1 pound ground beef
1 ½ cups medium salsa
¼ cup grated Parmesan cheese
¼ cup shredded Monterey Jack cheese
1 egg
1 cup crushed saltine crackers

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  • In a large bowl, mix together ground beef, salsa, cheese, egg, and cracker crumbs. Form into a loaf, and place in prepared pan.
  • Bake for approximately 1 hour, or until done. Internal temperature should measure at least 160 degrees F (70 degrees C), the meat should be browned through, and the juices clear.

2 stalks celery, small dice
1 1/2 Spanish onions, small dice
1/4 cup canola oil
5 pounds ground chicken
4 cups breadcrumbs
1/2 cup heavy cream
1/4 cup soy sauce
1/4 cup steak sauce, such as A-1
2 tablespoons salt
4 eggs, lightly beaten
homemade ketchup, barbeque sauce, ketchup, Sriracha

Steps:

  • Sweat the celery and onions in the oil in a medium saucepot over medium heat until well glazed, 3 to 4 minutes. Let cool.
  • Preheat the oven to 325 degrees F. Mix the cooled vegetables, chicken, breadcrumbs, heavy cream, soy sauce, steak sauce, salt and eggs together well, until the mixture is uniform. Place into two parchment-lined and greased 9- by 4-inch loaf pans. Bake until the loaves reach an internal temperature of 150 degrees F, 25 to 35 minutes.
  • Cool, and then portion into 2-ounce bize-size pieces. At Yardbird we make our ketchup from scratch, but you can pick your favorite barbecue sauce, ketchup, Sriracha or any other favorite condiment to serve alongside.

I went looking for meatloaf for dinner, couldn't find one to use up a few things I had in the fridge, so made my own up. It's good!

1 tablespoon oil
2 slices bacon, diced
1 medium onion, chopped
3 cloves garlic, minced
3 slices bread, soaked in
milk, then crumbled
1/2 kg ground pork
1/2 kg ground beef
2 eggs, beaten
1 cup grated cheddar cheese
1 (27 g) packet onion soup mix
3 tablespoons chopped pickled jalapeno peppers
2 tablespoons chopped parsley
1 teaspoon dried thyme
1/4 cup tomato ketchup
1/4 cup commercial barbecue sauce
1 tablespoon mild chili sauce
1/4 cup tomato ketchup
1/4 cup commercial barbecue sauce

Steps:

  • Heat the oil in a fry pan, add the bacon, onion and garlic and cook over a moderate heat until the onion is softened.
  • Remove from the heat.
  • Mix the remaining ingredients and the onion, bacon mix together in a large bowl-I find this best done by hand.
  • Place in a 9inch long by 3 inch wide and deep loaf dish, patting down very firmly and shaping the top nicely.
  • Bake in a moderate oven for 1 1/2 hours, draining any accumulated fat about half way through.
  • Mix the topping ingredients together, spread over the meatloaf and return to the oven for the final 30 minutes of cooking.
  • Allow the meatloaf to stand about 10 minutes before slicing.

1 medium yellow onion, chopped
1 stalk celery, chopped
1/2 medium sweet green pepper, cored,seeded and chopped
2 green onions, minced
1 clove garlic, minced
2 bay leaves
3/4 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
1/4 teaspoon ground cumin
1/4 teaspoon nutmeg
1 tablespoon Worcestershire sauce
1/4 teaspoon hot red pepper sauce
2 tablespoons unsalted butter or 2 tablespoons margarine
1/4 cup milk
1/4 cup ketchup
1/2 cup fine dry breadcrumb
1 lb lean ground beef
8 ounces lean ground pork shoulder
2 eggs

Steps:

  • Preheat the oven to 375F.
  • Mix onion, celery, green pepper, green onions, garlic, bay leaves, salt, peppers, cumin, nutmeg, Worcestershire, hot red pepper sauce in a medium size bowl.
  • Melt the butter in a heavy skillet over moderate heat.
  • Add the vegetable spice mixture and cook uncovered for about 6 minutes, stirring constantly, until the onions and peppers are soft.
  • Remove from the heat and cool slightly.
  • Discard the bay leaves.
  • Stir in the milk, ketchup and bread crumbs In a large bowl, combine the beef, pork, eggs and bread crumb mix.
  • Pack the meat mixture into a greased 9 X 5 X 3 loaf pan.
  • (*Atthis point the meatloaf can be stored in the freezer for up to 3 months to use when you need a dish already to shove in the oven. Thaw before cooking) Bake the meatloaf, uncovered for 50- 55 minutes or until it is dark brown and pulls away from the sides of the loaf pan.
  • Slice to desired thickness and serve.
