3 pounds beef tripe
3 pounds hominy, frozen (not canned)
3 pounds pigs feet, quartered
1 large onion, diced
1 bunch green onions, cut into 1/4-inch pieces, plus more chopped small for garnish
1 bunch cilantro, chopped, plus more for garnish
2 tablespoons fresh oregano leaves
1 tablespoon freshly ground black pepper
1 tablespoon red pepper flakes
1 head of garlic
2 tablespoons salt
1 to 2 pequin chiles, minced, for garnish
Lemon wedges, for garnish
24 bolillos, toasted

Steps:

  • Wash tripe thoroughly. Remove the excess fat from the tripe and cut it into bite-sized pieces. Rinse the hominy well in a colander under running water. Wash the pigs feet well also.
  • Combine all ingredients, except for garnishes, in a large pot with enough water to cover. Bring to a boil, and then reduce heat to low and simmer slowly until hominy opens and is cooked. Do not overcook. Skim the excess fat from the surface. It is best if you can refrigerate the Menudo in order to remove all of the grease.
  • Ladle into bowls, and garnish with additional fresh cilantro, chopped green onions, minced pequin chiles, and lemon wedges. Serve with toasted bolillos (a Mexican bread made with corn flour).

This is a crock pot version of authentic Texas Mexican (Tex-Mex) menudo. This is very easy to prepare.

3 lbs honeycomb beef tripe (best from Mexican grocery or meat markets)
1 (1 lb) pig's foot (cut in small pieces by the butcher)
1 (30 ounce) can hominy
1/2 cup yellow onion, chopped
1 garlic clove, chopped
2 bay leaves
1 teaspoon oregano
6 tablespoons Menudo Spice Mix
1 serrano pepper, pepper for extra spiciness (optional)
1 teaspoon salt
1 (14 ounce) can chicken broth
tap water, to fill the crock pot

Steps:

  • Cook on HIGH for 7 to 8 hours until the beef tripe and pig's foot is cooked very tender.
  • Add more Menudo Mix and salt if desired to your taste.
  • Garnish individual bowls of menudo with lime juice, chopped onions and chopped cilantro leaves.
  • Enjoy with guacamole salad and corn or flour tortillas. Bon Appetit!

12 cups chicken broth
3 lbs beef tripe, cut into cubes
4 pig, feet
6 garlic cloves, chopped
2 tablespoons Mexican oregano
1 (2 1/2 ounce) packet fiesta brand menudo seasoning
1 tablespoon salt
4 tablespoons chili powder
30 ounces white hominy
30 ounces yellow hominy
3 cups water

Steps:

  • Bring chicken broth and garlic to a boil. Add tripe and pig feet. Simmer for 1-1/2 to 2 hours.
  • Remove pig feet and discard. Add Menudo seasoning, chili powder, and salt. Combine well. Add water. Return to a low boil. Drain and add hominy. Simmer another half hour.
  • Serve with corn tortillas and limes if desired.

4 -5 lbs beef tripe
3 -4 pig's feet, cut through the middle by butcher
1 tablespoon salt (to taste)
3 -4 garlic cloves
1 onion
1 tablespoon finely chopped cilantro (optional) or 1 tablespoon oregano (optional)
6 tablespoons chili powder, SEE NOTE
14 1/2 ounces hominy, canned and drained

Steps:

  • NOTE use Menudo Mix instead of chili powder. The Ethnic section of somewhere like Wegmans [read very good store] or an ethnic grocery should have it. Or make your own: To make your own: two parts oregano, two parts onion flakes, one part coriander seed, one part cumin, and one part crushed red chili pepper.
  • Cut tripe in small pieces. Put meat in a large pan with about 1 gallon of water and simmer together with salt, garlic, cilantro, half of Menudo mix and small onion for 3 to 4 hours or until tripe and pig's feet are tender.
  • While cooking, add more water if necessary. Skim off white foam that forms on top. Add the balance of the Menudo mix and hominy and simmer for a few more minutes. Serve with lemon wedges, chopped onion and hot peppers (chopped).

I love menudo but I don't care for pig's feet so I have used the following recipe for quite a few years. Easiest method is to use a package of "Menudo Mix" which can be found in the hispanic aisle of most grocery stores. In case you rather use the individual spices, I am including those starting with oregano. This recipe can also be cooked on the stove top by simmering on low for 5-6 hours.

1 lb of honeycomb tripe, rinsed and cut into 1-inch squares
1 lb beef stew meat
1 (15 ounce) can hominy, drained
1 tablespoon red chili powder (more or less according to taste, not part of menudo spice mix)
1 tablespoon oregano
1 tablespoon onion flakes
1/2 tablespoon coriander seed
1/2 tablespoon cumin
1/2 tablespoon crushed red chili pepper
8 -10 cups water or 8 -10 cups beef stock

Steps:

  • Add tripe, stew meat, hominy, spices together in crock pot.
  • Cover with water or beef stock.
  • Cook on low setting for 6-8 hours.

This is a recipe for trotters passed down over time in my family. This was made every New Year's Eve to bring in the new year. A relatively inexpensive African-American dish. Very delicious! Serve with homemade potato salad, Southern style greens and candied yams and cornbread. It is even better the next day, and it freezes well. Serve sprinkled with a little more vinegar or hot sauce to taste.

Inexpensive to make, and fully authentic, this menudo will have your Latin lovers swooning! This recipe uses a combination of chiles to deliver its trademark red color, and packs a mildly spicy punch. And it is really quite easy to make - my husband absolutely devoured it the first time I made it.

3 gallons water, divided
2 ½ pounds beef tripe, cut into 1-inch pieces
6 cloves garlic, finely chopped
1 large white onion, finely chopped
1 ½ tablespoons salt
1 tablespoon ground black pepper
1 ½ tablespoons dried oregano
2 tablespoons ground red pepper
5 de arbol chile peppers
6 japones chile peppers, seeds removed
6 cups canned white or yellow hominy, drained
½ white onion, chopped
¼ cup chopped fresh cilantro
2 limes, juiced

Steps:

  • In a large pot, bring 1 gallon water to a boil. Place tripe in the pot, reduce heat, and simmer 2 hours. Periodically skim off fat with a spoon. Drain water, reduce heat, and pour in a fresh gallon of water. Continue to simmer tripe for 2 hours; drain.
  • Pour remaining 1 gallon water into the pot with tripe, and bring to a boil. Stir in garlic and 1 white onion. Season with salt, pepper, oregano, and red pepper. Reduce heat, and simmer 1 hour.
  • Preheat the broiler.
  • Arrange the de arbol chile peppers on a baking sheet, and broil about 2 minutes, just until they begin to scorch. Remove from heat, slit lengthwise, and remove seeds. In a blender or food processor, blend the de arbol chile peppers and japones chile peppers until very finely chopped. Mix into the pot, and continue cooking 2 hours over low heat.
  • Mix the hominy into the pot. Continue cooking 1 hour. Serve with remaining onion, cilantro, and lime juice.

This dish depends on how much of each ingredient you put in it. It just depends on how much you wish to make. This dish takes a while to prepare and to cook but it is worth it. The spices are always according to how hot or spicy you like your food. It tastes better on the second day. If you want to make more, increase the ingredients. If you want less, decrease the ingredients. I learned this on my own and my husband, who is Mexican, loves it. It will please the most avid Mexican food lover.
