve with tortilla chips. The dip is rather heavy so stronger chips are best. Tostitos Gold or scoops work best.
