BANANA BREAD WITH SOUR CREAM



Banana Bread with Sour Cream image

The moistest banana bread you'll ever taste!

1/3 cup butter (softened)
1 1/4 cups white sugar
2 eggs
4 large very ripe bananas (mashed)
1 cup sour cream
1 tsp vanilla extract
2 1/2 cups all purpose flour (or white whole wheat)
1 tsp cinnamon
2 tsp baking soda
1/2 tsp salt
1 cup walnuts chopped (optional)

Steps:

  • Preheat oven to 325 degrees F and generously grease two loaf pans that are approximately 8 1/2 x 4 1/2 inches in size.
  • Cream butter and sugar in a large bowl. Add the eggs and mix well. Add sour cream, mashed bananas, vanilla and stir to combine. Add the flour, salt, cinnamon and baking soda to the wet ingredients and stir until just combined. Fold in the walnuts, if using.
  • Divide the batter evenly between prepared loaf pans. Bake for 1 hour or until a toothpick inserted in the center comes out clean.

⅔ cup milk
2 eggs
2 ½ cups all-purpose flour
1 cup white sugar
2 ½ teaspoons baking powder
½ teaspoon baking soda
1 teaspoon salt
⅔ cup mashed bananas
½ cup chopped walnuts

Steps:

  • Spray bread machine pan with vegetable oil spray.
  • Premix ingredients in order listed. Place mixture in bread machine pan.
  • Select the Quick Bread/Cake cycle. Press Start. Check after 1 minute to see if mixture is well blended.
  • Cook until cake cycle stops. Remove pan, and cool completely before removing bread from pan.

1/4 cup chopped walnuts (optional)

Steps:

  • Mix 1 cup flour, sugar, baking power, baking soda, and salt.
  • Add mashed bananas, butter, and milk.
  • Mix for 2 minutes.
  • Add eggs and remaining flour, beat till blended.
  • Stir in nuts.
  • Poor batter into a greased 8x4x2 inch loaf pan.
  • Bake at 350°F for 55-60minutes.
  • Cool for 10 minutes.
  • Remove from pan.

My family loved it and it was exactly what I was looking for so here it is. I hope you like it as much as we do.

4 large eggs
2 cups mashed ripe bananas
2 cups flour
2 cups sugar
1 (3 1/2 ounce) box French vanilla instant pudding
1 teaspoon salt
1 teaspoon baking soda

Steps:

  • Preheat oven to 325°F.
  • Mix oil, eggs and mashed bananas.
  • Combine remaining ingredients and add to banana mixture.
  • grease and flour pans,place on baking sheet.
  • Bake in a 2/ 9 x 5 x 3 inch pan 0r 4 mini loaves [mini's will take about 45 minutes] for 1 hour or until bread tests done.

I tweaked this recipe from a variation of the Amish Friendship bread, the one that got passed around in baggies.This one does not involve weeks of "fermentation', thank goodness, but became such a hit in my family, that now every holiday, I get requests for shipments of this bread.

3 cup(s) all purpose flour
2 cup(s) sugar
1 box(es) lg 5.1 oz of vanilla instant pudding
2 teaspoon(s) cinnamon
1 1/2 teaspoon(s) baking powder
1/2 teaspoon(s) baking soda
1/2 teaspoon(s) salt
1 1/2 cup(s) milk (whole, 1% or 2%)
1 cup(s) oil (or 1/2 c oil and 1/2 c applesauce)for less fat
1 1/2 teaspoon(s) vanilla extract
3 - eggs
4-5 - ***extremely ripe bananas, frozen, then thawed
1/2 cup(s) chopped pecans or walnuts (optional)
- cinnamon sugar, for coating pans

Steps:

  • Preheat oven to 325 degrees.Prepare loaf pans by spraying cooking spray, the coating with cinnamon sugar. This recipe will make either 2 large loaf pans, 3 medium, or 6 small, or mini loaf pans.
  • Add all dry ingredients (except nuts) into a large bowl and stir together until well mixed.
  • Add milk, oil(or oil and applesauce), eggs,and vanilla and mix well with beater or stand mixer.Batter will be slightly thick. Add thawed bannas including juice, and mix well. stir in nuts (optional).
  • Pour into prepared pans and bake for 40min- 1hr 15min, depending on size of pan. I prefer light colored or shiny aluminum to the darker pans, as they tend to burn the bottom. Use knife or toothpick to test for doneness. Cool for 15-20 min, then wrap in foil, if not eaten right away, to preserve moistness. I have wrapped these and shipped them this way by 2-3 day mail, and they arrive just as moist as if they were fresh from the oven!
  • ***For the moistest results, I let the bananas completely blacken, then freeze them until I am ready to use them. Then I thaw them out in the microwave, and pour into batter, juice and all. This not only gives a more concentrated banana flavor, but the juice ensures moistness too!
