3/4 cup milk
2/3 cup seasoned bread crumbs
2 teaspoons dried onion flakes
1 teaspoon salt
1/2 teaspoon rubbed sage
1 1/2 lbs ground beef
1/4 cup ketchup
2 tablespoons brown sugar
1 teaspoon ground mustard
1/2 teaspoon Worcestershire sauce

Steps:

  • In a large bowl, combine the first six ingredients.
  • Crumble beef over mixture and mix well. Note: the mixture will be moist.
  • Shape into a meat mixture into a round loaf and place in crockpot.
  • Cover and cook on low for 5-6 hours or until a meat thermometer reads 160°F
  • In a small bowl, whisk the ketchup, brown sugar, mustard and Worcestershire sauce.
  • Spoon over the meat loaf.
  • Cook 15 minutes longer or until heated through.
  • Let stand for 10-15 minutes before cutting.

3/4 cup 2% milk
2/3 cup seasoned bread crumbs
2 teaspoons dried minced onion
1 teaspoon salt
1/2 teaspoon rubbed sage
1-1/2 pounds ground beef
1/4 cup ketchup
2 tablespoons brown sugar
1 teaspoon ground mustard
1/2 teaspoon Worcestershire sauce

Steps:

  • Cut two 25x3-in. strips of heavy-duty foil; crisscross so they resemble an X. Place strips on bottom and up sides of a 5-qt. slow cooker. Coat strips with cooking spray., Combine the first 6 ingredients. Crumble beef over mixture and mix lightly but thoroughly. Shape into a round loaf; place in center of strips in slow cooker. Cook, covered, on low 5-6 hours or until a thermometer reads at least 160°. , In a small bowl, whisk ketchup, brown sugar, mustard and Worcestershire sauce. Spoon over meat loaf. Cook until heated through, about 15 minutes longer. Using foil strips as handles, remove meat loaf to a platter. Let stand 10-15 minutes before slicing.

2 tablespoons barbeque sauce
2 tablespoons steak sauce
1 teaspoon Worcestershire sauce

½ teaspoon seasoned salt
salt and pepper to taste
1 pound ground beef

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.
  • In a bowl, stir together the egg, ketchup, barbeque sauce, steak sauce, Worcestershire sauce, brown sugar, onion, and garlic, seasoned salt, and salt and pepper. Mix in ground beef, bread crumbs, and Cheddar cheese. Spread into the loaf pan.

I used to hate meatloaf. It was a dreaded dish of dry, tough, underseasoned, unnaturally shaped meat associated with school cafeterias and sad lunches. Then one glorious day, meatloaf was redeemed by the always-amazing Ina Garten. I was watching the Food Network and saw her create the most delicious, melt-in-your-mouth meatloaf I never knew existed. Served atop buttery mashed potatoes, it was comfort food defined, and I vowed to give homemade meatloaf a try. This recipe is inspired by Ina but adapted to make it ours. So double the recipe (and baking time) if making it for a crowd. And if cafeteria lunches made you swear off meatloaf, I beg you to give this recipe one final try. I promise it's worth it.

1 tablespoon of extra virgin olive oil
1 large onion, finely chopped
2 large cloves of garlic, minced
1 teaspoon of fresh thyme leaves, removed from stems and stems discarded
1 teaspoon of sea salt
1/2 teaspoon of ground black pepper
2 tablespoons of Worcestershire sauce
4 tablespoons of low-sodium stock (vegetable, beef or chicken)
1 1/2 teaspoons of tomato paste
1 pound of grass-fed, 85/15 ground beef
1/4 cup of Panko or regular breadcrumbs
1 large egg
1/4 cup of all-natural ketchup
Chopped fresh parsley for garnish

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with foil and set it aside. TIP: Put a pan of water on the bottom rack of the oven with the meatloaf (on the rack underneath the meatloaf). This will prevent the meatloaf from cracking while baking and keep it very moist. In a medium-heated pan, add olive oil. When the oil is already hot, add your onions, garlic and thyme and cook for 8 to 10 minutes, occasionally stirring, until the onions are translucent. Set aside to cool for a bit. Combine the salt, pepper, Worcestershire sauce, stock, tomato paste, beef, breadcrumbs, and egg in a large mixing bowl. Use a fork to lightly mix everything together to prevent the meatloaf from becoming dense. Add in the slightly cooled onion, garlic, and thyme mixture and stir until combined. Add the meatloaf to the baking sheet and use clean hands to form it into a loaf shape lightly. Brush the ketchup on the top and bake for 35 to 45 minutes until done or a meat thermometer reads 160 degrees Fahrenheit. Remove from the oven and let sit for 3 to 5 minutes before slicing. Top with chopped fresh parsley, if desired.

2 pounds chuck chop meat
1 Large Idaho potato
1 Large onion
2 tablespoons olive oil
2 cups bread crumb flakes
1/2 cup grated Pecorino Romano cheese
2 Eggs
8 ounces mozzarella cheese (cubed)
4 ounces tomato sauce
Salt and pepper to taste
1 teaspoon parsley flakes
1 teaspoon basil flakes
1 teaspoon garlic powder
For the Gravy:
2 cups beef broth
Salt and pepper
3 tablespoons corn starch
1 teaspoon gravy master
1 teaspoon onion powder
1 teaspoon brewed black coffee
1/2 teaspoon parsley

Steps:

  • Grate potato and onion using a box grater. Heat a large frying pan with 2 tablespoons olive oil. Add grated potato and onion, season with salt and pepper, then sauté until light brown about 5-6 minutes. Set aside and allow to cool. In a large bowl mix the meat, bread crumbs, grated cheese, eggs, tomato sauce, parsley, basil and garlic powder. Add the cooled potato and onion, mix well with hands. Transfer mixture onto waxed paper and flatten into a rectangle. Lay cubed mozzarella in the middle of the loaf and fold over all sides to cover. Transfer into a greased pan, rub meatloaf with olive oil and bake in a preheated 375°F oven for 1 hour, uncover. For the Gravy: Heat all ingredients in a saucepan stirring often until it starts to boil. Continue to stir until mixture thickens to preferred consistency. Serve over meatloaf.
