1 lb/454g dried beans(pinto, black, white, or any other favorite variety)
1 medium onion chopped
2 garlic cloves
1-2 bay leaves
1/2 teaspoon dried Mexican oregano
12 cups/3 liters water
1 bunch epazote
1 tablespoon salt
Optional for serving:
Queso fresco
Mexican Cream

Steps:

  • Check for a date on the beans; freshness matters. Dried beans last up to two years, but are best cooked within a year of harvest.
  • Always rinse beans before cooking, and check for stray rocks, twigs and leaves.
  • Wash them well and place them in a pot with clean water to soak over night. Next day, drain the water and put fresh water over them, then continue with the recipe.
  • If you do not want to let them soak overnight, place the chopped onions, salt and garlic together in the pot, cover it with a lid and bring it to a boil.
  • When the beans start boiling, reduce the heat and let them simmer for about 90 minutes to 2 hours until the beans are soft. The time varies based on the type of beans or how dry they are.
  • Make sure that there is enough water during the cooking process. There should always be liquid covering your beans as they cook.
  • To make sure your beans are cooked thoroughly, scoop up a couple of beans and blow on them. The skin should curl and wrinkle. Then taste. They are done when they're tender and cooked through to the center (but not mushy). Let them cool in their cooking liquid.
  • Before removing the beans from the heat, add the epazote.
  • Serve them with salads, rice, warm corn tortillas, grilled meats etc.

2 pounds dried pinto beans
2 ½ quarts water
1 pound bacon, coarsely chopped
1 medium onion, chopped
1 medium ripe tomato, chopped
1 fresh jalapeno pepper, chopped
1 bunch fresh cilantro, chopped

Steps:

  • Combine beans and water in a large pot. Bring to a boil, reduce heat, and simmer for 3 hours. Add more water if necessary while beans are cooking.
  • In a large skillet, cook bacon over medium heat until it is beginning to brown. Stir in onion, and continue cooking until onion is tender. Stir in tomato, and jalapeno, and cook for 2 to 3 minutes. Remove from heat, and stir in cilantro.
  • Stir bacon and onion mixture into the beans, and continue cooking for 1 hour, or until beans are soft.

These are my favorite! A lovely combo of my southern roots and my love of Mexican food...Make these as a side to your tacos and rice, a filling in your burritos, on a tostada, on brown rice, served over cornbread, or on their own. They are wonderful. They can also be adapted for whatever you are serving. Add whatever you like. I plan on adding tomatoes towards the end next time. This makes a lot and it freezes beautifully. (Prep time is soaking overnight...Also, I put 16 servings, but as a side it is more, I'm sure..I just freeze it...perfect for a party)

2 lbs dried pinto beans, soaked overnight and rinsed
4 garlic cloves, finely chopped
3 jalapeno peppers, finely chopped (can use different peppers for less heat)
1 large yellow onion, finely chopped
2 tablespoons cumin
2 tablespoons chili powder
1 teaspoon smoked paprika
1 1/2 teaspoons sea salt (or to your taste)
cilantro, for garnish

Steps:

  • Place pre-soaked and rinsed beans in a large stockpot. Fill with water to cover two inches above beans.
  • Add garlic, peppers, onion, cumin, chili powder and bring to a boil. Once it comes to a boil, lower the heat and simmer for 1 1/2 to 2 hours. I keep the lid off. Stir occasionally.
  • Keep checking the beans to taste until tender and lovely. Add salt little by little until it's perfect for you.
  • Add cilantro on top of individual servings. Yum!

They're very simple to make and they're the best you'll have. They can accompany different recipes or be used as an appetizer. My mother is the one that taught me this recipe and it's a favorite in my household. My 2-year-old really likes them too. They're for all ages! Enjoy!

1 (540 ml) can romano beans (do not drain)
1 (540 ml) can black beans (do not drain)
1 big green bell pepper (cut in med cubes)
1 medium onion (cut in med cubes)
2 garlic cloves (minced)
3/4 cup mozzarella cheese, cheese (or jack, grated)
onion powder, to taste (at least 1 tbsp)
garlic powder, to taste (at least 1 tbsp)
chili powder, to taste (at least 2 tbsp)

Steps:

  • Brown the green pepper, onion, and garlic in a skillet. Spice up with 2 pinches of chili powder.
  • Put the beans in a medium pot. Bring them to a boil on medium high heat. Remove from heat.
  • Mash the beans until smooth (there will be small pieces of bean). Put back on medium low heat.
  • Add the browned veggies and the cheese to the mashed beans. Mix.
  • Spice with onion, garlic, and chili powder to taste.
