1/4 cup roasted red pepper hummus
1/2 cup zucchini strips, sliced lengthwise
1 tbsp. sliced, pitted Kalamata, black, or green olives
1/4 cup shredded carrots
4 thin tomato slices
1/2 cup shredded reduced-fat mild cheddar
1/2 cup shredded lettuce

Steps:

  • 1. Spread hummus on the lower third of the wrap. 2. Layer zucchini, olives, carrot, tomato, cheese, and lettuce in the center of the wrap. 3. Roll the wrap from the bottom toward the center. Fold the sides in, then roll the entire sandwich into a neat pocket. 4. Cut wrap in half on an angle.

1 1/2 cups baby spinach leaves
1 1/2 cups chopped cooked turkey
6 tablespoons chopped cucumbers
6 tablespoons sliced pitted kalamata olives or 6 tablespoons black olives
6 tablespoons chopped tomatoes
6 tablespoons crumbled reduced-fat feta cheese

Steps:

  • Spread a tortilla with 2 tablespoons hummus to within 1/4 inch of edge. Cover with 1/4 cup spinach leaves, pressing lightly into spread. Top with 1/4 cup turkey and 1 tablespoon each cucumber, olives, tomatoes and feta cheese. Roll up tortilla tightly.

Steps:

  • Heat greased grill to medium heat.
  • Grill chicken 6 to 8 min. on each side or until done (165ºF).
