Number Of Ingredients 8

2 tablespoons olive oil
1 medium leek, white and pale-green parts only, finely chopped
1 garlic clove, thinly sliced
1 tablespoon tomato paste
1 cup green lentils, preferably French
2 tablespoons reduced-sodium soy sauce
Kosher salt, freshly ground pepper
Thinly sliced scallions (optional; for serving)

Steps:

  • Heat oil in a medium saucepan over medium heat. Add leek, garlic, and tomato paste and cook, stirring often, until fragrant and tomato paste begins to darken, about 4 minutes. Add lentils and 2 1/2 cups water. Bring to a boil; reduce heat, cover, and simmer, stirring occasionally, until lentils are tender, 45-55 minutes.
  • Remove from heat and let sit, covered, 10 minutes; add soy sauce and season with salt and pepper. Serve lentils topped with scallions, if desired.
  • DO AHEAD: Lentils can be made 5 days ahead. Cover and chill.

French Lentils With Garlic and Thyme image

This is a classic French way to cook lentils, and it's very easy. Aromatics are sautéed and then simmered with French lentils, also known as Le Puy lentils, for 20 to 25 minutes. It is an easy side dish (shown here with cod baked with prosciutto), redolent of a Provencal feast.

3 tablespoons olive or vegetable oil
1 onion, peeled and finely chopped
2 cloves garlic, peeled and finely chopped
1 carrot, peeled and finely chopped
2 1/4 cups French lentils
1 teaspoon dried or fresh thyme
3 bay leaves
1 tablespoon kosher salt

Steps:

  • Place a large saucepan over medium heat and add oil. When hot, add chopped vegetables and sauté until softened, 5 to 10 minutes.
  • Add 6 cups water, lentils, thyme, bay leaves and salt. Bring to a boil, then reduce to a fast simmer.
  • Simmer lentils until they are tender and have absorbed most of the water, 20 to 25 minutes. If necessary, drain any excess water after lentils have cooked. Serve immediately, or allow them to cool and reheat later.

2 carrots, pared and sliced
1 celery, stalk diced
4 dry shallots, peeled and halved
1 onion, chopped
1 1/2 cups dried lentils, washed and drained
1 teaspoon cajun seasoning (for beans and rice)
1/4 teaspoon cayenne pepper
1 chorizo sausage, sliced
salt
black pepper

Steps:

  • heat oil in saute pan over med heat, add vegetables and cook 6 minutes over low heat.
  • add lentils and spices. mix and cover with water, bring to a boil and partly cover.
  • cook for 1 hour and 15 minutes over low heat.
  • add sausage, season with salt and black pepper.
  • partly cover and continue cooking 15 minutes.
  • Serve.
