TURKEY CLUB TURKEY PIZZA
Steps:
- Pre-heat the oven to 450 degrees F. Place the raised raw pizza dough on top of a floured baking surface. Using your hands, carefully stretch the dough into a 10-12 inch circle, kneading and pulling with your fingers until evenly stretched.
- Drizzle a small amount of olive oil on a circular baking sheet, and place the dough on top. Par bake the dough with no toppings for 9 minutes. When done, remove from the oven and increase the oven temperature to 500 degrees F.
- Heat 1 tbsp of olive oil in a large skillet over medium-high heat before tossing in the cherry tomatoes. Cook, stirring occasionally, until the tomatoes begin to blister, 5-6 minutes. Now add the dried thyme, oregano, ¼ tsp salt and 2 cloves of minced garlic. Cook for 60 more seconds, then remove from the heat. Using a fork, carefully crush all of the cherry tomatoes. Set aside.
- Make the lemon garlic aioli. In a bowl, mix together the mayonnaise, lemon juice and 2 minced garlic cloves. Spread the aioli mixture evenly over the par baked pizza dough. Top with the smashed tomato mixture.
- Sprinkle the shredded colby jack cheese evenly over the top of the pizza. Cut the turkey into 1 inch pieces, and place over the top of the pizza. Slice the dill pickles into 1/8th inch thick medallions, and place all over the pizza. Cook the pizza on the baking sheet for 13 minutes, until the cheese is melted and the crust is golden brown.
- While the pizza is baking, place the lettuce in a bowl. Drizzle with 1 tbsp olive oil, ⅛ tsp table salt, and 1/16 tsp fresh cracked pepper. When the pizza is done, top with the cooked bacon crumbles and seasoned lettuce. Serve immediately, and enjoy!

Yield 1 turkey club sandwich

Steps:
- Bread: Use 3 slices of a good white sandwich bread (pain au lait or Pullman loaves are ideal). Be sure to toast it!
- Lettuce: Bibb and Boston lettuce both have nice small, soft leaves that fit well on the sandwich; shredded iceberg can be unruly.
- Tomatoes: Add 2 slices of tomato to each layer of a club; season with salt and pepper before you continue building the sandwich.
- Turkey: Fresh roasted turkey is key. Rub a 2 1/4-pound skinless, boneless turkey breast with olive oil; sprinkle generously with Italian seasoning, salt and pepper. Roast 10 minutes at 425˚ F, then reduce to 350˚ F and roast until the internal temperature is 160˚ F, 15 to 20 minutes. Let cool, then slice.
- Mayonnaise: Spread a thick layer of mayo on each slice of toasted bread.
- Bacon: You'll want 3 slices per sandwich (1 1/2 slices in each layer). Halve the slices first, then cook in a skillet over medium heat until crisp.

Steps:
- Sprinkle yeast over warm water in small bowl; stir to dissolve. Let stand 5 minutes. Stir in 2 tablespoons oil. Mix 2 1/2 cups flour and salt in processor using on/off turns. With machine running, pour yeast mixture through feed tube and process until combined, about 10 seconds. - Brush large bowl with olive oil. Add dough, turning to coat entire surface. Cover and let rise in warm draft-free area until doubled in volume, about 1 1/2 hours. (Can be prepared 1 day ahead. Punch dough down; cover and refrigerate. Bring to room temperature before continuing with recipe.)
- Prepare covered barbecue grill (medium-high heat). Brush 14-inch pizza pan with 1-inch-high sides with olive oil. Punch dough down and knead 2 minutes. Roll dough out on lightly floured surface to 16-inch round. Transfer to prepared pan. Spread sauce over dough; sprinkle with black and green olives. Top with both cheeses, then mushrooms and bell peppers. Drizzle with 1 tablespoon oil. Sprinkle with minced herbs if desired.
- Add mesquite chips to fire. Open bottom barbecue vent. Place pizza on rack on lowest rung. Cover, leaving top vent half open. Bake until crust is golden brown, checking occasionally, about 15 minutes. Serve immediately.
MESQUITE SMOKED TURKEY WITH A PEACH GLAZE RECIPE - (4.6/5)

Steps:
- In a medium bowl combine all rub ingredients. Remove giblets from turkey, rinse turkey in cold water and pat dry. Place turkey on a large tray. Massage rub mixture into turkey until generously coated inside and out. Cover the turkey and place in the refrigerator to marinate overnight. The next day, place 8 cups of wood chips in water to soak for 1 hour. Prepare the glaze by placing all of the ingredients into a small saucepan set over low heat. Remove turkey from refrigerator (Optional: stuff the cavity with sliced oranges and lemons). Tie the legs with butcher twine to hold the bird together as compact as possible. Set it aside and allow to come to room temperature. Prepare smoke pouches by mixing 2 cups of the wet drained wood chips with one cup of the dry on a large piece of foil. Wrap loosely into a package. Using a fork, pierce the package all over to allow smoke to escape. Repeat these steps to make 3 more smoke pouches (4 pouches in total). Prepare barbeque for indirect cooking and smoking by removing the grate over one burner and turn only it onto high heat. Place a drip pan over the cool elements, but under the grates. Place a smoke pouch on direct heat. Wait for smoke to form and adjust barbeque temperature to reach 220°F (105°C). Place the turkey over the drip pan and no heat. Close the barbeque lid and smoke for 20 to 30 minutes per pound, changing the smoke pouch when smoke dissipates. In the last hour of cooking, baste the turkey with sauce at least 2 times. Remove turkey from the barbeque when a digital thermometer inserted in the thickest part of the bird reads 165°F (74°C). Cover turkey loosely with foil and let rest for 20 minutes. Carve and serve with extra peach glaze.
