BOOZY MINTED MELON BALLS
Melon balls were the quintessential summer party food when I was growing up, but it wasn't until I was out of college that I had my first melon ball "salad." My current favorite is this recipe that has a mojito-like splash over the melon. Dreamy!

Steps:
- Place the watermelon and cantaloupe balls in a baking dish in a single layer. In a bowl, whisk together the lime juice, rum and honey until combined. Pour the lime mixture over the melon balls and toss to coat. Add the mint leaves. Let sit for 2 to 3 hours in the fridge, flipping the balls once or twice if desired.
- To serve, scoop the melon balls into a large bowl and pour the rum mixture over top. Cover with a sprinkling of fresh mint leaves.
MELON BUBBLES
Melon balls suspended in orange gelatin are topped with whipped topping. Served in stemmed glasses, this elegant dessert resembles champagne.

Steps:
- Stir boiling water into dry gelatin mix in large bowl at least 2 min. until completely dissolved. Stir in club soda. Refrigerate 1-1/2 hours or until thickened (spoon drawn through leaves definite impression).
- Add melon balls to gelatin; stir. Spoon into eight champagne glasses or dessert dishes.
- Refrigerate 3 hours or until firm. Top with dollops of the whipped topping just before serving. Store any leftover desserts in refrigerator.

MELON BUBBLE TEA (BOBA TEA)
This looked too good not to post. Be all the rage while drinking the latest Asian trend in teas! How silly, huh? Drink it because it's GOOD! *Large, specialty tapioca pearls specifically designed for bubble teas are available in Asian markets and gourmet food stores. If using straws, make sure they have a large diameter.

Steps:
- Combine green tea with sugar and set aside.
- In a medium saucepan, bring water to boil over high heat; add tapioca pearls. Stir lightly and let pearls float to top. Reduce heat to low and simmer, uncovered, 25 minutes. Remove from heat and let pearls sit in water 25 minutes until chewy and translucent.
- Drain and rinse under cold water. Combine in medium bowl with sweetened tea. Refrigerate until needed.
- Blending in 2 batches, combine melon, ice cubes, orange juice and coconut milk in blender or food processor. Process until smooth.
- Place about 1/4 cup tapioca mixture in bottom of large glass. Fill with melon mixture. Serve with straws if desired.
